- In a bowl, whisk together the soy sauce, honey, rice vinegar, and garlic. Set aside.
- Season the chicken breasts with salt and pepper.
- Place the flour in a shallow dish.
- Dredge each chicken breast in the flour until fully coated.
- Heat the olive oil in a large skillet over medium-high heat.
- Once heated, add in the chicken breasts, cooking for 3-4 minutes per side until browned.
- Add in the sauce and let it sizzle for a minute.
- Turn the heat down to low, cover the pan, and let the chicken simmer for 10 minutes.
- In a small dish, mix the cornstarch and water into a slurry.
- Uncover the pan, add in the slurry, and stir until the sauce thickens.
- Serve the chicken topped with extra sauce from the pan and a sprinkle of chopped green onion and sesame seeds.

Steps:
- Cut chicken breasts in half lengthwise to make thinner cutlets. More sauce will coat more chicken this way.
- Grate 2 garlic cloves and mince the other one. More flavor this way.
- In a large bowl, add chicken, honey, soy sauce, lemon juice and garlic. Stir with tongs and let marinate while oven is preheating.
- Preheat oven to 450 degrees F and line large rimmed baking sheet with silicone baking mat or unbleached parchment paper.
- Arrange chicken in a single layer and bake for 20 minutes on the lowest rack, turning once.
- While chicken is baking, pour marinade into a small pot. Don't discard it - we will make delicious sauce. Place on a stove to bring to a boil.
- In a small bowl, whisk cold water with cornstarch. When marinade is boiling, add slurry to it and cook until sauce has thickened, about 3-4 minutes.
- Remove chicken from the oven and transfer onto a serving platter. Drizzle with sauce and sprinkle with green onion and sesame seeds.
- Serve honey garlic chicken with Instant Pot brown rice or Instant Pot quinoa or healthy broccoli salad.

- In medium bowl, whisk together honey, garlic, and vinegar.
- Pour bread crumbs into separate bowl.
- Set bowls aside.
- Spread oil over foil-lined baking pan large enough to hold all chicken pieces in one layer.
- Roll chicken pieces in honey mixture, then in bread crumbs; place in pan.
- Bake at 375°F for 30 minutes, or until cooked through.
- Optional: for a thicker crust, roll the breaded chicken pieces in egg or more honey and then again in the bread crumbs.

- Combine all the ingredients except the chicken in a Ziploc bag.
- Add the chicken breasts and let marinate in the refrigerator for a couple of hour or overnight.

- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- Place beaten egg in a shallow dish and season with salt and pepper. Place bread crumbs in another shallow dish.
- Dunk each piece of chicken in the beaten egg mixture, then coat well with bread crumbs. Transfer breaded chicken on the prepared baking sheet and repeat the process with remaining chicken.
