The natural sweetness of honey and figs are a wonderful combination with toasty walnuts in these muffins that are packed with healthy goodness!!

Number Of Ingredients 14

1 cup milk, divided
3/4 cup dried fig, chopped (or raisins)
1 1/4 cups all-purpose flour
1 cup whole wheat flour
1/4 cup ground flax seeds
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 egg
2/3 cup plain yogurt (non-fat free)
2/3 cup liquid honey
1/4 cup butter, melted
1 teaspoon pure vanilla extract
1/2 cup walnuts, toasted, chopped

Steps:

  • Preheat oven to 375°F Butter a 12-cup nonstick muffin pan or line with paper liners.
  • Heat 1/2 cup of the milk and figs for 1 - 2 minutes or until slightly warmed in a glass measuring cup in microwave on Medium power (50%) or in saucepan over medium heat on stove-top. Set aside.
  • In a large bowl, combine flours, flax seeds, baking powder, baking soda, and salt. In another bowl, whisk together remaining milk, egg, yogurt, honey butter and vanilla, until well blended; stir in fig mixture. Pour over dry ingredients and sprinkle with walnuts; stir just until moistened.
  • Spoon into prepared muffin pan. Bake about 25 minutes or until tops are firm to the touch or tester inserted in the middle comes out clean.
  • Let cool in pan for 5 minutes. Transfer to rack to cool completely.

1 cup all-purpose flour
½ cup old-fashioned oats
½ cup flaxseed meal
¼ cup white sugar
2 teaspoons baking powder
½ teaspoon salt
1 cup plain yogurt
½ cup orange juice
⅓ cup honey
2 eggs, slightly beaten
2 teaspoons grated orange zest
1 teaspoon vanilla extract
½ cup chopped walnuts
½ cup granola

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine flour, oats, flaxseed meal, sugar, baking powder, and salt in a large bowl.
  • Combine yogurt, orange juice, honey, eggs, orange zest, and vanilla extract in a smaller bowl. Whisk well.
  • Make a well in the center of the dry ingredients and pour in honey mixture. Stir just until combined. Fold in walnuts.
  • Spoon batter into the prepared muffin cups, filling each 3/4 full. Sprinkle each muffin with granola.
  • Bake in the preheated oven until centers spring back when touched, about 20 minutes.

1 tablespoon honey, plus more for drizzling
8 ounces fresh figs, halved
2 cups plain low-fat Greek yogurt
Pinch ground cinnamon
1/4 cup chopped pistachios

Steps:

  • Heat honey in a medium skillet over medium heat. Cook figs, cut sides down, until caramelized, about 5 minutes.
  • Serve over yogurt with cinnamon and pistachios. Drizzle with honey, if desired.

  • In a small saucepan over medium heat, add 7 ounces of chopped figs, honey, orange juice and salt to the pan. Let the figs cook down and become syrupy for about 8 minutes. Take off the heat, grate in the lemon zest, and set aside.
  • In a large bowl, whisk together the flour cornmeal, sugar, baking powder, baking soda and salt. In a medium bowl, whisk the eggs until well combined then stir in the buttermilk, milk, honey, and molasses. Pour half of the wet mixture in with the dry ingredients and whisk until smooth. Add the rest of the wet ingredients to the dry and continue to mix until smooth again. Gently fold in the warm figs and their syrup, just enough so that batter leaves a light swirling trail of fig syrup.
  • Pour the batter into the prepared baking cups. Bake for 20-25 minutes until the cornbread has risen and the centers are slightly firm but still soft to the touch. Let cool on a wire rack. Once muffins are cool run a knife around the edges of the pan to release them. To serve, garnish each muffin with a few quarters of the remaining fresh figs. The muffins are best served warm with a drizzling of honey.
