YOUR CLASSIC BREAD-AND-BUTTER PICKLES



Your Classic Bread-and-Butter Pickles image

Number Of Ingredients 9

3 pounds pickling cucumbers (less than 5 inches long)
1 large or 2 medium onions (about 1 pound)
3 tablespoons kosher or other coarse salt
1 teaspoon celery seed
1 teaspoon ground turmeric
1 tablespoon yellow mustard seed
1/4 teaspoon ground cloves or allspice (optional)
3 cups cider vinegar
2 1/2 cups brown sugar

Steps:

  • Trim and discard the blossom ends of the cucumbers, then peel the onions and cut both into rounds about 1/4 inch thick. In a nonreactive bowl, toss them with the salt, then cover and refrigerate for 1 to 2 hours. Drain well, rinse, drain again and then set the cucumbers and onions aside.
  • In a nonreactive pot, combine all the remaining ingredients and bring to a boil over high heat, stirring once or twice to dissolve the brown sugar. Reduce the heat to low, simmer for 3 minutes and then pour the liquid over the cucumbers and onions. The cucumbers should be amply covered or slightly afloat.
  • Allow to cool to room temperature, then cover and refrigerate. These pickles have good flavor as soon as they are cool, but the flavor will deepen if you let them sit for 24 hours. They will keep, covered and refrigerated, for a month or more.

5 pickling cucumbers (about 4 inches long)
4 slices fresh horseradish, peeled and cut into 1/2-inch slices
4 sprigs fresh dill weed
1 cup white vinegar
1 cup sugar
3 cups water
4 cloves garlic, peeled
2 tablespoons pickling spice
2 teaspoons turmeric
Kosher salt and freshly ground black pepper

Steps:

  • Wash cucumbers, slice into 1/4-inch thick rounds, and place in a heated, sterilized mason jar with horseradish and fresh dill weed.
  • Set a large pot over medium heat and add vinegar, sugar, water, garlic and pickling spices. Bring the brine to a boil then pour over cucumbers and horseradish in still-hot mason jar and seal lid. Allow to cool to room temperature before refrigerating. You can serve once chilled, but for best flavor serve after the pickles have been left overnight.

25 cucumbers, thinly sliced
6 onions, thinly sliced
2 green bell peppers, diced
3 cloves garlic, chopped
½ cup salt
3 cups cider vinegar
5 cups white sugar
2 tablespoons mustard seed
1 ½ teaspoons celery seed
½ teaspoon whole cloves
1 tablespoon ground turmeric

Steps:

  • In a large bowl, mix together cucumbers, onions, green bell peppers, garlic and salt. Allow to stand approximately 3 hours.
  • In a large saucepan, mix the cider vinegar, white sugar, mustard seed, celery seed, whole cloves and turmeric. Bring to a boil.
  • Drain any liquid from the cucumber mixture. Stir the cucumber mixture into the boiling vinegar mixture. Remove from heat shortly before the combined mixtures return to boil.
  • Transfer to sterile containers. Seal and chill in the refrigerator until serving.

8 small pickling cucumbers, unpeeled and cut into 1/4 inch thick slices
1 medium onion, cut in half and thinly sliced
1 cup cider vinegar
3/4 cup sugar
4 1/2 teaspoons kosher salt
2 teaspoons mustard seeds
1/2 teaspoon dry mustard
1/2 teaspoon turmeric
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon celery seed

Steps:

  • Combine cucumbers, onion, vinegar, sugar, salt, mustard seeds, dry mustard, turmeric, crushed red pepper, and celery seeds; heat to boiling over high heat, stirring occasionally.
  • Boil 1 minute, stirring frequently.
  • Pour cucumber mixture into a large bowl; cool to room temperature, stirring occasionally.
  • Cover and chill overnight before serving.
  • You can spoon cooled cucumbers and their liquid into jars with tight-fitting lids and refrigerate up to 4 weeks.

400g Lebanese or Kirby cucumber (about 6-7 small ones), cut into 1cm thick slices (available at Whole Foods or from a greengrocer)
1 medium onion , cut into thick slices
2 tbsp rock or flaked sea salt
300ml apple cider vinegar
140g golden caster sugar
¼ tsp ground turmeric
¼ tsp celery seeds
¼ tsp chilli flakes
2 tbsp yellow or brown mustard seeds

Steps:

  • Put the cucumbers, onion slices and salt in a sieve set over a bowl, and cover with ice and something to weigh it down. Let stand for 1-2 hrs in the fridge, then drain well. (This helps to push the water out of the cucumber, which means it will stay crunchy later when brined.)
  • Meanwhile, put the vinegar, 200ml water, the sugar, turmeric, celery seeds, chilli flakes and mustard seeds in a small saucepan over a medium heat. Bring to the boil and simmer for 5 mins. Remove from the heat and leave to cool to room temperature. Put the cucumber and onion mixture in a 500ml- capacity jar or sealable plastic container, pour over the brining liquid, cover and seal. Chill for at least 3 hrs. Will keep in the fridge for 2 weeks.

This is a very good recipe for sweet pickles.(I think) I have had very good luck with it in my first year for canning. Mine turned out good and crisp. When cutting cucumbers like sweet mixed pickles, I added a little bit of red bell pepper and also a little cauliflower to look like the bought ones. Also taste good too.

30 medium cucumbers
8 large onions, sliced
1/2 cup salt
5 cups vinegar
4 cups sugar
1 teaspoon turmeric
2 teaspoons celery seeds
2 teaspoons mustard seeds
1/2 teaspoon alum

Steps:

  • Sprinkle salt over prepared cucumbers and onions.
  • Let set for 3 hours.
  • Mix all other ingredients together and let come to a good boil.
  • Drain vegetables and add to Vinegar mixture.
  • Bring back to a boil.
  • Put into prepared jars and seal.
  • Put in hot water bath for 10 minutes.

6 small onions, sliced
1 teaspoon mustard seed
¾ teaspoon ground turmeric
1 teaspoon celery seed
1 cup white sugar
3 cups distilled white vinegar
⅓ cup coarse salt
6 cucumbers, sliced

Steps:

  • In a large pan, combine the onions, mustard seed, turmeric and celery seed.
  • In a saucepan, combine the sugar, vinegar and salt. Bring to a boil. Pour the boiling mixture into the pan with the onion mixture.
  • Add the cucumber slices. Pack into sterile jars. Refrigerate for 2 weeks before eating.

I Love These, miss when mom used to make them growing up, and they are so much better then the store bought ones. So this year was bound and determined I would make them!

5 1/2 c sliced pickling cucumbers
1 1/2 Tbsp kosher salt
1 c sliced sweet onion
1 c granulated sugar
1 c white vinegar
1/2 c apple cider vinegar
1/4 c brown sugar, light
1 1/2 tsp mustard seed
1/2 tsp celery seed
1/8 tsp ground turmeric

Steps:

  • 1. Combine cucumbers and salt in a large, shallow bowl;cover and chill 1 1/2 hours. Move cucumbers into a colander and rinse thoroughly under cold water. Drain Well, and return cucumbers to bowl,and onion and toss.
  • 2. Combine the granulated sugar, white vinegar,apple cider vinegar,brown sugar, and mustard seeds, celery seeds,and ground turmeric in a medium saucepan; bring to a simmer over medium heat, stirring until sugar dissolves. Pour hot vinegar mixture over cucumbers and onions; put back in saucepan over medium to low heat keeping it hot, but do nto over cook cucumbers.
  • 3. Prepare canning jars and lids by washing in hot soapy water and rinsing in hot water. Place sheet pan in oven to set washed jars on. Turn oven on to bake at 250 degrees to get jars hot. Place large deep pot of water onto high heat, and bring to boil. Make sure you have right canning tools to grab hot glass jars out of oven, and funnel. Get a small bowl of very hot tap water and soak seals and lids in it. Grab a glass jar out of oven, place funnel in jar and start scooping out your cucumbers and liquid and fill jars. Fill just to 1/2 inch from top of jar making sure cucumbers are covered.Wipe top of jar off to make sure seals properly. Place seal and lid on and seal tight, immerse in boiling pot of water for 15 minutes.
  • 4. Note: any seals that do not seal right will have to be redone with new seals. After finished in boiling water place on thick towel to cool and finish setting. I hope you enjoy these like I do!

3 cups sliced onions (about 4 medium)
1 medium sweet red pepper, sliced
1 medium green pepper, sliced
3 quarts ice water
1/2 cup canning salt
6 cups sugar
6 cups white vinegar
3 tablespoons mustard seed
3 teaspoons celery seed
1-1/2 teaspoons ground turmeric
1/4 teaspoon plus 1/8 teaspoon ground cloves

Steps:

  • Place cucumbers, onions and peppers in a large bowl. In another large bowl, mix ice water and salt; pour over vegetables. Let stand 3 hours., Rinse vegetables and drain well. Pack vegetables into eleven hot 1-pint jars to within 1/2 in. of the top., In a Dutch oven, bring sugar, vinegar, mustard seed, celery seed, turmeric and cloves to a boil. Carefully ladle hot liquid over vegetable mixture, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot liquid. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.
