Hot & Spicy Brittle image

Get out the hot pepper sauce and light corn syrup to put some hot and spicy into your next batch of peanut brittle.

Number Of Ingredients 6

1 cup sugar
1/2 cup light corn syrup
2 Tbsp. butter or margarine
1 cup PLANTERS Dry Roasted Peanuts
1 cup sliced almonds, toasted
2 tsp. hot pepper sauce

Steps:

  • Mix sugar, corn syrup and 1/2 cup water in 3-quart saucepan. Bring to boil on medium heat, stirring until sugar dissolves. Cover. Boil 2 to 3 minutes.
  • Uncover; continue boiling until syrup reaches hard-crack stage (295°F). Remove from heat; stir in butter, nuts and pepper sauce.
  • Pour mixture onto lightly greased baking sheet; spread out with greased spoon or spatula. Cool completely. Break into pieces. Store in airtight container.

1 1/2 cups sugar
1/2 cup light corn syrup
1 stick (8 tablespoons) salted butter, melted
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1/2 cup almonds, toasted and coarsely chopped
1/2 cup walnuts, toasted and coarsely chopped
1/2 cup pecans, toasted and coarsely chopped
1/2 cup pistachios, toasted and coarsely chopped
1 1/2 teaspoons flaked sea salt
8 ounces bacon
1 head escarole, chopped into 2-inch pieces
1 small head radicchio, chopped into 1-inch pieces
2 carrots, coarsely grated
1 apple, thinly sliced (toss in lemon juice if not using immediately)
1/2 red onion, thinly sliced
1/4 cup golden raisins
1 cup good-quality bottled vinaigrette
2 tablespoons grainy mustard
1 tablespoon honey

Steps:

  • For the spicy brittle: Line a baking sheet with parchment paper.
  • Heat the sugar, corn syrup, butter and 1/2 cup water in a large saucepan over medium-high heat. Stir gently with a wooden spoon until the sugar has melted. Stop stirring and continue to cook, swirling the pan occasionally to ensure it cooks evenly, until the mixture reaches 300 degrees F on a candy thermometer, about 10 minutes. While this is cooking, combine the chili powder, cumin, and cayenne in a small bowl.
  • Carefully, but moving quickly, stir the almonds, walnuts, pecans, pistachios and spice mixture into the sugar syrup until the nuts are coated. Pour onto the prepared baking sheet, spreading it out as evenly as possible using the back of a spoon. Sprinkle over the sea salt. Allow to cool completely, 1 to 1 1/2 hours. When cool, break into shards.
  • For the salad: Fry the bacon in a skillet until crisp. Reserve 1 tablespoon bacon fat in the skillet.
  • When ready to serve, arrange the salad on a large platter in layers: escarole, radicchio, carrots, apples, onion, raisins and bacon.
  • Heat the skillet with the bacon fat over medium heat. Add the vinaigrette, mustard and honey and cook, stirring, until warm. Pour the dressing over the salad. Arrange the spicy brittle shards over the top. Serve immediately.

Spicy Nut Brittle image

A few years ago dietary changes dictated we were no longer allowed peanuts or corn. Since we love Christmas candy I had to come up with a replacement for peanut brittle. This recipe is the result, and what a happy consequence! Nut brittle all grown up. It's sneak attack is surprising and wonderful :)

1 c sugar
1/2 c honey
2 Tbsp butter
2 c sliced almonds, toasted
1-2 tsp tabasco sauce
1 tsp baking soda

Steps:

  • 1. Combine sugar and honey in a deep 2 qt. microwave-safe dish; I use a Corning Ware casserole dish.
  • 2. Cook on high 3 minutes. Stir. Cook 3 minutes more.
  • 3. Stir in butter and hot sauce.
  • 4. Stir in baking soda until light and foamy.
  • 5. Spread lightly onto baking sheet. Cool. Break into pieces. Enjoy!
  • 6. NOTE: Use any nuts, or combination, that you like.

Sweet and Spicy Brittle image

If you like nut brittle as well as I do, here is something a little different. This is almost foolproof if the steps are followed through in the correct order and you work fast. The chili powder adds a little kick at the end. I personally use a dried mixture of ghost pepper, Carolina reaper, and Caribbean red habiarino peppers...

1 c white granulated sugar
3/4 c lite corn syrup
1/2 c honey roasted peanuts
1 c mixed shelled roasted pumpkin seeds and shelled roasted sunflower seeds
1/2 c mixed nuts salted or not, your choice
1 1/2 Tbsp butter
1 tsp vanilla
1 tsp heaping, baking soda
3/4 tsp chili powder your choice on heat level
1/4 tsp sea salt

Steps:

  • 1. Read through entire recipe and have everything ready to go. Steps must go fast and in order to insure brittle will come out correct. In a large glass measuring cup, or glass bowl, mix sugar and corn syrup. Microwave for 5-7 min or until mixture has started to turn to a lite amber color. Keep a close eye on this, some microwaves cook faster than others.
  • 2. While the sugar and syrup is microwaving, quickly mix together butter, and all the nuts and seeds. When sugar and syrup is ready, quickly add nut and seed mixture, microwave 2 more min.
  • 3. As soon as the above comes out of the microwave stir in vanilla, salt, baking soda and chili powder, combine well and spread out on a silicone mat laid on a baking sheet with a silicone spatula (makes clean up so much easier), as thin as you would like your brittle.
  • 4. When cooled break into small pieces, store in airtight container.

1 teaspoon baking soda
1/2 teaspoon rum extract
1/2 teaspoon vanilla extract

Steps:

  • Grease a 15x10x1-in. pan; set aside. , In a 2-qt. microwave-safe bowl, combine sugar and corn syrup. Microwave, uncovered, on high for 3 minutes; stir. Microwave 2-1/2 minutes longer. Stir in the cashews, pecans, butter, cinnamon, cayenne, salt and nutmeg. , Microwave, uncovered, on high for 2 minutes or until mixture turns a light amber color (mixture will be very hot). Quickly stir in baking soda and extracts until light and foamy. Immediately pour into prepared pan; spread with a metal spatula. Cool completely. Break into pieces; store in an airtight container.

This is originaly from Gourmet magazine. While I'm not their biggest fan this was a keeper. I promise you that it will shake up the candy plate. Serving amount depends on the size of the pieces you breat it into.

1 lb blanched whole almond
1/4 cup cider vinegar
2 cups sugar
1 tablespoon sugar
1 teaspoon salt
2 teaspoons ground cumin
1 teaspoon ground coriander
1/2-3/4 teaspoon ground red pepper (cayenne)

Steps:

  • Preheat oven to 375°F Place almonds in 15 1/2 x 10 1/2-inch jelly-roll pan. Bake 10 to 15 minutes until golden brown, shaking pan occasionally. Cool almonds in pan on wire rack.
  • While almonds cool, in heavy 3-quart saucepan, heat vinegar and 2 cups sugar to boiling over medium heat. Continue cooking over medium heat until mixture turns dark amber in color, 15 to 20 minutes, stirring occasionally. (If using a thermometer, temperature should read about 360°F.)
  • Meanwhile, in small bowl, mix salt, cumin, coriander, ground red pepper, and remaining 1 tablespoon sugar. Lightly grease large cookie sheet.
  • Remove saucepan from heat. Stir spice mixture into hot sugar syrup. Add almonds, and stir until evenly coated. Immediately pour mixture onto cookie sheet. With 2 forks, spread almond mixture to form a single layer.
  • Cool brittle completely on cookie sheet on wire rack. With hands, break brittle into small pieces. Store in tightly covered jar or tin for up to a month.

If you like a little hot with your sweet than this is the candy for you. Peanut brittle with a little spice added and all made in microwave so super simple.

Number Of Ingredients 8

1 1/4 cups dry roasted salted peanuts (Note, I have used unsalted and still tastes good but lower in sodium)
1 1/2 teaspoons hot pepper sauce
1/4 teaspoon allspice
1 cup sugar
1/2 cup light corn syrup
1 teaspoon butter
1 1/2 teaspoons baking soda
1 teaspoon vanilla

Steps:

  • Coat a cookie sheet with cooking spray.
  • Also spray a metal spatula (and yes it matters, goo will stick to all others and make it impossible to work with)
  • set aside cookie sheet and spatula.
  • In a large bowl, mix the peanuts, hot pepper sauce and allspice
  • Put sugar and corn syrup into a large glass microwavable bowl.
  • Stir mixture - will be very thick but will change when heated.
  • Microwave, uncovered on high for 4 minutes.
  • stir again.
  • add in spicy peanut mixture.
  • stir until blended.
  • Return to microwave and cook on high 4-5 minutes longer.
  • Stir in butter.
  • Microwave 45 seconds.
  • Very quickly add in baking soda and vanilla and stir. It will foam and the color witl lighten.
  • Immediately pour into prepared pan and spread as thin as possible with prepared spatula.
  • Cool, break into pieces (put in bag and use hammer to smash is easiest).

This is a peanut brittle I concocted from several different recipes I have seen and used for peanut brittle over the years. It's a fun twist on the standard brittle and tastes like a mix between hot cinnamon candies and peanut brittle.

1 cup sugar
½ cup light corn syrup
1 cup dry-roasted peanuts
½ teaspoon ground cinnamon
¼ teaspoon cayenne pepper
1 teaspoon butter or margarine
1 teaspoon baking soda

Steps:

  • In a glass bowl, stir together the sugar, corn syrup, peanuts, cinnamon, and cayenne pepper until thoroughly blended. Microwave on high for 6 minutes. Slowly stir in the butter, and microwave an additional 30 seconds.
  • Very carefully remove bowl from the microwave as the contents will be extremely hot. Gently stir in baking soda until mixture becomes light and foamy. Turn batter out onto a lightly oiled cookie sheet, scraping sides of bowl with a rubber spatula. Allow brittle to cool for 1 hour, then break into pieces.
