Honey Butter is so easy to whip up and it is such a treat for breakfast and the holidays! We add a touch of cinnamon for a whipped cinnamon honey butter.

1/2 cup unsalted butter ((8 Tbsp), room temperature)
1/4 cup honey (or to taste)
1/2 tsp vanilla extract
1/4 tsp cinnamon (optional)

Steps:

  • Start by whipping the butter in a medium bowl with an electric hand mixer for 3 minutes until it's fluffy.
  • Add honey, vanilla extract and cinnamon (if using) and beat another minute until incorporated.

I was first introduced to Recipe #346922 earlier this year, and have enjoyed it very much. So....why not have a lemon version. This is wonderful spread on toast or bagels. And if that wasn't good enough.....try some on steamed vegetables. :) Serving size will vary depending on how you use it.

Honey-Citrus Butter image

This is quite a bit different from other honey orange butter recipes here; it calls for the juice to be cooked down into a syrup. Adapted from Sam Choy's Polynesian Kitchen. My preference is to use salted butter for more even salt distribution. Prep time is time to prepare the orange syrup; cook time includes chill time.

1 cup fresh orange juice
4 tablespoons honey
1/2 cup unsalted butter, at room temperature
1 teaspoon orange rind, minced
salt

Steps:

  • Bring the orange juice to a boil in a small saucepan over high heat.
  • Cook until it is reduced and has the consistency of honey.
  • Set aside to cool.
  • Place in a food processor.
  • Add all other ingredients and process until smooth.
  • Place a sheet of parchment paper or wax paper on a work surface.
  • Pour the butter onto the long side of the sheet.
  • Form the butter into a roll or log about 1" in diameter, leaving a 1" border of paper.
  • Roll up and refrigerate for at least 3 hours before using.

  • While beating the mixture, slowly add the egg yolks and eggs. Then, add the zest and lemon juice to the bowl and blend again. It will look curdled at this point, but don’t worry!
  • Pour the mixture into a medium-sized, non-reactive saucepan (stainless steel or enameled cast iron should work great). Cook over medium-low heat while stirring constantly with a rubber spatula or wooden spoon (it’s important to stir constantly throughout the cooking process, which will take somewhere between 10 to 20 minutes).
  • Once the mixture starts looking smooth and shiny, slowly increase the heat to medium. Continue cooking until the mixture has thickened and your spoon meets resistance as you stir, which happens right at the brink of boiling. Once the mixture is trying to boil, cook for about 15 more seconds while stirring constantly, then remove from heat. The curd will thicken up more as it cools.
