To make a healthy gift that friends and family will devour this season, skip the fruitcake and go for granola instead. Once you've got the basic recipe down, try the tasty variations.

Number Of Ingredients 8

1/2 cup honey
1/2 cup maple syrup
2 tablespoons unsalted butter
1/4 cup brown sugar
4 cups rolled oats
1/2 shredded unsweetened coconut
1 teaspoon kosher salt
Vegetable oil

Steps:

  • Preheat the oven to 325 degrees. Combine honey, maple syrup, butter, and brown sugar in saucepan. Bring to a boil over medium heat; reduce to a simmer for 5 minutes, stirring often.
  • In a large bowl, mix oats, coconut, and salt. Pour the honey mixture over the oat mixture and stir. Lightly oil a rimmed baking sheet and spread granola evenly. Bake for 20 to 25 minutes, stirring occasionally, until golden brown. Remove from oven and cool before transferring to airtight glass containers.

This is my favorite granola recipe adapted from the joy of baking website. It's not too sweet, and tastes great with a variety of nuts and dried fruit. Makes a great gift!

Number Of Ingredients 9

3 cups old fashioned oats
1/2 cup shredded coconut (sweetened or unsweetened)
1 cup nuts, chopped (I like a mixture of almonds, pecans, cashews, and sunflower seeds)
1/2-1 teaspoon cinnamon (I use 1 teaspoon)
1/4 teaspoon salt
2 tablespoons vegetable oil
3 tablespoons honey
3 tablespoons maple syrup
1 cup dried fruit (I like a mixture of cranberries, raisins, chopped apples and apricots)

Steps:

  • Preheat oven to 300 degrees.
  • Line a baking sheet with parchment paper.
  • Combine rolled oats, coconut, nuts, cinnamon, and salt.
  • In a separate bowl stir together oil, maple syrup and honey.
  • Pour liquid mixture over the dry ingredients and stir together.
  • Spread onto the prepared baking sheet and bake for approx 20-25 minutes (stirring occasionally).
  • The longer you bake it the crunchier the granola will be. It may still be sticky when it comes out of the oven, but it will become crisp and dry as it cools.
  • Place baking sheet on a wire cooling rack.
  • Once cooled, mix in the dried fruit and store in an airtight container or plastic bag in the refrigerator.
  • It will keep for several weeks.

⅔ cup pure maple syrup
1 teaspoon maple flavoring
¼ teaspoon salt

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C).
  • Line a baking sheet with parchment paper.
  • Mix oats, pecans, walnuts, flax seed, and cinnamon in a large bowl.
  • Stir canola oil, maple syrup, maple flavoring, and salt together in a small bowl; pour over the oat mixture and stir to coat evenly.
  • Spread the resulting mixture evenly onto the prepared baking sheet.
  • Bake in the preheated oven until lightly browned, about 40 minutes.
  • Set granola aside to cool completely before breaking into chunks. Store in an air-tight container.

1 cup raw sunflower seeds
⅓ cup canola oil
½ cup honey
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • In a large bowl, stir oats, nuts and sunflower kernels together. In a separate bowl, mix together oil, honey, vanilla and cinnamon. Add to dry ingredients; mix well. Spread mixture onto two ungreased baking sheets.
  • Bake in preheated oven, for 10 minutes, remove from oven and stir. Return to oven and continue baking until golden, about 10 minutes. Remove from oven and let cool completely before storing.

3 cups old-fashioned rolled oats (such as Bob's Red Mill® Gluten-Free Oats)
½ cup unsweetened coconut flakes
¼ cup honey
1 tablespoon coconut oil, melted
1 teaspoon vanilla extract
¾ teaspoon ground cinnamon

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Spread oats and coconut flakes onto a rimmed baking sheet.
  • Bake in the preheated oven for 8 minutes; stir oats and coconut and rotate baking sheet. Continue baking until oats and coconut are toasted, about 8 more minutes.
  • Whisk honey, coconut oil, vanilla extract, and cinnamon together in a bowl until smooth. Add oat mixture to honey mixture and stir until evenly coated.
  • Line the baking sheet with a silicone liner or parchment paper. Spread oat mixture evenly onto baking sheet.
  • Bake in the oven until granola is toasted, 8 to 15 minutes. Stir granola and transfer liner and granola to a wire rack to cool completely.

  • In a small saucepan over medium-low heat combine the oil, honey, maple syrup,and salt. Cook until it just begins to come to a boil, then quickly remove from the heat. Pour this mixture over the oat mixture and toss to combine well. Pour out the mixture evenly on two parchment paper or foil-lined, rimmed baking sheets. Bake for 10 minutes then using a wooden spoon, carefully toss and stir the granola. Use the spoon to spread granola out into and even layer and continue to bake for an additional 10 to 15 minutes, or until light golden brown. Remove from oven and allow to cool.
