Time 20m

Number Of Ingredients 9

3 cups cooked chickpeas, peeled (from 1 to 1 1/4 cup dry chickpeas or from quality canned chickpeas. See recipe notes for more instructions on cooking and peeling chickpeas)
1 to 2 garlic cloves, minced
3 to 4 ice cubes
1/3 cup (79 grams) tahini paste
½ tsp kosher salt
Juice of 1 lemon
Hot water (if needed)
Early Harvest Greek extra virgin olive oil
Sumac

Steps:

  • Add chickpeas and minced garlic to the bowl of a food processor. Puree until a smooth, powder-like mixture forms.
  • While processor is running, add ice cubes, tahini, salt, and lemon juice. Blend for about 4 minutes or so. Check, and if the consistency is too thick still, run processor and slowly add a little hot water. Blend until you reach desired silky smooth consistency.
  • Spread in a serving bowl and add a generous drizzle of Early Harvest EVOO. Add a few chickpeas to the middle, if you like. Sprinkle sumac on top. Enjoy with warm pita wedges and your favorite veggies.

HUMMUS TEHINA

Number Of Ingredients 11

100 g dry chickpeas
1 tsp bicarbonate of soda
100 g tahini
juice of 1/2 lemon
2 cloves of garlic, peeled
1/4-1/2 tsp ground cumin (optional)
1/2 tsp salt
cooking water from the chickpeas
extra virgin olive oil, to serve
cumin or paprika, to serve (optional)
flat-leaf parsley, to serve (optional)

Steps:

  • Soak the chickpeas in at least three times their volume water for at least 4 hours, preferably overnight. Change the water, add the bicarbonate of soda and bring to the boil. Lower the heat and leave to simmer until soft, anything from 25 minutes to an hour or more - this can vary quite significantly from batch to batch. The chickpeas are done when you can easily mash them by gently squeezing them between your fingers. Drain and reserve the cooking water. Set aside a few of the prettiest-looking chickpeas to garnish.
  • While still warm, add the chickpeas, tahini, lemon juice, garlic 100 ml of the cooking water, cumin (if using) and salt to a food processor and mix until completely smooth and fairly fluffy, at least 3-4 minutes. (When it looks done, leave it to run for another minute or two.) Taste and adjust seasoning or flavours to your preference. At this stage, the hummus will be fairly runny, but don't worry - it will set once it cools down. Transfer to a bowl and cover with plastic wrap directly on top of the hummus. There should be no air between the hummus and the plastic wrap. Leave to cool. If you're short on time, put it in the refrigerator to speed up the process.
  • Serve on one or more plates small plates. Use the back of a spoon to create the characteristic dimples in the bowl. Garnish with the reserved chickpeas and a good drizzle of extra virgin olive oil as well as some spices and chopped flat-leaf parsley, if you like.

HUMMUS FROM SCRATCH

Hummus from Scratch image

This is a great recipe made from dried garbanzo beans and soy beans. I cook my beans in a pressure cooker for an hour in a half water, half stock solution, but the old 'soak the beans overnight and simmer for two hours' method would also work.

Categories     Appetizers and Snacks     Dips and Spreads Recipes     Hummus Recipes

Time 1h30m

Yield 8

Number Of Ingredients 12

¾ cup dry garbanzo beans
¼ cup dried soybeans
1 bay leaf
1 onion, quartered
1 cup vegetable broth
3 cups water
2 cloves cloves garlic, crushed
1 lemon, juiced
2 tablespoons soy sauce
black pepper to taste
¼ cup tahini
¼ cup chopped fresh parsley

Steps:

  • Rinse the garbanzos and soybeans, and place them in a pressure cooker along with the bay leaf and onion. Add vegetable broth and enough water to cover the beans by 1 inch (or follow the manufacturer's instructions for the minimum amount of liquid required).
  • Seal the lid and bring the pressure up to high; reduce the heat to low and cook, maintaining high pressure, for 1 hour. Allow the pressure to drop naturally.
  • Drain the beans, reserving the liquid. Place the beans in the bowl of a food processor. Add the garlic, lemon juice, soy sauce, black pepper, and tahini; process until smooth. (You may add some of the cooking liquid for a thinner consistency.) Scoop the mixture into a bowl, and mix in the parsley.

HUMMUS - SILKY SMOOTH, FROM SCRATCH!

Hummus - Silky Smooth, from Scratch! image

This recipe was published in the food section of my city paper from a local Lebanese restaurant. Amazingly smooth and creamy. "Baking soda is the secret to silky smooth hummus; it softens the beans so they cook quickly and break down easily when blended. The hummus can be prepared up to two days ahead and stored in an airtight container in the refrigerator until ready to use."

Time 5h

Yield 2 1/2 cups

Number Of Ingredients 7

1 cup dried garbanzo beans
7 cups water (for cooking beans)
1 teaspoon baking soda
1 1/2 teaspoons salt
1/2 teaspoon garlic, minced
1/4 cup tahini
1/2 cup fresh lemon juice

Steps:

  • Rinse the garbanzo beans, drain and cover with water to cover by 3 inches. Soak beans for 4 to 6 hours. Drain in a colander and rinse thoroughly.
  • Note: The key to this hummus recipe is to just soak the beans for the 4 to 6 hours the recipe calls for. If you soak them overnight they will absorb too much liquid and you will have very mushy beans and lots of water. If you don't have time to do a 4 to 6 hour soak, you can do a quick soak by bringing the beans and soaking water to a boil and boiling for 1 minute. Remove the beans and water from the heat and let stand for 30 minutes before draining and continuing with the recipe.
  • In a large pot combine soaked beans, the 7 cups water and the baking soda. Bring to a boil, reduce heat and simmer until the beans are falling apart, about 1 hour. Stir any foam that comes to the surface back into the beans while they cook.
  • Pour beans and any remaining cooking liquid into a large bowl and cool to room temperature in the refrigerator.
  • Transfer beans and liquid to a food processor. Add the salt, garlic, tahini and lemon juice and process until smooth.
  • If the mixture is too thick (it should be the consistency of thick cream), add water 1 tablespoon at a time until the hummus is smooth.
