Hummus, Artichoke, and Tomato Pita Sandwich image

This sandwich is a combo of all my favorites...hummus, tomatoes, artichokes,pita bread, and cheese. What's not to love?! I like it both cold or warm, just depends on what I'm in the mood for. Its perfect for a light lunch or cut it into wedges and serve as an appetizer. Make sure you don't bypass toasting the pita bread. I'm not sure why, but it makes all the difference in taste and texture. I've used both commercially prepared and homemade hummus. They both work fine, but if you have the time definitely go with your own mix. Otherwise give Gingerbee's Hummus Amongus (#22060) a whirl...yum! If you don't have gruyere cheese, any plain old swiss works just fine. Enjoy!

Number Of Ingredients 6

2 pita bread (flatbread rounds, without the pocket)
1/4 cup hummus
snipped green onion (to taste)
1/2 cup canned water-packed artichoke hearts (not marinated kind)
1 ripe tomatoes, sliced
2 slices gruyere cheese

Steps:

  • Toast pita bread rounds (I just place them in my toaster over, two at a time).
  • Spread 2 tbsp hummus on two of the toasted pitas.
  • Sprinkle snipped green onions over hummus
  • Divide drained artichokes and tomato slices and layer them on the pitas.
  • Place 1 slice of gruyere on each
  • For cold sandwich, place remaining pitas on top of each and serve.
  • For warm sandwich, put the layered pita back in oven/toaster oven until cheese is melted. Place remaining 2 pitas on top and serve.

1 19-ounce can chickpeas, drained and thoroughly rinsed
3 tablespoons tahini
4 tablespoons water
2 tablespoons lemon juice
2 large cloves garlic, finely minced
2 teaspoons reduced-sodium tamari
2 tablespoons minced parsley
6 whole-wheat pitas
3 large scallions, thinly sliced
3 large ripe tomatoes

Steps:

  • Combine chickpeas, tahini, water, lemon juice, garlic and tamari in food processor and process until well blended and smooth.
  • Stir in the parsley.
  • Toast pitas until they begin to puff; slice almost completely through into two circles.
  • Spread 1/3 cup tahini mixture over half of each pita; top with 1/6 of the sliced scallions and slices of 1/2 a tomato. Top with other pita circle and serve.

  • Peel and slice the cucumber (or peel alternating strips as we did here). Thinly slice the tomato. Slice the red onion. Chop the pickled vegetables.
  • Meanwhile, place the chopped pickles in a paper towel or clean dish towel and squeeze out any extra water. Place the tomatoes on a paper towel or towel and blot them to remove excess moisture.
  • Place the cucumber slices on the bottom of the sandwich to act as a moisture barrier. Top with a layer of hummus. Add the cheese (optional), pickled vegetables, red onion, tomato, and microgreens or sprouts (if using). Spread the remaining hummus on the top slice of bread and place it on top. Note: This sandwich is best made right before eating. If you’re bringing it outside the house like to work, we recommend chopping the components in advance, then building the sandwich right before you eat it. To make it in advance, you could make it as a wrap.
