HOT SPIKED CIDER
A 'spiked' version of the traditional hot cider - great for fall or holiday gatherings. This can be made in large quantities and kept warm in an electric coffee server.

- Pour water into a large saucepan and bring to a boil. Remove from heat and toss in the orange spice tea bags. Cover and let steep 5 minutes. Remove tea bags and stir in sugar, apple cider, rum, and 2 of the cinnamon sticks. Heat just to steaming -- do not boil.
- Ladle hot cider into 6 mugs and drop 1/2 teaspoon butter into each. Garnish with a cinnamon "swizzle" stick.

HOT SPICED CIDER TEA
A lovely hot spiced cider and tea beverage infused with cinnamon, black peppercorns, cloves, cardamom, fresh ginger, star anise and citrus. Perfect for a chilly autumn or winters eve.

Steps:
- Lightly crush the cinnamon, peppercorns, cloves, and cardamom pods in a mortar and pestle or on a cutting board with the bottom of a saucepan.
- Transfer the spices to a medium saucepan, add the ginger, star anise and citrus peels. Add the water. Bring to a boil, reduce the heat, and simmer, partially covered, until aromatic, and the cinnamon stick opens a little, about 10 minutes.
- Add the tea bags to the pan and immediately remove from the heat. Set aside to steep for 3 to 4 minutes. Remove the tea bags, and add the apple juice and orange juice. Return the pan to a medium heat and warm, taking care not to let the tea boil.
- Strain and serve hot.

- In a large pot over medium heat, add the apple cider. Stir in the brown sugar, allspice and nutmeg until the sugar is dissolved and bring to a low boil.
- Stick the pointy ends of the cloves into the orange so that just the buds of the cloves are visible. The entire orange should be covered with the cloves.
- Add the orange to the cider and reduce the heat to simmer. Cover and continue cooking for 20 minutes.
- Serve in warm mugs with a cinnamon stick garnish. For adults, add bourbon to the cider.

This is an old family favorite, handed down from my great-grandmother. The holidays officially begin with Christmas carols and my favorite hot spiced tea! Definitely a seasonal comfort beverage for me! I prefer to use fresh juices with pulp. The flavors are different. Canned pineapple in light syrup is best.
