SMOKED TROUT AND POTATO SALAD



Smoked Trout and Potato Salad image

1/2 small red onion, thinly sliced
1 pound red-skinned potatoes, cut into 1-inch chunks
Kosher salt
1/4 cup creme fraeche or sour cream
1 tablespoon white wine vinegar
1 tablespoon extra-virgin olive oil
1 1/2 teaspoons grainy mustard
3 tablespoons chopped fresh dill
1/2 small English cucumber, halved lengthwise and thinly sliced
Freshly ground pepper
1 large bunch watercress, stems trimmed
12 ounces smoked trout, skin removed
Pumpernickel bread and/or pickled beets, for serving (optional)

Steps:

  • Soak the onion slices in a bowl of ice water. Cover the potatoes with water in a pot; add a pinch of salt, cover and bring to a boil. Reduce to a simmer and cook, uncovered, until tender, 8 to 10 minutes. Drain and let cool slightly; pat dry.
  • Meanwhile, whisk the creme fraeche, vinegar, olive oil and mustard in a large bowl to make a smooth dressing. Stir in the dill. Drain the onion, pat dry and add to the dressing. Add the potatoes and cucumber, season with salt and pepper and toss to coat.
  • Divide the watercress among 4 plates and add some potato salad to each. Flake the trout with your fingers and scatter on top. Serve with pumpernickel bread and/or pickled beets, if desired.

200g green beans , trimmed
1 head romaine lettuce , leaves separated and torn if large
250g hot-smoked trout
50g ready-made croûtons
3 tbsp olive oil
1 tbsp wholegrain mustard
zest and juice 1 lemon

Steps:

  • Cook the green beans in a small pan of boiling salted water for 3-4 mins, until just tender. Drain and refresh under cold running water. Transfer to a serving bowl, add the lettuce, trout and croutons.
  • Whisk the oil with the mustard and lemon zest and juice. Season and drizzle over the salad. Gently toss to coat and serve straight away.

1/2 cup kosher salt
1 quart water
2 pounds trout filets, 3 to 5 ounces each, skin on, pin bones removed

Steps:

  • Combine the salt and water in a 4-quart container and stir until the salt has dissolved, 1 to 2 minutes. Add the trout filets, making sure they are submerged. Cover and refrigerate for 3 hours.
  • Remove the trout from the brine, rinse thoroughly, and pat dry. Place the trout, skin side down onto a cooling rack set in a half sheet pan. Dry in the refrigerator 21 to 24 hours or until the skin becomes shiny and somewhat tacky to the touch.
  • The next day, turn the smoker on so that it maintains a temperature of 150 to 160 degrees F. Place the trout onto smoking racks, skin side down, separating them by at least 1/4-inch and place into a smoker. Adjust heat as needed and cook for 2 1/2 to 3 hours or until the fish is, cooked through, has darkened in color, and has the desired level of smoke flavor.
  • Serve with a green salad, incorporate into a dip or eat as an appetizer. Refrigerate unused portions in an airtight container for up to a week or vacuum seal and refrigerate for up to a month.

800g potato , unpeeled
1 tbsp red wine vinegar
2 tsp dill , finely chopped
1 tbsp baby caper in brine, drained and rinsed
1 small red onion , thinly sliced into half moons
4 handfuls watercress , picked
175g smoked trout (or mackerel) fillets, skin and bones removed, flesh broken into chunks
2 tbsp wholegrain mustard
2 tbsp red wine vinegar
2 tbsp extra-virgin olive oil
1 tsp caster sugar

Steps:

  • Put the potatoes in a saucepan of lightly salted water and bring to the boil. Simmer for 10 mins or until tender, then drain. When cool enough to handle, peel and cut into thick slices. Put in a bowl and toss with vinegar and some seasoning.
  • To make the dressing, mix all the ingredients together in a small bowl. Pour over the potatoes and add the dill, capers and onion. Arrange the salad on plates with a handful of watercress, then top with the smoked fish.

Four 1 1/2 to 2-pound whole trout, scaled, gutted, and cut into 4 skin-on fillets
35 creamer potatoes, par-boiled, halved
3 to 4 tablespoons mayonnaise, such as Hellman's
3 tablespoons whole-grain mustard, plus more to taste
3 tablespoons malt vinegar
2 tablespoons chopped dill, plus whole sprigs for garnish
2 tablespoons prepared horseradish, plus more to taste
3 green onions, dark and pale green parts thinly sliced, plus more for garnish
Kosher salt and freshly ground black pepper

Trout roe, for garnish

Steps:

  • Preheat the fryer to 350 degrees F.
  • Prepare the smoker, using wood chips, so that it maintains a temperature of 150 to 160 degrees F. Place the trout fillets onto the smoking racks skin-side down, separating them by at least 1/4 inch and put into the smoker. Adjust the heat as needed and cook until the fish is opaque, has darkened in color and has the desired level of smoke flavor, 5 to 7 minutes. Remove the skin and bones, flake into large pieces, and place in a bowl.
  • Cut the bottoms off of the creamers so they will sit flat, and scoop out the center flesh of each one.
  • Whisk together the mayonnaise, mustard, vinegar, dill, horseradish and onions in a small bowl and season with salt and pepper. Pour some of the dressing over the trout, gently mixing to combine. Add more horseradish and mustard, to taste.
  • Fry the potatoes in batches until they are golden and crispy, 4 to 5 minutes. Drain on a paper-towel-lined sheet tray and season with salt. Stuff the potatoes with the trout salad, and garnish with dill sprigs and trout roe.

500g baby new potatoes , larger ones halved
1 tsp Dijon mustard
2 tbsp olive oil
1 tbsp white wine vinegar
4 spring onions , sliced
10 tea bags (not herbal ones)
50g demerara sugar
50g long grain rice
4 fresh trout , about 280g-350g/10-12oz, gutted and heads removed
100g bag rocket

Steps:

  • Boil the potatoes in a large pan of salted water for about 15 mins. Drain well in a colander and allow them to steam dry for 5 mins.
  • To make the dressing: mix the mustard, olive oil and vinegar with some seasoning. Stir in the spring onions, then pour the mixture over the warm potatoes and allow to cool.
  • To make the smoking mixture, split the tea bags and empty the leaves into a bowl with the sugar and rice. Line a deep roasting tin with foil, tip the smoking mix on top and cover with another piece of foil. Place the tin onto the hob over a medium heat until it starts to smoke a little.
  • Once you see smoke escaping, put the trout on top with a little bit of seasoning and cover with more foil, trapping the smoke inside. Lower the heat and leave to smoke for 20-22 mins until the trout is cooked - it should flake away from the bone when it is done.
  • Add the rocket to the potato salad and gently stir to coat in the dressing. Divide between 4 plates and serve with the trout.
