I love experimenting with recipes, and I came up with this one after a lot of experimenting with my favorite waffle recipe. These are more filling than your average waffles. I use aluminum-free baking powder. These are wonderful with homemade blueberry syrup.

2 eggs, beaten
1 ¾ cups skim milk
¼ cup canola oil
¼ cup unsweetened applesauce
1 teaspoon vanilla extract
1 cup whole wheat pastry flour
½ cup flax seed meal
¼ cup wheat germ
¼ cup all-purpose flour
4 teaspoons baking powder
1 tablespoon sugar
¼ teaspoon salt

Steps:

  • In a large bowl, whisk together the eggs, milk, oil, applesauce, and vanilla. Beat in whole wheat pastry flour, flax seed meal, wheat germ, all-purpose flour, baking powder, sugar, and salt until batter is smooth.
  • Preheat a waffle iron, and coat with cooking spray. Pour batter into waffle iron in batches, and cook until crisp and golden brown.

1 1/2 cups whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
1 large egg, beaten
1 1/2 cups warm milk
1/4 cup melted butter or 1/4 cup oil
1/4 teaspoon vanilla, optionally

Steps:

  • Wisk dry ingredients.
  • Add wet ingredients and mix until just combined. A few lumps are okay, don't over mix.
  • Preheat waffle iron, spray with nonstick cooking spray, and cook waffles according to directions. I have one with 4 square waffles, and I placed 1/3 cup of batter in each square and cooked for about 7 minutes or until the steam stops coming out and the waffles are a bit crispy.

1 large egg, separated
3/4 cup milk
1/3 cup canola oil
1/4 cup orange juice
1 cup whole wheat flour
1 tablespoon sugar
1 to 1-1/2 teaspoons grated orange zest
1 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • In a small bowl, beat the egg white until stiff peaks form; set aside. In another small bowl, beat egg yolk, milk, oil and orange juice. Combine flour, sugar, orange zest, baking powder and salt; stir into milk mixture. Fold in egg white. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown.

1/2 cup egg substitute
1-3/4 cups 1% milk
1/2 cup fat-free plain yogurt
1 tablespoon vanilla extract
1 cup all-purpose flour
1 cup whole wheat flour
Sugar substitute equivalent to 1/2 cup sugar
2 tablespoons sugar
4 teaspoons baking powder
1/4 teaspoon salt

Steps:

  • In a large bowl, beat egg substitute until frothy. Stir in the milk, yogurt and vanilla. Combine the flours, sugar substitute, sugar, baking powder and salt; stir into milk mixture just until combined. Bake in a preheated waffle iron according to manufacturer's directions until golden brown.
