EASY PAELLA



Easy Paella image

An easy to make paella using chorizo, chicken, and shrimp.

2 tablespoons olive oil
1 tablespoon paprika
2 teaspoons dried oregano
salt and black pepper to taste
2 pounds skinless, boneless chicken breasts, cut into 2 inch pieces
2 tablespoons olive oil, divided
3 cloves garlic, crushed
1 teaspoon crushed red pepper flakes
2 cups uncooked short-grain white rice
1 pinch saffron threads
1 bay leaf
½ bunch Italian flat leaf parsley, chopped
1 quart chicken stock
2 lemons, zested
2 tablespoons olive oil
1 Spanish onion, chopped
1 red bell pepper, coarsely chopped
1 pound chorizo sausage, casings removed and crumbled
1 pound shrimp, peeled and deveined

Steps:

  • In a medium bowl, mix together 2 tablespoons olive oil, paprika, oregano, and salt and pepper. Stir in chicken pieces to coat. Cover, and refrigerate.
  • Heat 2 tablespoons olive oil in a large skillet or paella pan over medium heat. Stir in garlic, red pepper flakes, and rice. Cook, stirring, to coat rice with oil, about 3 minutes. Stir in saffron threads, bay leaf, parsley, chicken stock, and lemon zest. Bring to a boil, cover, and reduce heat to medium low. Simmer 20 minutes.
  • Meanwhile, heat 2 tablespoons olive oil in a separate skillet over medium heat. Stir in marinated chicken and onion; cook 5 minutes. Stir in bell pepper and sausage; cook 5 minutes. Stir in shrimp; cook, turning the shrimp, until both sides are pink.
  • Spread rice mixture onto a serving tray. Top with meat and seafood mixture.

Takes some time to put together, but is well worth it. Great prepare ahead meal for a dinner party where you would like to actually join the party! Can use any meats or seafood desired.

1 dozen clam, cleaned
1 dozen mussels, cleaned
1/2 cup ham, cubes
1/2 lb Italian sausage
1 1/2 lbs chicken parts
1 lb raw shrimp
4 lobster tails
1 large onion
1 green pepper
2 tomatoes, cubed
2 garlic cloves (or more)
2 cups rice (I use Uncle Ben's)
3 cups chicken broth
1 cup white wine
1 teaspoon saffron
1/4 cup pimento strips
1/2 teaspoon crushed red pepper flakes (optional)
1 cup frozen peas
salt

Steps:

  • Preheat oven to 400 degrees.
  • Cut sausage in chunks and brown in HUGE skillet or paella pan on top of stove in hot oil. (You must use a pan with a lid that can go in the oven).
  • Remove sausage from pan and add chicken parts, and brown on both sides. I usually use thighs. Meat doesn't need to be cooked through, only browned on the outside.
  • Remove from pan and set aside.
  • Chop onion and green pepper and garlic and saute until soft, in same pan, don't brown. Turn off heat.
  • Add chopped tomato, rice, saffron, ham, sausages, chicken, salt and chicken broth and stir.
  • Top with clams, mussels, shrimp, lobster tails (cut in two, if desired). Make sure clams and mussels are closed tightly. Discard any that won't close on their own when tapped.
  • Cover pan and put in 400 degree oven for 30 minutes or until liquid is absorbed and rice is cooked through.
  • Add peas and pimento about 5 minutes before taking out of oven. Discard any clams or mussels that don't open.

This casserole is very rich and tasty. Don't snack on chips before dinner because you'll want to go back for seconds on this dish. Toasted French bread and salad accompanies this dish very well. Leftovers can be stored in the refrigerator for up to 3 days.

8 -12 ounces elbow macaroni
1/2 lb mild Italian sausage
3/4 cup chopped onion (about 1 small-medium onion)
2 -3 cloves garlic, chopped
1 (16 ounce) can diced tomatoes (not drained)
1 1/2 cups mild cheddar cheese or 1 1/2 cups sharp cheddar cheese, shredded
1 teaspoon oregano or 1 teaspoon dried basil leaves, chopped
1/2 cup breadcrumbs, about
1/4 cup parmesan cheese, about
2 tablespoons olive oil, about

Steps:

  • Preheat oven to 375-400°.
  • Cook noodles, slightly undercooked.
  • In a separate pan, sauté onions and garlic in olive oil; add sausage and brown.
  • After brown, add tomatoes and spices, and pepper to taste.
  • Simmer for roughly 5 minutes.
  • Drain noodles and pour into 2-3 quart casserole dish.
  • Pour tomato/sausage mixture into dish and toss.
  • Add cheddar cheese and blend.
  • Sprinkle breadcrumbs and parmesan cheese to cover top of casserole.
  • Sprinkle roughly 2 Tbsp.
  • olive oil over casserole.
  • Bake for 20-25 minutes, or until top is brown and casserole is heated.
