ONE-BOWL HONEY SESAME ENERGY BITES
Simple and delicious, One-Bowl Honey Sesame Energy Bites are easy to make and are perfect as a snack, in lunch boxes, or as an afternoon or after-dinner treat.

Steps:
- In a large bowl, whisk together the coconut oil, tahini, honey, and vanilla extract until smooth.
- Add the salt and oat flour, stirring until well combined.
- Using a cookie scoop or 1 tablespoon measure, scoop the mixture into your hands and roll gently into a balls. If the dough is too sticky to roll, place in the fridge for 5-10 minutes to harden a bit. Then wet your hands with water in between rolling to keep the dough from sticking.
- Pour the sesame seeds onto a large plate. Roll each ball in the sesame seeds until well coated.
- Refrigerate for at least 30 minutes, then serve or store.
GREEK SESAME HONEY CANDY (PASTELI)
Steps:
- Gather the ingredients.
- Bring the honey and lemon peel (if using) to a boil in a saucepan. Add the sesame seeds, stirring continuously. Continue to cook while stirring to mix completely and thoroughly.
- When the seeds are fully mixed in and the mixture has boiled again, remove the pan from the heat. Remove the lemon peel and discard it.
- Place a piece of baking parchment on a cool work surface and spread out the hot mixture thinly and evenly (about 1/4-inch deep).
- Cool the pasteli to room temperature before refrigerating it on the parchment paper (it doesn't need to be covered). Chill for at least 2 to 3 hours.
- Using kitchen shears , cut the pasteli together with parchment paper into small pieces, and serve.
- Peel off the parchment paper to eat. Store in the refrigerator in an airtight container. You can enjoy pasteli as a natural energy bar. Sesame seeds are high in protein, but also contain healthy oils and antioxidants. If you've become dependent on store-bought energy bars, these will have no additives, and you can ensure they are gluten free if that is a concern. One variation you might try is adding some crushed nuts to the mixture, such as pistachios. Or lightly toast some of the sesame seeds to add a roasted flavor.

HONEY & SESAME BITES
This is high in fibre. I found the recipe in a Supermarket magazine and posted it here for future use and safekeeping. Update: Sharon123 kindly chose to make these for the Photo Swap, but she had problems with them falling apart (see her review). I have since tried them myself and increased the amount of butter (the original called for 3 1/2 oz), which seems to have solved the problem. Make sure you let them cool completely before trying to lift them out of the pan or pick them up. They will set and stick once cold. I actually made mine in a 9inch springform, which gave me the advantage that I could get right at them after taking the outer ring of.

Steps:
- Preheat oven to 180°C/350°F/Gas 4.
- Grease a shallow square 8inch cake tin and line with baking paper.
- In a small pan, melt the butter, honey and sugar together, over low heat, until sugar is dissolved.
- Remove from heat and add the other ingreadients, mix together.
- Pour into cake tin and level the top with the back of a metal spoon.
- Bake for 30 minutes.
- Remove from oven and cut into squares whilst still warm.
- Remove from tin once completely cooled, this is important, if you lift them before they are completly cooled they will crumble.

CHILLI AND HONEY SAUSAGE BITES
A favourite in our house either at parties or just because we fancy a 'picky food' evening meal - very easy to adapt to your personal preference for heat and flavour by substituting hot sauce for sweet chilli, or a chutney or relish in lieu of honey for a fruity edge. You could even use speciality sausages but I use just 'bulk' frozen from the supermarket. Quantity makes enough for 4-6 pieces for 6 people

Steps:
- Grill/broil the sausages until cooked. Once cooked, cut each sausage into 3 - 5 pieces, depending on sausage size and how delicate you want your 'bites' to be!
- Put the honey and chilli sauce in a pan and warm on a low heat. When it starts to lightly bubble, add the sausage pieces and toss in the sauce for a few minutes. Do not overheat or cook for a long time or the honey-chilli mix will turn to brittle toffee and you'll have burnt toffee-sausages when they cool.
- Toast the sesame seeds in a dry pan on a low heat for a couple of minutes, tossing regularly. Tip the sausages into a serving bowl and sprinkle the seeds over the top. Serve slightly warm for best flavour.

- In a small bowl, mix sauce ingredients. Refrigerate until serving., In a shallow bowl, mix bread crumbs, sesame seeds and parsley. In a separate shallow bowl, mix mayonnaise and seasonings. Dip chicken in mayonnaise mixture, then in crumb mixture, patting to help coating adhere to all sides., In a large cast-iron or other heavy skillet, heat 2 tablespoons oil over medium-high heat. Add chicken in batches; cook until chicken is no longer pink, turning occasionally and adding additional oil as needed. Serve with sauce.
