- In a large bowl, combine the cornmeal, flour, baking powder and salt. Whisk the egg, milk and onion; add to dry ingredients just until combined. , In a cast-iron Dutch oven or an electric skillet, heat oil to 365°. Drop batter by tablespoonfuls into oil. Fry until golden brown, 2 to 2-1/2 minutes. Drain on paper towels. Serve warm.

- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Mix flour, cornmeal, onion, milk, egg, celery, garlic, and Cajun seasoning in a bowl.
- Drop ping pong ball-sized balls of batter, about 5 at a time, into the hot oil. Fry until golden brown, about 5 minutes. Remove hush puppies with a slotted spoon and drain on a paper towel-lined plate. Repeat with remaining batter.

- In a large cast iron Dutch oven or heavy bottomed pot, heat about 2 inches of oil over high heat until it reaches 350 degrees F on a deep-fry thermometer.
- To make the batter, in a large bowl, whisk together the cornmeal, baking powder, sugar and 1 teaspoon of salt. In a second bowl or large measuring cup, whisk together the buttermilk, eggs and onion. Season with additional salt and pepper.
- Stir the wet ingredients into the dry ingredients. The mixture should resemble wet sand, so add more buttermilk, as necessary.
- Line a wire cooling rack with paper towels and set near the stovetop. To fry the hush puppies, use a small cookie dough scoop or large spoon to drop the batter into the oil. Fry in batches of 4 at a time until golden and crisp, about 2-3 minutes per batch. Set on the paper towel-lined rack to drain. Serve warm.
