Recently had homemade rice milk in a Mexican restaurant in San Francisco. I talked to a few friends and they told me a few different ways to make it. Here is a simple version (I like to add vanilla, but it is optional). Seriously, it is the best ever - and, it costs just pennies to make!

1 cup long grain rice, rinsed
2 quarts water
1 cinnamon stick, broken into pieces
1 teaspoon vanilla
½ cup white sugar

Steps:

  • In a large saucepan, combine rice, water and cinnamon stick. Set aside for 3 hours.
  • After 3 hours, bring to a boil, reduce heat, and simmer for 30 minutes. Allow to cool.
  • Puree rice mixture in a blender until smooth. Strain through cheesecloth or a fine sieve. Flavor with vanilla and sugar to taste. Chill, and serve over ice.

Horchata (cinnamon rice milk) has been a favorite addition to the many Mexican meals I've had in the Bay Area. It's lightly sweet and refreshing. This is a much easier recipe than the traditional method which requires up to 3 hours to make.

1 cup water
½ cup white sugar
¼ teaspoon ground cinnamon
2 quarts rice milk

Steps:

  • Heat water, sugar, and cinnamon in a saucepan over medium heat. Simmer until sugar is dissolved, whisking occasionally, about 5 minutes. Allow mixture to cool for 10 minutes.
  • Pour rice milk into a large pitcher.
  • Stir sugar water into rice milk. Serve chilled or over ice.

Horchata is a sweet and milky Mexican beverage.

10 cups cold water, divided
2 cinnamon sticks
2 cups uncooked white rice
1 cup almonds
1 (14 ounce) can sweetened condensed milk
6 cups ice

Steps:

  • Bring 4 cups water to a boil. Add cinnamon sticks and let steep for 10 minutes.
  • Combine rice and almonds in a blender; blend to the consistency of sand. Transfer to a bowl and mix in cinnamon water. Cover and let sit for 6 hours.
  • Strain mixture through a fine-mesh sieve twice. Save cinnamon sticks but discard almond and rice solids. Add 6 cups cold water, sweetened condensed milk, and cinnamon sticks. Serve over ice.

Cool and refreshing Mexican-inspired horchata iced coffee.

½ cup uncooked white rice
1 (3 inch) cinnamon stick, broken into pieces
4 cups water
½ (14 ounce) can sweetened condensed milk
1 cup milk
½ teaspoon vanilla extract
½ cup ice cubes, or as needed
½ cup cold brew coffee, or as needed
1 packet artificial sweetener, or to taste

Steps:

  • Combine rice, cinnamon sticks, and water in a container and let sit for 2 hours.
  • Drain rice and cinnamon sticks, but save the water. Combine rice and cinnamon sticks in a food processor or powerful blender. Process or blend until mixture resembles coarse sand.
  • Place rice mixture back into soaking water and let sit for 2 hours, stirring occasionally.
  • Strain rice mixture through a fine sieve into a container. Add sweetened condensed milk, milk, and vanilla extract. Stir until well combined and refrigerate horchata until ready to use.
  • Fill a tall glass with ice cubes and pour equal amounts of cold coffee and horchata into the glass. Add sweetener to taste.
