This recipe makes five moist meat loaves that are great for large gatherings.-Allison Craig, Ormstown, Quebec

Yield 5 meat loaves (12 servings each).

Number Of Ingredients 9

6 eggs, lightly beaten
4 cups 2% milk
4 cups dry bread crumbs
2-1/2 cups shredded carrots
1-1/4 cups chopped onions
5 teaspoons salt
4 teaspoons pepper
10 pounds ground beef
5 pounds ground pork

Steps:

  • In two very large bowls, combine the first seven ingredients. Crumble meat over the top and mix well. , Shape into five loaves; place each in an ungreased 13-in. x 9-in. baking pan. Bake, uncovered, at 350° for 75-85 minutes or until no pink remains and a thermometer reads 160°. Drain.

I got this recipe out of the Fannie Farmer Boston Cooking School cookbook. It is now my only meatloaf recipe and my family is constantly requesting it. I did change slightly and you can change the ketchup and water to just water or just milk. The Parmesan cheese can be omitted as well. If you prefer you can use any other type of ground beef. And the original recipe called for bacon placed on top.

Number Of Ingredients 8

1 egg, slightly beaten
2 teaspoons salt
1/2 cup ketchup
1/2 cup water
1 cup soft breadcrumbs (I use Italian seasoned crumbs)
2 tablespoons instant minced onion
1/2 cup parmesan cheese
2 lbs 90% lean ground beef

Steps:

  • Preheat oven to 350.
  • Mix all ingredients together using hands or potato masher.
  • If you prefer more seasoning you can add whatever you prefer.
  • Pat into a greased loaf pan.
  • Bake one hour at 350.

1 lb lean (at least 80%) ground beef
1/4 cup finely chopped onion
2 eggs, beaten
1 cup Progresso™ plain bread crumbs
1 teaspoon Italian seasoning
1/2 cup ketchup
1/2 cup milk
1/4 cup ketchup

Steps:

  • Heat oven to 350°F. In large bowl, mix Meatloaf ingredients well. Press mixture in ungreased 8x4-inch loaf pan. Bake 40 minutes.
  • Remove from oven. Spread 1/4 cup ketchup evenly over top. Bake an additional 15 to 20 minutes or until meat thermometer inserted in center of loaf reads 160°F. Let stand 10 minutes before serving.

My husband is a very picky eater who doesnt like ketchup, it was very difficult to come up with a meatloaf recipe that did not have ketchup but I finally came up with one that we both can agree on!

1 lb cooked ground beef
2 large eggs
1 cup plain breadcrumbs
1/4 cup parmesan cheese, grated
1/4 cup onion
1 tablespoon italian seasoning
14 ounces marinara sauce

Steps:

  • Heat oven to 350 degrees F.
  • In large bowl, mix all ingredients except marinara sauce.
  • Add 1 cup marinara sauce; mix well.
  • Press mixture into ungreased 8 X 4 inch loaf pan.
  • Bake at 350 F for 40 minutes.
  • Pour remaining marinara sauce over meatloaf.
  • Bake an additional 15 to 20 minutes or until meat is well browned and firm.
  • Let stand 10 minutes before serving.

1/2 cup ketchup
1 tablespoon cider vinegar
1 teaspoon ground cumin
1 dash Worcestershire sauce
1 dash hot pepper sauce
1 tablespoon honey
1 1/2 lbs ground chuck (85 percent lean)
3 slices bread, finely diced with a knife (about 1 cup)
1/2 small green bell pepper, finely chopped (or, about 1/3 cup)
1 small sweet onion, finely diced (or, about 1/2 cup)
1 garlic clove, finely minced
2 tablespoons molasses (or, brown sugar)
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/8 teaspoon celery salt
1/8 teaspoon dry mustard
1 extra-large egg, lightly beaten
1 tablespoon Worcestershire sauce
1/2 cup evaporated milk, divided (or, half-and-half or sweet milk)
1/3 cup fresh parsley, minced

Steps:

  • For the glaze, combine the ketchup, vinegar, cumin, Worcestershire sauce, hot pepper sauce and honey, set aside.
  • Place oven rack to middle position; heat oven to 350 degrees F.
  • Heat butter in 10-inch skillet over medium-high heat until foaming; add onion and bell pepper and cook, stirring occasionally, until softened, 4 to 5 minutes. Add garlic and cook, stirring, until fragrant, about 1 minute. Transfer mixture to small bowl, set aside to cool.
  • In a small bowl, whisk egg with molasses, salt, pepper, celery salt, mustard, Worcestershire sauce, 1/4 cup of the evaporated milk and 1/2 the glaze mixture, until combined. Gently break-up ground beef in a large bowl. Add bread crumbs, parsley and cooked onion, bell pepper and garlic. Pour egg mixture over meat mixture and mix gently with hands until thoroughly combined, about 1 minute. If mixture sticks to bowl, add additional evaporated milk, 1 tablespoon at a time, until mixture doesn't stick. Be careful not to overmix, and avoid squeezing the meat.
  • Transfer meat mixture onto the center of a shallow parchment paper-lined baking sheet or pan and form into a 9- by 5-inch loaf shape, avoiding air pockets. Smooth top and edges of meat loaf with moistened spatula. Bake at 350 degrees F until meatloaf is to medium doneness, an instant-read thermometer inserted into center of loaf reads 155-160 degrees F, about 55 to 65 minutes. Brush the remaining glaze onto the meatloaf after it has been cooking for about 10 minutes. Remove from oven, let stand 15 minutes. Transfer to a platter, and cut into thick slices.
