AIR-FRYER SOUTHERN-STYLE CHICKEN

I call this America's best-loved air fryer chicken. The secret is in the breading, which makes the chicken super moist and flavorful, herby and golden brown. -Elaina Morgan, Rickman, Tennessee

Number Of Ingredients 10

2 cups crushed Ritz crackers (about 50)
1 tablespoon minced fresh parsley
1 teaspoon garlic salt
1 teaspoon paprika
1/2 teaspoon pepper
1/4 teaspoon ground cumin
1/4 teaspoon rubbed sage
1 large egg, beaten
1 broiler/fryer chicken (3 to 4 pounds), cut up
Cooking spray

Steps:

  • Preheat air fryer to 375°. In a shallow bowl, mix the first 7 ingredients. Place egg in a separate shallow bowl. Dip chicken in egg, then in cracker mixture, patting to help coating adhere. In batches, place chicken in a single layer on greased tray in air-fryer basket, spritz with cooking spray., Cook 10 minutes. Turn chicken and spritz with cooking spray; cook until chicken is golden brown and juices run clear, 10-20 minutes longer.

Good Old Fashioned Pancakes image

This is a great recipe that I found in my Grandma's recipe book. Judging from the weathered look of this recipe card, this was a family favorite.

1 ½ cups all-purpose flour
3 ½ teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 ¼ cups milk
1 egg
3 tablespoons butter, melted

Steps:

  • In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  • Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

  • Rewrite Your Draft Notes Into Recipe Form. The organization of a finished recipe is quite different from the notes you make while documenting the cooking process.
  • Write a Brief Introduction. A good time to write an introduction is after you’ve re-written your draft notes, or even later. By that time, most of the pieces of your recipe will have come together, and you may have fresh insights about what you want to tell readers about your recipe.
  • Include Images. There is no doubt that food photography is an art and a profession as well, but absent a professional photographer, don’t hesitate to include your own photos or drawings of ingredients, equipment, and the finished dish.
  • Include Serving Suggestions. This is your opportunity to help the reader complement your recipe with foods that you know add health benefits and other enhancements.
  • Use a Spell Checker. No matter how careful you’ve been in the writing process, I guarantee a spell checker is going to find misspellings.
  • Ask for a Review From a Fresh Pair of Eyes. By the time you’ve written your recipe, spellchecked it, and re-read it too many times, you are now blind to whatever faults it may contain.
