APPLE CRISP WITH OAT TOPPING
This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Optional accompaniments would be caramel sauce, ice cream, and whipped cream.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Toss apples with white sugar and 1/2 teaspoon cinnamon in a medium bowl to coat; pour into a 9-inch square baking dish.
- Mix brown sugar, oats, flour, and 1 teaspoon cinnamon in a separate bowl. Use a pastry cutter or 2 forks to mash cold butter into the oats mixture until the mixture resembles coarse crumbs; spread over the apples to the edges of the baking dish. Pat the topping gently until even.
- Bake in preheated oven until golden brown and sides are bubbling, about 40 minutes.

Steps:
- Preheat oven to 375 degrees F. Lightly grease two 1- to 1 1/2 cup oven proof bowls or ramikins and set them aside.
- Make the filling:peel apples & cut them in half. Remove the cores. Thinly slice the apples & place them in a mixing bowl. Add lemon juice ^ toss to mix.
- Melt the butter in med. skillet over med. heat. Using a whisk, stir in the honey,flour, cinnamon, and salt, whisking until smooth. Add the apples & cook mixture over med. heat, turning the apples gently until they are just tened, 5 minute.
- Remove from heat & spoon mixture into prepared dishes, dividing evenly.
- Make the topping: Place flour & sugar in a small bowl ^ whisk to blend well. Add butter pieces & toss to coat the butter with the flour mixture. Rub the mixture with your fingertips until crumbly. Mix in oats & nuts. Sprinkle the mixture evenly over the filling. Bake until topping is golden brown and the filling is hot, 20 minute
- Remove dishes from oven & let cool on a wire rack for 15 minute Serve crisp warm or at room temperature, with your chioce of ice cream or topping.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square pan.
- In a large bowl, combine brown sugar, oats, flour and butter. Mix until crumbly. Place half of crumb mixture in pan. Spread the apples evenly over crumb mixture. Sprinkle with sugar and cinnamon and top with remaining crumb mixture.
- Bake in the preheated oven for 40 to 45 minutes, or until golden brown.

My husband and I decided to make a lifestyle change which included eliminating sugar, white flour, processed foods etc., from our diet. I created this delicious and simple recipe to satisfy an occasional sweet tooth, also this dessert is ideal to serve to children as it is only sweetened with honey. If using organic apples you may choose to leave the peels on, also depending on the sweetness of the apples you use you may choose to decrease the amount of honey. To make a virtually fat free version, you can also eliminate the butter in the topping, I have tried this both ways and find that it turns out almost the same. I hope you enjoy!

- Peel, core, and chop apples into small bit size pieces and place in mixing bowl.
- Add lemon juice, cinnamon, and honey and stir until apples are well coated.
