I got this recipe from a woman's magazine years ago. I really enjoy this, especially in the summertime when grillin' & chillin'! Dice fruit and veggies to your desired size.

Number Of Ingredients 11

2 cups corn, slightly cooked
2 papayas, ripe
4 ripe plum tomatoes, seeded
2/3 cup red onion, diced
1 tablespoon garlic, minced
1/2 red bell pepper, diced
2 tablespoons lime zest
1/2 cup lime juice
1 teaspoon jalapeno pepper, seeded, minced
1/4 cup cilantro, chopped
tortilla chips

Steps:

  • Peel and remove seed from papaya, cut into 1/2" dice.
  • In a bowl, combine all ingredients except cilantro.
  • Cover and refrigerate up to 2 hours.
  • Just before serving, toss in cilantro.
  • Serve chilled with your favorite tortilla chips.

750 ml dry red wine
1 pint club soda
1/4 cup lemon juice
1/4 cup orange juice
1 ounce cognac
2 lemons, washed and sliced
2 oranges, washed and sliced
2 cinnamon sticks
ice cube
1/4 cup water
1/2 cup sugar

Steps:

  • Make simple syrup by combining water and sugar in saucepan. Stir over low heat until sugar is dissolved. Cover pan and simmer 2 minutes. Remove from heat.
  • In large pitcher, mix together wine, club soda, juices, cognac, fruit slices and cinnamon sticks.
  • Stir in simple syrup.
  • Mix all together and chill.
  • Stir again, then serve in a clear glass pitcher over ice cubes.
  • Enjoy!

Papaya may be used in either sweet or savory recipes. As the fruit and leaves contain an enzyme that tenderizes meat, it is an ideal fruit to use in savory dishes . For this dish, choose papayas with mottled green and yellow skins, as they should be slightly under-ripe.

2 papayas
2 tablespoons vegetable oil
1/2 cup chopped onion
1 large garlic clove, crushed
1 slice bacon, finely chopped
1 lb ground lean pork
1 serrano chili pepper, seeded and finely chopped
1 tablespoon tomato paste
1/2 cup dry white wine
3/4 cup peeled seeded and chopped tomato
salt and pepper
3 tablespoons freshly grated parmesan cheese
1 tablespoon butter
2 cups tomato sauce (recipe below)
parsley, to garnish
5 tablespoons olive oil
3 garlic cloves, crushed
3 lbs ripe tomatoes, quartered
2 teaspoons sugar
1/2 teaspoon salt

Steps:

  • FOR THE PAPAYAS: Peel the papayas, cut them in half lengthwise and remove the black seeds with a teaspoon. Parboil the fruit in gently boiling, salted water for 10 minutes, then drain upside down on paper towels.
  • Preheat the oven to 350°F.
  • Heat the oil in a large skillet and sauté the onion, garlic and bacon together until the onion is soft. Add the pork and chili and sauté until browned, stirring to break up the meat. Add the tomato paste and cook, stirring, for 2 minutes. Pour over the white wine and stir in the tomatoes. Bring to the boil, reduce the heat and simmer for 5 minutes. Season, remove from the heat and allow the mixture to cool slightly.
  • Grease a baking dish just large enough to hold the papaya shells and place them, cavity side up, in the dish. Pile the meat mixture into the center of each papaya.
  • Sprinkle with Parmesan cheese and dot with butter. Bake for 30-40 minutes or until the papaya is tender. Heat the tomato sauce and serve with the sauce poured around each papaya. Serves 4.
  • FOR THE TOMATO SAUCE: Heat the oil and sauté the garlic for 1 minute, stirring. Add the tomatoes and bring to the boil. Reduce the heat, cover and simmer for 15 minutes. Strain the tomatoes, using a soup ladle to push all the pulp through.
  • Return the pulp to the pan and simmer for 10 minutes, or until the sauce has reduced to the required consistency. Store for up to 2 weeks in the refrigerator or freeze for up to 3 months. Makes about 1 ¼ quarts.

  • Prepare grill for hot fire.

4 swordfish steaks
1 tablespoon olive oil
1/4 teaspoon salt
1 tablespoon fish seasoning (if you don't have a pre-mixed fish seasoning, mix paprika, cayenne, sugar and black pepper)
2 cups fresh papayas, small dice
1/2 cup grape tomatoes, small dice
2 tablespoons fresh cilantro, chopped
2 tablespoons lime juice
1 lime, zest of
2 tablespoons jalapeno peppers, minced
1/2 cup cucumber, small dice (optional)
1/4 cup red onion, small dice (optional)

Steps:

  • Preheat grill (allow 10 minutes for gas grill).
  • While grill is heating, prepare fish and make salsa.
  • Prepare fish fillets: brush with oil, sprinkle with salt, pepper and seasoning mix.
  • Prepare salsa: mix together all ingredients, taking care to keep everything very small. If desired, you can add diced cucumber or red onion, according to your taste preferences. Set salsa aside.
  • Prepare heated grill for fish (we use a non-stick spray made for grills to prevent sticking).
  • Grill fish 4-5 minutes on each side. When cooking swordfish, don't overcook or it will be dry. Don't wait until it "flakes apart" like other fish - when swordfish is perfectly cooked, there will still be some resistance when you try to cut it apart.
  • Serve swordfish with salsa and a wedge of lime.

1 tablespoon honey
1 tablespoon soy sauce
1 tablespoon sesame oil
1 lime, juice and zest of, finely grated
2 teaspoons gingerroot, finely chopped
12 medium prawns, peeled and deveined, with tails left in tact
1 papaya, peeled, deseeded, and finely diced
1 lime, juice of
red chile, finely chopped
1 small red onion, finely diced

Steps:

  • Preliminary: If using wooden skewers, soak in water 30 minutes to prevent them catching fire on the barbecue.
  • For prawns, add honey, soy sauce, sesame oil, lime rind and juice, and ginger in a bowl and mix well. Add prawns and stir to coat. Cover and chill for 20 minutes.
  • For the salsa, mix papaya, lime juice, coriander leaves, chilli and onion in a small bowl and set aside.
  • Thread prawns onto presoaked skewers (or metal ones) and cook over hot coals (or gas barbecue on high heat) 2-3 minutes: no longer, or they will go rubbery.
  • Serve with papaya salsa and lime wedges.

When making this salad, which is lightly spiked with jalapeño pepper, have all the ingredients prepared ahead. Then just toss them together as close to serving time as possible to keep the flavors fresh.

2 cups fresh corn, lightly cooked
2 ripe papayas, peeled, seeded and cut into 1/4-inch dice
2/3 cup finely diced red onion
4 ripe plum tomatoes, seeded and finely diced
1 tablespoon minced garlic
