HUNGARIAN NOODLES WITH SAUSAGE



Hungarian Noodles with Sausage image

Kosher salt
8 ounces egg noodles
2 tablespoons extra-virgin olive oil
3 sweet Italian turkey sausages (about 9 ounces), casings removed
1 onion, chopped
1 clove garlic, minced
3/4 cup chopped roasted red peppers
1 tablespoon paprika
1 cup low-sodium chicken broth
1/2 small head Savoy or green cabbage, sliced 1 inch thick
1/3 cup sour cream
2 tablespoons chopped fresh dill or parsley
Freshly ground pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the egg noodles and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
  • Meanwhile, heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until crumbled and lightly browned, about 3 minutes. Add the onion; cook, stirring occasionally, until softened, about 3 minutes. Add the garlic, red peppers and paprika and cook, stirring, 1 minute. Add the chicken broth, cabbage and 1/2 teaspoon salt. Bring to a gentle simmer and cook until the cabbage is tender, about 4 minutes.
  • Add the noodles and sour cream to the sausage mixture. Cook, stirring, until well coated, about 30 seconds (do not boil). Add the reserved cooking water as needed to loosen. Stir in the dill and season with salt and pepper.

4 1/2 cups flour
6 eggs
1 tablespoon salt
1/3 cup water

Steps:

  • Mix together the flour, eggs, salt and water.
  • Knead dough until smooth.
  • Let rest, covered, about 19 minutes.
  • Roll thin.
  • Roll up as for a jelly roll, or cut into strips. (Cut as narrow as possible or into SMALL squares).
  • Dry noodles then cook the same as you would regular noodles.

This is a simple Hungarian dish. This recipe eases preparation by utilizing a slow cooker. Hope you all enjoy it!

1 (16 ounce) package wide egg noodles
3 cubes chicken bouillon
¼ cup water
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup chopped onion
2 tablespoons Worcestershire sauce
1 tablespoon poppy seeds
¼ teaspoon garlic powder
¼ teaspoon hot pepper sauce
2 cups cottage cheese
2 cups sour cream
¼ cup grated Parmesan cheese
1 pinch paprika

Steps:

  • Cook egg noodles in a large pot with boiling salted water. Drain well.
  • In a large bowl dissolve chicken bouillon cube in boiling water. Mix in the cream of mushroom soup, chopped onion, Worcestershire sauce, poppy seeds, garlic powder, and hot pepper sauce. Stir in cottage cheese, sour cream, and cooked egg noodles.
  • Transfer to lightly greased slow cooker and sprinkle the top with parmesan cheese and paprika.
  • Cover and cook on high for 3 to 4 hours. Serve immediately.

  • Once the water is boiling, place the noodle maker on top of the pot with the square sliding section facing upwards. Add a small amount (about ¼-1/3 cup) of the dough to the centre sliding section of the noodle maker and slide it back and forth, allowing a small amount of the dough to push through (and get cut off as it slides back and forth), creating noodles.
  • Continue with the remainder of the dough, working quickly. Boil for 3-4 minutes, until the noodles float. Drain and serve immediately (you may want to toss them in a bit of oil to prevent them from sticking together).
