OLD FASHIONED OATMEAL COOKIES
Steps:
- HEAT oven to 350 degrees F. Coat baking sheets lightly with no-stick cooking spray.
- COMBINE shortening, brown sugar, egg, milk and vanilla in bowl of electric mixer; beat at medium speed until well blended.
- COMBINE oats, flour, baking soda, salt and cinnamon. Mix into shortening mixture at low speed just until blended. Stir in raisins and walnuts. Drop by rounded measuring tablespoonfuls of dough 2 inches apart onto prepared baking sheets.
- BAKE 8 to 10 minutes or until lightly browned. Cool 2 minutes on baking sheets. Place on cooling racks to cool completely.
SPECIAL OATMEAL COOKIES (VEGAN)
This comes from vegweb.com. They got rave reviews there so I'm guessing they're pretty darn good! Can't wait to try them! Plus, they're vegan!! I'm not exactly sure how many cookies this makes (12-15 is a guess). Substituting applesauce or fruit puree for the oil was a recommendation, as well as carob chips or raisins in place of chocolate chips. Also another person suggested subbing 3/4 sugar with 1/4 maple syrup and 1/2 brown sugar, adding a dash of nutmeg, some allspice, and even a banana! These are pretty versatile, so whatever strikes your fancy.

Steps:
- Mix canola oil, cornstarch mixture, Sucanat, vanilla, and coconut well in a good-sized bowl.
- In a separate bowl, sift flour, cinnamon, salt, and baking powder together.
- Add oats to this mixture.
- Add the dry mixture to the wet one and mix well.
- Mix in chocolate chips.
- Form the dough into small balls or patties on a greased cookie sheet.
- Slightly flatten out mounds, because they do not seem to flatten during the baking process.
- Bake at 350°F for about 10 minutes, or until they are done when tested with a toothpick.

Steps:
- Heat oven to 375 degrees.
- Beat together butter or margarine and sugars until fluffy.
- Beat in egg and vanila.
- Combine dry ingredients and add to margarine mixture.
- Mix well.
- Stir in oatmeal.
- Roll into balls and then in colored sugar sprinkles.
- Bake for 10-11 minutes for crispy cookies or 8-9 minutes for chewy cookies.
- Cool and store in covered container.
