I received this recipe from a friend of mine and have used this for years. My family requests this one often. It's a light meal that everyone will enjoy. Serve with steamed rice.

¼ cup honey
2 tablespoons soy sauce
⅛ teaspoon red pepper flakes
1 ½ tablespoons olive oil
2 skinless, boneless chicken breast halves, cut into bite-size pieces

Steps:

  • Whisk honey, soy sauce, and red pepper flakes in a bowl.
  • Heat olive oil in a skillet over medium heat; cook and stir chicken in hot oil until lightly brown, about 5 minutes. Pour honey mixture into skillet and continue to cook and stir until chicken is no longer pink in the center and sauce is thickened, about 5 minutes more.

An easy and delicious twist to classic roast chicken

2 chicken breasts
half a lemon
1 tbsp honey
1 tbsp dark soy sauce

Steps:

  • Put 2 chicken breasts, skin side up in a small baking dish and season.
  • Squeeze the lemon into a bowl and stir in the honey and soy sauce. Spoon the mixture over the chicken, then tuck the squeezed-out half of lemon between the pieces (this will moisten and add flavour to the chicken).
  • Roast the chicken breasts in a baking dish, uncovered, for 30-35 minutes in a preheated oven (190C/gas 5/fan oven 170C). Cook until done and richly glazed, basting with the juices at least twice. To check if they are done, prod the chicken with your finger - if it's still a bit soft, give it a bit longer.
  • Serve with salad and potatoes roasted with herbs and garlic.

2 tablespoons butter, melted
2 tablespoons honey, warmed
1 tablespoon Dijon mustard
1/2 to 3/4 teaspoon curry powder
1 to 1-1/4 pounds meaty bone-in chicken pieces

Steps:

  • In a bowl, combine the butter, honey, mustard and curry; set aside. Place chicken skin side down in a greased 8-in. square baking dish; brush with sauce. Turn chicken skin side up; brush with sauce., Bake, uncovered, at 375° for 35-40 minutes or until chicken juices run clear, basting often.

This is a very simply recipe that requires very little effort. I found it in Better Homes and Gardens.

8 chicken drumsticks or 8 chicken thighs (about 2 pounds total)
1/4 cup finely chopped green onion
1/4 cup honey
1/4 teaspoon garlic powder
1 dash ground red pepper

Steps:

  • Arrange chicken pieces in a 15x10x1-inch baking pan making sure pieces do not touch.
  • Bake in a 400 degree F oven for 30 minutes.
  • Meanwhile, combine green onion, honey, garlic powder, and ground red pepper.
  • Brush chicken pieces with honey mixture.
  • Return to oven.
  • Bake for 15 to 20 minutes more or until golden brown and chicken is no longer pink.
  • Makes 4 servings.

Add the honey, water, vinegar and soy sauce. Increase heat to medium-high and continue to cook until the sauce reduces down and thicken slightly (about 3-4 minutes).
