CHOCOLATE MAPLE BARS

Number Of Ingredients 18

1/2 cup shortening
3/4 cup maple syrup
1/2 cup sugar
3 large eggs, room temperature
3 tablespoons 2% milk
1 teaspoon vanilla extract
1-1/4 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1-1/2 ounces unsweetened chocolate, melted
1/2 cup chopped pecans
1/2 cup sweetened shredded coconut
FROSTING:
1/4 cup butter, softened
1 cup confectioners' sugar
1/2 cup baking cocoa
1/2 cup maple syrup
1 cup miniature marshmallows

Steps:

  • In a large bowl, cream the shortening, syrup and sugar until light and fluffy, 5-7 minutes. Beat in the eggs, milk and vanilla. Combine the flour, baking powder and salt; add to creamed mixture and mix well. Remove half the batter to another bowl., Combine melted chocolate and pecans; stir into 1 bowl of batter. Spread into a greased 13x9-in. baking pan. Add coconut to remaining batter. Spread carefully over chocolate batter. , Bake at 350° until a toothpick inserted in the center comes out clean, about 25 minutes. Cool completely on a wire rack., For frosting, in a small bowl, beat butter until smooth. Gradually add the confectioners' sugar and cocoa. Gradually add syrup, beating until smooth. Fold in marshmallows. Frost bars.

My stepmom made these every Christmas, and they always went quickly. I've seen many recipes for Maple Bars that use biscuit dough rolled into bar shape. But these are made from a fresh soft dough and includes cinnamon (which you won't get using packaged biscuit dough). They're easy to make; the hardest part is probably waiting...

Number Of Ingredients 16

DOUGHNUTS
1 1/2 cups milk
1/3 cup shortening
4 Tbsp granulated sugar
2 tsp salt
2 tsp ground cinnamon
2 (1/4-oz) pkg active dry yeast
1/4 cup warm tap water
2 large eggs, beaten
4 1/2 cups all-purpose flour
MAPLE ICING
1/3 cup unsalted butter
1 cup brown sugar, packed
1/4 cup milk
1 cup confectioners' sugar
2 tsp maple extract

Steps:

  • 1. Lightly grease 15x10-inch jelly roll pan; set aside.
  • 2. In a medium saucepan, scald milk. Stir in the shortening, sugar, salt and cinnamon, stirring until smooth. Let cool to lukewarm.
  • 3. In a large bowl, dissolve both packages of yeast in the warm water. Add both eggs, and stir well. Stir the milk-cinnamon mixture into the yeast mixture.
  • 4. Gradually add the flour and stir with a wooden spoon until all the flour is incorporated. Knead dough on a flat surface, adding up to 1/4 cup more flour if needed to reach a smooth dough (it shouldn't be sticky). Let rise for 1 hour.
  • 5. Punch dough down. Then roll dough into a rectangle about 1/2 to 3/4 inch thick. Using a pizza cutter, cut the dough into 12 rectangles.
  • 6. Place cut rectangles on greased jelly roll pan, and set aside for about 30 minutes to rise.
  • 7. Preheat oven to 425°F.
  • 8. Place baking pan in oven, and bake for 7 to 8 minutes or until lightly browned.
  • 9. For Icing: In a saucepan, mix together the butter, brown sugar and milk. Bring to a soft boil, and then reduce heat to low and let simmer 3 minutes. Remove from heat and cool for 15 minutes.
  • 10. Whisk in maple extract and confectioners' sugar until it reaches a smooth consistency. Add more confectioners' sugar, if needed, for consistency and sweetness.
  • 11. Spread icing on top of cooled doughnuts, and let stand 15 minutes to allow icing to set.

1/2 cup sugar
1/2 cup shortening
1/2 cup maple syrup
1 large egg, room temperature
2/3 cup all-purpose flour
1/2 teaspoon baking powder
1 teaspoon vanilla extract
1 cup rolled oats
1 cup chopped walnuts

Steps:

  • In a mixing bow, cream sugar and shortening. Add syrup and egg and beat well. Combine flour and baking powder; add to creamed mixture. Add vanilla and mix well. Stir in oats and walnuts. Pour into a greased 9-in. square baking pan. Bake at 350° for 35 minutes. Cut into squares while warm. Cool on a wire rack.

I don't remember where I got this recipe but it is so good. I get asked to make these and they are always gone fast. You could sprinkle chopped nuts on top of the icing if you wanted. The icing would also be good on a cake.

1 1/2 cups milk
1/3 cup shortening
4 tablespoons sugar
2 teaspoons salt
2 teaspoons cinnamon
1/4 cup water
2 (1/4 ounce) packages yeast
2 large eggs, beaten
4 3/4 cups flour
1/3 cup butter
1 cup packed brown sugar
1/4 cup milk
1 1/2 cups powdered sugar
2 teaspoons mapleine

Steps:

  • For Maple Bars: In saucepan scald milk.
  • Add shortening, sugar, salt and cinnamon.
  • Dissolve and let cool to lukewarm.
  • In large bowl dissolve 2 packages of yeast in water.
  • Add beaten eggs and stir.
  • Stir saucepan mix into yeast mixture.
  • Gradually add flour.
  • Knead.
  • Let rise in bowl for an hour.
  • Punch down and roll out to 1" thickness.
  • Cut into squares and let rise again on lightly greased baking sheets.
  • Bake at 425°F for 7-8 minutes or until light golden brown. Watch carefully.
  • For Icing: In saucepan mix butter, brown sugar and milk.
  • Bring to boil and simmer 3 minutes.
  • Remove from heat and cool for 15 minutes.
  • Add mapleine and then powdered sugar and blend well.
  • Add more powdered sugar if needed.
  • Spread on maple bars and enjoy.

Number Of Ingredients 16

Maple Bars
1 1/2 cups milk
1/3 cup shortening (I used butter flavored Crisco)
4 Tablespoons granulated Sugar
2 teaspoons salt
1/4 cup lukewarm water
2 (1/4 ounce) envelopes yeast
2 large eggs, beaten
5 cups flour (might need a bit more)
2 teaspoons cinnamon
Maple Icing 1/3 cup butter
1 cup packed brown sugar
1/4 cup milk
1 1/2 cups powdered sugar
2 teaspoons mapleine (found by the flavor extracts and seasonings)
1/8 teaspoon salt

Steps:

  • For the dough: In a medium saucepan scald milk; add shortening, 3 Tablespoons granulated sugar, and salt. Stir to combine and set aside to cool to lukewarm. In a large mixer bowl, add the lukewarm water and the yeast (remember the water should be just lukewarm, too hot and it will kill the yeast) Add the remaining 1 Tablespoon of sugar to the yeast and water and whisk to combine. Let sit for about 5 minutes until it starts to bubble and become foamy. After the yeast is foamy and the milk mixture is luke warm. Add the eggs to the yeast and stir to combine, then add the milk mixture to the yeast mixture. Whisk the cinnamon into the flour and gradually add to the yeast mixture. You may need to add more, you want the dough slightly sticky but not too sticky. Knead for 3 to 5 minutes. I let my kitchen aid do the kneading for about 5 minutes. Spray another large bowl with non-stick spray, place dough in the bowl and let raise for an hour or until double in size. Punch down and roll out into a large rectangle about 1 inch thick. Cut into rectangles, I cut the rectangle in half, and then each half into 6 pieces to make 12 bars, then place on a greased baking sheet. Let raise for about 30 minutes. While bars are raising, preheat the oven to 425 degrees. Bake the bars for 7 to 8 minutes or until light golden brown, Watch carefully. Remove from oven and let cool slightly before icing. Make the icing while the bars are raising: In a small saucepan mix butter, brown sugar and milk. Bring to boil for medium heat and simmer 3 minutes.l Remove from heat and cool for 15 minutes. Add the mapleine and powdered sugar and blend well with a hand mixer. Add a little more powdered sugar if needed (I added about 1/4 cup more) Spread on maple bars

I got this recipe from a friend about 20 years agoe. It was passed down in her family and she shared this recipe with me and I'm passing it down in my family. My boys loved these when I made them. They did'nt last very long in my house. The amount of servings, I was'nt sure of. So, you may need to recalculat the servings and nutrition value. I dont have a picture to share with you, but they are really good and they stay moist longer than the store bought ones. I hope you enjoy these as much as we have.

Number Of Ingredients 11

1 cup mashed potatoes
2 compressed yeast cakes
1 1/2 teaspoons salt
1 cup sugar
1 1/2 cups water
vegetable oil, for deep fat frying
5 1/2-7 cups flour
icing
2 cups powdered sugar
2 tablespoons cream
1/2-1 tablespoon maple flavoring

Steps:

  • Mix mashed potatoes, yeast, water,salt, and sugar all together and let stand 20 minutes.
  • In the mean time mix shortening and eggs together with a mixer till well blended.
  • add to mix.
  • Add flour to mixture till dough is smooth and work for 20 minutes.
  • let rise till double in size.
  • Roll out and cut into bar shapes and let rise for the last time, for about 1 to 1/2 hours.
  • Preheat oil to 375 degrees and cook in oil(both sides) for 2 to 4 minutes, a few at a time, turning only once.
  • Drain on paper towels and cool for frosting with maple icing. Icing Mix ingredients for Icing together till spreadable.
  • Frost bars and enjoy.

3/4 cup confectioners' sugar

TOPPING:
1-1/2 cups packed brown sugar
1 cup butter, cubed
1/2 cup maple syrup
2 teaspoons ground cinnamon
1/4 teaspoon salt
4 cups coarsely chopped pecans
2 tablespoons plus 1 teaspoon heavy whipping cream
3/4 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. In a large bowl, combine flour and confectioners' sugar. Cut in the butter until crumbly. Press into a greased 15x10x1-in. baking pan. Bake until edges are lightly browned, 12-15 minutes., Meanwhile, in a large heavy saucepan, combine brown sugar, butter, syrup, cinnamon and salt. Bring to a boil.
