- Add cashews to a food processor or blender. Blend until coarse.
- Scrape down the sides of the processor as needed.
- Blend until mostly smooth, making sure to scrape the bottom of the processor or blender. Blend longer if smoother cashew butter is desired; however, some graininess is normal. Enjoy! Storing instructions below.

- Process cashews and salt in a food processor until desired consistency, about 5-7 minutes, scraping down sides as needed. Add coconut oil and process another 30 seconds. Store in an airtight container in refrigerator.

- 1. For a more flavorful spread, start by roasting the cashews (optional). Preheat the oven to 350 degrees Fahrenheit. Spread cashews on an ungreased rimmed baking sheet in a single layer and roast until fragrant and golden brown, about 15–20 minutes. Let cool to room temperature, about 15 minutes.
- 2. In a food processor or high-speed blender, pulse roasted cashews until finely chopped, about 30 seconds. For chunky cashew butter, remove ¼ cup chopped nuts and set aside.
- 3. Process until nuts form a smooth, thick paste, about 3 minutes, pausing every minute or so to scrape down the sides of the bowl.
- 4. Add salt and maple syrup (if using), and continue to process until fully incorporated, about a minute. For chunky cashew butter, add the chopped nuts back in and pulse a few times to incorporate.

- Preheat oven to 325 degrees Fahrenheit. Spread the nuts out onto a rimmed baking sheet. Roast for 8 to 10 minutes, until fragrant and toasted. Allow to cool for 2 to 3 minutes on the tray.
- Immediately add the nuts to food processor while they’re warm and process for 4 minutes.** You’ll see them start out crumbly, then get gradually creamier and creamier.
- Add the kosher salt to taste (we used between 1/8 to 1/4 teaspoon using unsalted nuts). Process for 2 to 3 minutes more until luxuriously creamy. Taste and add additional salt as necessary.
- Transfer the cashew butter to a jar. Store in a cool dark place (pantry) for 1 month or refrigerated for 2 to 3 months.
