LOUKOUMADES (HONEY PUFFS)
A slightly different way to make Honey Puffs. No yeast required. I'm posting this for ZWT 6. Greece

Steps:
- In a large mixing bowl combine milk, flour and brandy.
- Beat until batter is thick and bubbly.
- Fill a large heavy pan with oil to a depth of at least 2". If possible it is better to use an electric deep fryer or electric fry pan because of the constant controlled temperature.
- Heat the oil to 375-400*. Work in a well ventilated room.
- Drop batter from teaspoon or tablespoon into hot oil.
- Dip spoon in cup of cold water each time before dipping in batter so batter will not stick to spoon.
- Fry 4-5 loukoumades at a time turning often until puffed and golden on all sides. The frying process usually takes 2-4 minutes.
- Remove from oil and drain in colander or in bowl lined with paper towels.
- Heat honey and 2 Tblsp. of water in a saucepan.
- To serve, arrange hot Loukoumades on a platter and pour hot honey over each one. Sprinkle with cinnamon. If desired, sprinkle with chopped walnuts.Serve hot and immediately.
- Left over cooked dry Loukoumades may be wrapped in plastic or aluminum foil and frozen. When ready to use, defrost completely, place uncovered on ungreased baking sheet and heat through in preheated moderate oven. Serve with honey, cinnamon and finely chopped walnuts as above.

LOUKOUMATHES: HONEY PUFFS
This recipe uses milk and a hefty helping of baking powder to create these small light fried balls of dough that are drizzled with honey and sprinkled with nuts. These are loved by all Greeks and are a traditional Greek Jewish sweet at Hanukkah.

Steps:
- Sift the flour with the baking powder into a bowl.
- Add sugar, oil (or butter or margarine), milk, and the egg, and mix with a wooden spoon until smooth.
- Heat 1-2 inches of oil in a saucepan or deep frying pan to just below the smoke point (medium to medium-high on most stoves).
- When the oil is hot, drop the batter by the small teaspoonful into the oil and fry until golden on all sides.
- Drain on paper toweling.
- Get enough dough on your spoon to equal the size of a unshelled almond.
- Keep a small bowl of cold water next to the workspace and dip finger before pushing batter into the oil (to keep batter from sticking).
- Place on serving platter and drizzle with honey.
- Dust with walnuts and cinnamon, and serve.

- Combine cream cheese, flour, milk, eggs, honey, vanilla, salt, and baking powder in a blender and process on high for 3-4 minutes or until well blended.
- Heat the butter in a 10-inch baking pan at 375 degrees until melted. Swirl to coat pan.
- Pour the cream cheese mixture into the prepared pan. Bake at 375 degrees for 25-30 minutes or until a knife inserted in the middle comes out clean. (the puff will rise and fall like a souffle).
- Sprinkle baked puff with powdered sugar.

I got this recipe from a dear friend many years ago. She served it to my husband and me for a brunch at her home one Sunday. She is since deceased, so this recipe is for Shelly.

Steps:
- Heat oven to 400°F.
- Place first eight ingredients in blender; let stand while preparing skillet.
- Grease 10-inch ovenproof skillet with butter; heat in oven just until butter sizzles, about two minutes.
- While skillet is heating, blend ingredients at high speed for one minute.
- Scrape down sides of blender, then blend again for one minute.
- Remove skillet from oven and pour in the batter.
- Bake for 20 - 25 minutes, until puffed and dark golden brown.
- Sprinkle with powdered sugar or pour on syrup and serve with fresh fruit.

HANUKKAH HONEY PUFFS
I just used that recipe title because that's what it's called in the "Simply Savings" PathMark book where I found it! Personally, I think it could work just as well for Rosh Hashana, given the honey. The prep + cooking time doesn't seem to take the rise time into account, but I'm transcribing it as written.

- For the batter, mix together the yeast, 1/2 c of warm water, and the sugar. Let mixture rest for 5 minutes or until it is foamy. Stir in the remaining batter ingredients, including water, until smooth. Cover the bowl loosely with plastic wrap and let batter rise for 1 hour.
- While the batter rises prepare the honey syrup. Mix all ingredients together in a large saucepan and slowly bring to a boil over medium-high heat, stirring only until the sugar dissolves. Lower the heat and boil the syrup for 5 minutes. Remove from the heat and set aside to cool.
- When the batter has risen, stir it down. Heat oil, about 1 1/2 inches deep, in a large pan until it is very hot, about 375 degrees. Dip a teaspoon into the oil, and then use the spoon to scoop up some batter and gently slide batter into the oil. The batter will quickly puff up to almost twice its original size. Continue making puffs but do not crowd the pan. Turn puffs with a slotted spoon until they are browned on all sides and very crisp.
- Drain them on paper towels or a wire rack, then drop them into the cooled syrup to coat. Let the excess syrup drain off. Sprinkle the puffs with cinnamon and serve immediately.

- To prepare this delicious Greek honey puffs recipe, start by dissolving the yeast in the water. Cover with plastic wrap and allow to rise for about 5 minutes, until it starts bubbling.
- In a separate bowl add the flour, corn starch and salt and blend to combine. Add the flour mixture in the yeast mixture and pour in the honey. Whisk all the ingredients together, until the batter is smooth. Cover the bowl with plastic wrap and let the dough rise for about 30 minutes.
- Into a medium sized frying pan pour enough vegetable oil to deep fry the loukoumades. Heat the oil to high heat until hot. Test if the oil is hot enough by dipping in some of the dough. If it sizzles the oil is ready or check its temperature. It should read 160C or 320F.
- Take a handful of the dough in your palm and squeeze it out, between your thumb and index finger, onto a tablespoon dipped in water. Then drop it in the oil and fry until golden. Repeat this procedure until the surface off the pan is comfortably filled. It is important to dip the spoon in a glass of water every time, so that the batter doesn’t stick on it. You want the spoon to be covered in water but not filled with it.

- Wait 5 minutes, then stir in remaining 1½ cups warm water along with the flour, salt, nutmeg and vanilla. Mix until dough is thick and smooth.
- Cover with plastic wrap and let rise in a warm place until almost doubled in size, about 1–1½ hours.
- Pour oil into a deep fryer, or saucepan making sure there is at least 2 inches between the oil surface and the top of the pot. Heat the oil.
- Working in batches, slide heaped tablespoon size dollops of the batter into the hot oil, making sure not to crowd the pan. The dough will puff up and float to the surface.
- Remove carefully with a slotted spoon and drain on paper towels. Place drained puffs on warm platter and keep warm.
- To serve, place 4 or 5 fried puffs into a bowl, drizzle honey over and dust generously with cinnamon and nut mix.
