1 lb boneless skinless chicken breast
2 tablespoons Dijon mustard
3/4 cup hidden valley honey bacon French dressing
2 tablespoons orange marmalade
2 cups hot cooked rice
sliced green onion (for garnish)

Steps:

  • Cut chicken in thin strips; blot dry.
  • Coat chicken with mustard; let stand 10 minutes.
  • In a nonstick skillet over medium heat, sauté chicken in 1 tablespoon of the dressing, stirring frequently, about 7 minutes or until no longer pink in center and juices run clear.
  • Meanwhile, combine remaining dressing with marmalade.
  • Stir dressing mixture into pan and heat gently until marmalade is melted.
  • Serve over rice; garnish with green onions.

In a recent Cookbook Swap, I received some STELLAR cookbooks from Chef #22015. This recipe is from one of them. "Cheap. Fast. Good!" by Beverly Mills and Alicia Ross. What a wonderful book! This recipe is now one of my favourites. The chicken is perfectly spiced, in my opinion. I love the ease of preparation! You may need to increase the spice mixture though (if you like it thick like I do!). I made up a batch of the spices and when it was gone, I simply made up another half recipe of it. Worked out perfectly with no waste!

1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon ground cumin
1/2 teaspoon salt (optional)
1/4 teaspoon ground allspice (optional)
4 (6 ounce) boneless skinless chicken breast halves (defrosted if frozen)
vegetable oil, for frying (about 1 tbsp)

Steps:

  • Place the chili powder, garlic powder, onion powder, cumin, salt (if using) and allspice (if using) in a gallon-size zipper-top bag and seal the bag. Shake the bag to combine the spices thoroughly. (NOTE: I usually omit the onion powder and put in about a 1/2 tsp lemon pepper. I like that the best!).
  • Place the chicken breast halves, one at a time, between two sheets of waxed paper or plastic wrap and pound them with several whacks of a meat mallet or rolling pin so that they are an even 1/2 inch thick. Peel off the paper. (Each serving should be about 6 ounces, so if the breast halves are large, cut them in half lengthwise.).
  • Place the chicken pieces in the bag with the spices, seal it, and shake until the chicken is coated with the spice mixture. Set the bag aside.
  • Heat the oil in an extra-deep 12 inch skillet over medium heat. Add the chicken pieces and cook until lightly browned on the first side, 4 to 5 minutes. Turn the chicken and cook until no longer pink in the center, another 4 to 5 minutes.
  • Transfer the chicken to a platter and serve.
  • A salad would be great alongside. My family's favourite is Deep Browned Potatoes (Recipe #47957) and corn.

2 cups broccoli florets
1/2 cup finely shredded cheddar cheese
1/2 cup ranch dressing
4 miniature bagels, cut in half or 4 whole wheat pita breads

Steps:

  • Heat oven to 400°F.
  • Cut broccoli into tiny floret buds, 1/4-inch long or smaller, trimming away stems.
  • Stir together broccoli, cheese and dressing. Spread about 1/2 cup mixture on each bagel or inside each pita.*
  • Place on baking sheet and bake for 5 minutes or until cheese mixture is melted. Remove from oven and cool slightly. Cut pita into wedges, if desired.

6 -8 slices of uncooked bacon

Steps:

  • Set Oven to 400 degrees.
  • Mix brown sugar and chilli powder together in a bowl.
  • Coat your bacon with the mixture. Making sure both sides or pretty much evenly coated.
  • Put your bacon in a pan and bake at 400 degrees for 20 minutes. Your bacon will come out crispy and sweet.

  • Brown chicken: Heat oil in a wide skillet over medium-high. Add chicken breasts and sear/brown well on each side (it doesn’t have to be cooked through yet, just nicely browned). Remove from skillet and cover on a plate.
  • Sauté aromatics: Bring pan back up to medium-high heat (do not drain or wipe! That’s delicious flavor in there!) and add bacon. Cook for a minute, then stir in onion and garlic. Sauté until softened, about 1 minute.
  • Deglaze pan: Pour chicken broth (OR white wine) into skillet and bring to a boil, scratching any browned bits off the bottom. Stir in both mustards and season with salt and pepper.
  • Cook chicken: Add rosemary sprigs and seared chicken to skillet with sauce and cover with a lid. Gently simmer for about 6-10 minutes (exact time depends on size of chicken breasts), turning chicken once halfway through. Once internal temperature of chicken registers 165°F (74°C) at thickest part, remove chicken to a clean serving plate and cover.
