HOMEMADE CHUNKY SALSA FOR CANNING
This chunky salsa is made with garden fresh tomatoes and just the right blend of chunky with a hint of sweetness.

- Sterilize the mason jars and canning supplies, and heat the SNAP LID® sealing discs in hot water.
- Remove the tomato peels, and chop the tomatoes into coarse chunks.
- Chop the bell peppers in coarse chunks, and chop the garlic, jalapeno peppers and cilantro.
- Add tomatoes, onions, green pepper, jalapeno pepper, garlic, tomato paste, vinegar, lemon, white sugar, and cilantro in a large stainless steel saucepan and bring to a boil. Stir until salsa is the desired thickness (about 30 minutes).
- While salsa is cooking, add cool water until the canner is about 1/2 full, and place rack inside. Do not place on heat yet!
- When salsa is cooled, add the salsa to the canning jars using a sterile spoon.
- Put on the sealing discs and screw on the screw bands.
- Add jars to the canner, and lower rack. Jars must be covered by at least an inch of water.
- Cover and cook on on medium high heat until boiling.
- Once boiling has started, continue boiling the jars for 20 minutes more (at up to 1000 feet or 305 m in altitude).
- When the 20 minutes are done, turn off the heat, remove the lid, and wait five minutes.
- Next, carefully remove the jars and cool.
- After the jars are fully cooled, check the jar seals.

CHUNKY HOMEMADE SALSA

- Peel, seed, and coarsely chop tomatoes (you should have about 14 cups). Place tomatoes in a large colander; let drain 30 minutes. Place tomatoes in 8-quart Dutch oven. Bring to boiling; reduce heat. Simmer, uncovered, for 45 to 50 minutes or until thickened (consistency of chunky salsa); stir frequently. Stir in Anaheim peppers, jalapeño peppers, onions, cilantro, garlic, vinegar, sugar, salt, and black pepper. Return to boiling. Remove from heat. Cover and chill in refrigerator at least 4 hours or up to 24 hours.* Makes about 8 cups salsa.

HOMEMADE CHUNKY SALSA
My husband had been buying some salsa from the store at $4.99 per container. So I purchased ingredients that was listed on the label, and made my own. It took a few tries but this worked best for our tastes. I had to list an amount for the cilantro, but I just grabbed about 1/2 a bunch (probably made 1/4-1/2 cup), chopped it and added it. It's also best if it's refrigerated for at least 1 hr so the flavors can blend.

- Finely chop tomatoes, onions and chile peppers and put in bowl.
- Chop cilantro and add.
- Add garlic powder.

- In a Dutch oven, bring 2 quarts water to a boil. Using a slotted spoon, place tomatoes, a few at a time, in boiling water for 30-60 seconds. Remove each tomato and immediately plunge into ice water. Drain and pat dry. Peel and finely chop tomatoes to measure 9 cups; place in a stockpot., Stir in remaining ingredients. - Chop the tomatoes, bell pepper if using, and onion into small chunks (as big as you'd like the chunks in your salsa to be) and crush the garlic. Seed and finely chop the green chili pepper.
- Put the tomatoes, bell pepper, chili pepper, and one of the chopped onions, and one crushed clove garlic in a small-medium sized pot. Grab a hand blender and roughly blend about a third of the vegetables. Heat on medium-high heat until bubbling and half-cover the pot with a lid to protect yourself from any hot spattering juices.
- After the vegetable mix has been bubbling away for five minutes, add in the salt and simmer for five more minutes.
- Add the remaining ingredients (1 chopped onion, 1 clove crushed garlic, crushed canned tomatoes, cumin, lemon juice, sugar, vinegar, hot sauce) apart from the fresh cilantro. Mix well and simmer for ten minutes.
