CARAMELIZED PINEAPPLE
This easy dessert is perfect in the winter, when pineapples are plentiful.

Steps:
- Core and peel pineapple. Slice it lengthwise into eighths.
- Heat butter in a large nonstick skillet over high heat. Coat pineapple wedges with sugar; place in hot pan. Cook, turning once and shaking pan often, until golden brown, 8 to 10 minutes. Remove pineapple.
- Stir 3 tablespoons water into pan, and heat briefly; drizzle over pineapple. Serve with frozen yogurt, if desired.

- Cut orange slices in half. Using a wooden toothpick, poke holes in the peel of each orange slice at 1/2-in. intervals. Insert a clove into each hole; set aside., In a large saucepan, bring apple juice and cinnamon stick to a boil. Reduce heat; cover and simmer for 5 minutes. Stir in the pineapple juice, honey, lemon juice, zest and nutmeg; return to a boil. Reduce heat; cover and simmer for 5 minute. , Discard cinnamon stick. Garnish with orange slices. Serve warm with additional cinnamon sticks for stirrers if desired.

HOT PINEAPPLE
This recipe is a great one to serve at a brunch. The fruity, sweet taste goes well with the often served hashbrown casseroles or sausage casseroles. Of course, you can serve it anytime! I read about this recipe in one of the "Sweet Potato Queens" books, but haven't been able to find it again, so I made it up to match it as best as I could.

- Preheat the oven to 350 degrees.
- Put the pineapple in a greased 1 quart casserole with the cheese. Stir.
- Mix together the sugar, flour, and pineapple juice. Blend well. Pour over the pineapple.
- In a skillet, melt the butter and add the crushed crackers. Stir until the butter is absorbed and the cracker crumbs are coated. Pour the cracker mix on top of the pineapple mixture.
- Bake at 350 degrees for 30 minutes.

This is a great addition to any summer get-together! I got this recipe after watching Martha Stewart. It was a recipe from one of her guests, Clay Aiken from "American Idol." It is really a tasty dish!

- In a medium bowl, combine pineapple, sugar, flour and cheese.
- Transfer to an 8-by-8-inch, 1 1/2 quart baking dish.

- Let stand 10 minutes before serving.

- Drain the pineapple, reserving 1/4 cup of the juice; set aside. In a small bowl, combine sugar and flour. Add the butter and 1 cup cheese; mix well. Gently stir in pineapple. , Pour into a greased 1-1/2-qt. baking dish. Sprinkle crushed crackers on top; drizzle with reserved pineapple juice. Bake, uncovered, at 350° for 30-35 minutes or until bubbly around edges. Remove from the oven and sprinkle with the remaining cheese.

- Cut a pineapple into small pieces (see Cook's Note). Microwave the grated zest of 3 limes on a paper towel until dry, about 1 minute. Mix the dried zest, 2 teaspoons salt, 1 teaspoon sugar and 1/4 teaspoon each ancho chile powder and cayenne pepper. Toss with the pineapple.

- Heat oven to 350*. Spray medium sized casserole dish with non-stick spray. Drain pineapple juice reserving 6 tablespoons.
- In large bowl mix together sugar and flour. Add the cheese and pineapple chunks. Stir until blended. Pour into prepared casserole dish.
- In medium frypan melt butter; add cracker crumbs and reserved juice. Stir until blended.
- Spread crumbs over top of casserole dish. Bake 25-30 minutes or until golden brown.
- Let stand for 5 mintues. Enjoy!
