½ cup water
¼ cup fresh lemon juice
½ teaspoon grated lemon zest

Steps:

  • In a small saucepan, combine the honey, water, lemon juice and lemon zest. Cook over medium heat stirring occasionally until boiling. Continue to boil until the mixture is reduced by a fourth. Pour warm syrup over cake and allow to sit for a few minutes before serving.

We developed this Honey Simple Syrup recipe for our Bourbon and Hard Pear Cider Cocktail, but it also works wonders for sweet tea. The difference between this recipe and a classic simple syrup is simple-we just swapped honey for sugar. The 1:1 ratio remains the same and you'll find this recipe just as easy as the original. Just add both of the ingredients to a small saucepan and heat until the honey dissolves. You'll have to allow enough time to let the combination cool completely. Simple syrups of all varieties are such a great way to upgrade your cocktails or nonalcoholic beverages.
