Categories     Soup

Time 30m

Number Of Ingredients 20

4 large dried shiitake mushrooms
1/4 cup wood ear mushrooms
1/2 cup dried day lilies
1/4 lb lean pork (finely julienned)
1 teaspoon fresh ginger (finely minced)
1 teaspoon soy sauce
5 cups quality chicken broth
1 cup reserved mushroom soaking liquid
3 tablespoons soy sauce
1 teaspoon sugar
1 teaspoon ground white pepper
4-5 tablespoons black vinegar according to desired sourness
1/2 cup bamboo shoots
1 tablespoon cornstarch mixed in 1/4 cup water
1 cup tofu (cut into 1/4 inch cubes)
2 eggs (lightly beaten)
2 teaspoons sesame oil
2 teaspoons chili oil
1 teaspoon hot sauce ((optional, for additional heat))
2 tablespoons chopped green onions

Steps:

  • Place the shiitake and wood ear mushrooms in a glass bowl and pour boiling water over them. Soak for 20 minutes. Reserve 1 cup of the mushroom liquid, discard the rest. Squeeze the liquid from the mushrooms. Slice the shiitakes and chop the wood ear mushrooms.
  • While the mushrooms are soaking, quickly rinse the dried day lilies and soak them in hot water for 20 minutes. Discard the liquid, squeezing any excess from the lilies, cut the hard tips off the bottoms, slice the lilies lengthwise and chop into 1 inch lengths.
  • While the mushrooms and day lilies are soaking, place the pork in a small bowl and combine it with the ginger and teaspoon soy sauce. Set aside while you're preparing the other ingredients.
  • Bring the chicken broth and the reserved cup of mushroom liquid to a boil in a stock pot. Add the soy sauce, vinegar, sugar, chile oil, hot sauce (adding more according to desired level of heat), and pepper.
  • Add the pork, stirring to prevent the pork from sticking together, the bamboo shoots, and mushrooms. Simmer for 2 minutes.
  • Add the day lilies and the cornstarch mixture. Return to a boil and simmer for another minute until slightly thickened. Add the tofu and simmer for another minute.
  • Pour the egg mixture in a steady stream into the simmering soup, remove from heat, and let sit for 20 seconds to let set in fine strands. Stir gently.
  • Add the sesame oil and green onions.

MEXICAN HOT AND SOUR SOUP

Categories     Vegetable

Time 32m

Yield 6 serving(s)

Number Of Ingredients 17

1 teaspoon vegetable oil
3 smoke dried jalapeno peppers or 1 -2 tablespoon chipotle chile in adobo
2 cups bread, dry torn up
3 garlic cloves, peeled
1/3 cup red wine, vingear
1 lb fresh tomatillo, husked
1 quart vegetable stock
14 1/2 ounces hominy
1 medium vine-ripe tomatoes, seeded chopped
1/2 lb green beans, 1/2 pieces
2 medium carrots, coarsely chopped
1/3 cup shredded muenster cheese
1 small ripe avocado, cubed
3 small corn tortillas, see note
chopped fresh marjoram
chopped fresh cilantro
lime wedge

Steps:

  • Toast the tortillas and cut into strips. If using chipotles make sure they are seeded and stemmed. Tear up the dried bread so it will fit easier into processor. Use canned hominy and drain it. The smoke dried jalapenos are Chipotles. I have NO clue why the zaar computer won't take it.
  • In saute pan with oil, lightly toast the chilies over med heat until aromatic and slightly softened about 2 minutes. In food processor fitted with metal blade finely grind them.
  • Add the bread, garlic and vinegar and puree to thick paste.
  • In separate saucepan, cover tomatillos with water and simmer until softened and tender about 8 minutes. Drain and add to chili mix then puree until smooth.
  • Transfer to saucepan and dilute with stock. Stir to blend. Add the hominy, tomatoes, green beans, and carrots. Simmer for 15 to 20 minutes.
  • To serve put a little of the cheese in each bowl, pour hot soup on top and garnish with the avocado, tortilla strips and herbs.
  • Serve lime wedges on side.

P.F. CHANG'S HOT AND SOUR SOUP

P.f. Chang's Hot and Sour Soup image

This recipe in no way should be credited to me. I found it off the internet years ago, and noticed this exact recipe wasn't on RecipeZaar yet... so here it is. =) This is the closest tasting recipe I've found to the Hot and Sour Soup that is served at P.F. Chang's. If you love that restaurant as much as I do, give this a shot. You won't be disappointed! (This approximately yields the "bowl" size from the restaurant.)

Time 25m

Yield 6 cups, 4-6 serving(s)

Number Of Ingredients 11

6 ounces chicken breasts, cut into thin strips
1 quart chicken stock
1 cup soy sauce
1 teaspoon white pepper
6 ounces bamboo shoots, cut into strips (canned is perfect)
6 ounces wood ear mushrooms, cut into strips (or canned straw mushrooms, if woodear can't be found)
1/2 cup cornstarch
1/2 cup water
2 eggs, beaten
4 ounces white vinegar
6 ounces silken tofu, cut into strips

Steps:

  • Cook chicken strips till done. Set aside.
  • Bring stock to boil. Add soy sauce, white pepper, bamboo, mushrooms and chicken. Stir. Let cook for 3 minutes.
  • While cooking, in separate bowl combine cornstarch and water to make slurry. Add slurry a little at a time and stir until thick (all slurry may not be necessary, so add as much as necessary for desired thickness - I used about 3/4 of slurry).
  • Add eggs while stirring and cook for 30 seconds or until eggs are done.
  • Turn off heat. Add vinegar and tofu, give it a quick stir. Spoon into bowls and enjoy!

RAMEN HOT AND SOUR SOUP

Ramen Hot and Sour Soup image

I am a hot and sour soup SNOB, for sure! I could eat it every day, but since I live 47 miles from the closest Chinese restaurant, and I'm on a budget as far as buying ingredients...I dreamed this up, and trust me, it is yummy. Not the real thing for sure, but it satisfies my cravings. I use Maruchan Ramen in either the oriental or shrimp flavor. You can use any brand rice vinegar, seasoned or unseasoned, and for the heat, I use only Sriracha HOT Chili Sauce. (or as we call it, rooster sauce, because of the picture of the rooster on the bottle.)

Time 15m

Yield 1 serving(s)

Number Of Ingredients 8

1 (3 ounce) package ramen noodles
2 cups water
1/8 cup mushroom, thinly sliced
1 tablespoon rice vinegar
1/8 teaspoon chili sauce
1 egg, beaten
1/8 cup meat, cooked, sliced thinly. (optional)
1 green onion, light and dark green parts, sliced thin

Steps:

  • Put 2 cups of warm water in saucepan. Add Ramen Noodles and Mushrooms. Bring to boil.
  • Add Rice Vinegar and Chili Sauce, cook till noodles are tender, about 5-7 minutes. Turn heat down to medium.
  • Add the sliced meat if desired. You can use beef, pork, or uncooked small shrimp.
  • Very slowly drizzle in the beaten egg so that it kinda forms a solid mass on top of the soup. Once the egg is kinda solid, stir the soup, incorporating the egg.
  • Pour into bowl and sprinkle sliced onion on top.
  • ******Note, Adjust the Vinegar and the Chili Sauce according to your taste.

So, I made my own and I must say it is on par with what you'll find when dining out. Regular or hot chili sauce can be used, according to taste. -Vera Leitow, Mancelona, Michigan
