We always have a good supply of fresh fish, so I make fish recipes often. This recipe is my favorite because it is moist, tender and flavorful. -Judie Anglen, Riverton, Wyoming

1-1/4 pounds fish fillets
1 teaspoon seasoned salt
Pepper to taste
Paprika, optional
3 tablespoons butter, melted

Steps:

  • Preheat oven to 400°. Place fish in a greased 11x7-in. baking dish. Sprinkle with seasoned salt, pepper and paprika if desired. Drizzle with butter. , Cover and bake until fish just begins to flake easily with a fork, 15-20 minutes.

1 pound mild-flavored fish fillet, about 3/4 inch thick
3 tablespoons butter, melted
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon paprika

Steps:

  • Heat oven to 375°F. Grease bottom of rectangular pan, 11x7x1 1/2 inches.
  • Cut fish fillets into 4 serving pieces if needed. Place pieces, skin sides down, in the pan, folding thin ends under if necessary for even thickness.
  • Mix remaining ingredients; drizzle over fish.
  • Bake uncovered 15 to 20 minutes or until fish flakes easily with fork.

2 pounds mackerel fillets
1 teaspoon salt
⅛ teaspoon ground black pepper
¼ cup butter, melted
2 tablespoons lemon juice
⅛ teaspoon ground paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking pan with vegetable oil.
  • Place mackerel fillets in the baking pan; season with salt and pepper.
  • Mix butter, lemon juice, and paprika together in a bowl. Pour over mackerel fillets.
  • Bake in the preheated oven until mackerel flakes easily with a fork, 20 to 25 minutes.

4 teaspoons grated Parmesan cheese
1/2 teaspoon dill weed

Steps:

  • Place fish in a 10-in. pie plate that has been coated with cooking spray. Sprinkle with Parmesan cheese and dill. Bake, uncovered, at 350° for 8-10 minutes or until fish flakes easily with a fork.

1 -1 1/2 lb tilapia fillet (or cod, haddock, or any other mild fish)
4 tablespoons butter, melted
2 teaspoons lemon juice
1 -2 garlic clove, minced
1 teaspoon sugar
1/2 teaspoon pepper
1/2 teaspoon thyme
1 tablespoon chopped parsley
1/3 cup breadcrumbs

Steps:

  • Preheat oven to 425. Lightly grease or spray a 13" x 9" (or larger) baking dish.
  • Rinse fish filets and pat dry. Set them in a single layer in the prepared baking dish.
  • In a small bowl, combine melted butter, lemon juice, garlic, sugar, pepper, thyme and parsley. Stir well. Pour evenly over fish filets.
  • Sprinkle with the breadcrumbs.
  • Bake at 425 for about 20 minutes or until filets are opaque and flakey.
