BRUSCHETTA WITH HEIRLOOM TOMATOES, OLIVES AND BASIL
In this summery bruschetta, briny olives and a splash of balsamic vinegar liven up the classic tomato and basil topping.

Steps:
- Preheat the oven to 425°F and set a rack in the middle position.
- In a medium bowl, combine the tomatoes, olives, balsamic vinegar, basil, salt, pepper, and ⅓ cup of the oil. Toss to combine, then taste and adjust seasoning, if necessary. (If the tomatoes aren't as sweet as you'd like, add ⅛ teaspoon sugar.)
- Arrange the bread slices on a baking sheet. Brush both sides of the bread with the remaining 3 tablespoons of oil. Bake for about 10 minutes, until crisp and golden on the bottom.
- Using tongs, flip the bread slices so the golden side is facing up. Rub the top side of each slice with the cut side of the garlic, going back and forth once (or twice, if you like your bruschetta extra garlicky). Transfer the toasted bread to a serving platter and top each slice with a spoonful of the tomato mixture. Sprinkle the bruschetta with more basil. Serve within 10 minutes so that the bread stays crisp.
- Make-Ahead Instructions: The tomato mixture can be prepared up to 3 hours ahead of time and stored in a covered container in the refrigerator. Taste and adjust seasoning before topping the toasted bread.

CREAM CHEESE BRUSCHETTA
Cream Cheese Bruschetta is a spin on traditional tomato bruschetta. This version has a layer of creamy, basil cream cheese just beneath the tomato mixture that adds a wonderful taste and texture that takes this appetizer up a notch.

- Preheat the oven to 350°F.
- Slice the baguette into ½-inch thick slices, and place them on a baking sheet. Bake for about 10 minutes until the bread is lightly toasted. Remove from oven and set aside.
- Place the softened cream cheese and basil in a small bowl. Use a spoon to combine. Set aside.
- Place the tomatoes, onions, garlic, basil, and olive oil in a medium bowl. Stir to combine. Taste, and season with salt and pepper.
- Spread approximately 1 tablespoon of basil cream cheese onto each slice of toasted bread. Top with about 1 - 1 ½ tablespoons of bruschetta mixture. If desired, sprinkle with Parmesan cheese.
- Serve immediately. The bruschetta may be stored in the refrigerator for up to 3 days. Store unassembled in separate containers for best results.

- Preheat broiler to high, (if you prefer you can also grill the bread). Place bread slices on a broiler pan. Char bread on each side under hot broiler, keep an eye on it! - Preheat oven to 350 degrees F (175 degrees C).
- Slice the baguette into 1/2 inch thick diagonal slices. Arrange the slices in a single layer on a baking sheet. Brush both sides of each slice with the olive oil. Place tomato slices and a sprinkling of basil and oregano on the bread slices. Sprinkle the tomatoes, basil and oregano with the garlic powder and white pepper. Cover the tomato slices with slices of the mozzarella and provolone. Place more basil, oregano and tomato slices on top of the cheese.
- Bake in the preheated oven for 7 to 10 minutes, or until the cheese is bubbly.
