An excellent pot luck or OAMC recipe that I got from a friend at a pot luck dinner several years ago. Serves 25 or more and freezes well. Good served as a side dish with hamburgers, meat loaf, pork chops or hot dogs. A nice combination of green beans, wax beans, lima beans, and pork and beans. Substitute rinsed and drained chick peas or garbanzo beans or any other beans you like. Add some crispy bacon bits to the casserole or serve bacon bits and grated cheddar cheese to top individual servings.

2 lbs ground beef
2 cups onions, chopped
1 cup celery, chopped
1 (10 3/4 ounce) can cream of tomato soup, undiluted
1 (6 ounce) can tomato paste
1/2 cup ketchup
1 (14 ounce) can green beans, drained
1 (14 ounce) can wax beans, drained
1 (14 ounce) can lima beans, drained
2 (14 ounce) cans pork and beans
1/2 cup brown sugar, packed
2 tablespoons prepared mustard

Steps:

  • In large Dutch oven, brown beef over medium high heat, stirring to keep broken up. Drain excess fat.
  • Add onion and celery and cook until tender.
  • Stir in tomato soup, tomato paste, ketchup. Simmer 15 to 20 minutes.
  • Spoon into a large roasting pan.
  • Add green beans, wax beans, lima beans, pork and beans, brown sugar and mustard. Stir well. (Freeze in smaller containers now for baking at a later date.).
  • Bake, uncovered, at 350 degrees Fahrenheit for one hour, stirring occasionally.

14 (14 ounce) cans pork and beans in tomato sauce (14-398 mL each, no pork)
1/2 cup dry onion flakes
1 cup brown sugar, packed
4 cups ketchup
2 tablespoons Worcestershire sauce

Steps:

  • Combine all 5 ingredients together in large roaster.
  • Bake uncovered in 350°F oven for 2 to 2 ½ hours or until bubbling and darkening around sides. Stir halfway through cooking time. Serves 50.

cayenne or hot sauce (optional)

Steps:

  • Combine all ingredients.
  • Use vinegar and lemon juice to clean out bottles.
  • Heat through and serve over sliced hot meat just before serving.
  • Can also be used to baste meat while cooking.

3 cups fine dry breadcrumbs
9 lbs ground beef
3 lbs ground pork
3 tablespoons salt
1 1/2 teaspoons pepper
2 tablespoons onion juice
2 tablespoons lemon juice
1 tablespoon poultry seasoning
2 tablespoons minced parsley
tomato sauce
1 small piece bay leaf
2/3 cup butter or 2/3 cup margarine
3/4 cup minced celery leaves
1 onion
2/3 cup flour
1 1/2 teaspoons salt
7 cups of canned crushed tomatoes
1/2 teaspoon pepper

Steps:

  • Scald milk; add to breadcrumbs.
  • Combine with meat and seasonings; mix thoroughly.
  • Pat into 6 loaf pans, 9 -1/2 x 4 -1/2 inches.
  • Bake in a moderate oven, 350F one hour.
  • Serve with Tomato Sauce.
  • Tomato sauce: Add bay leaf, celery leaves and minced onion to tomatoes; simmer 10 minutes; strain.
  • Melt butter or margarine in saucepan; stir in flour and seasonings.
  • Add tomatoes gradually.
  • Cook stirring constantly until mixture thickens, reduce heat and cook 10 minutes, allow about 2 tablespoon sauce per serving.

1 (10 3/4 ounce) can applesauce
2 lbs brown sugar
6 cups quick-cooking rolled oats

Steps:

  • Drain sweet potatoes.
  • Divide the sweet potatoes and applesauce into two 19 x 11 x 2-inch steam table pans, mixing applesauce and sweet potatoes together.

This is a stand-up, zesty sauce, with a wee bite! I crafted it for an annual spaghetti dinner. It is a sauce designed by a man, and prepared using those so stereotypically "male" cooking implements: the grill and the turkey fryer!

10 lbs ground chuck (80% lean)
4 lbs Italian sausage (hot)
4 lbs Italian sausage (mild)
8 lbs white onions, diced
3 ounces oregano (1 small jar standard US grocery size)
1/2 ounce basil (1 small jar standard US grocery size)
200 ounces tomato puree (2- #10 cans)
200 ounces tomatoes, crushed (2- #10 cans)
1 head garlic, crushed
olive oil (for saute)

Steps:

  • Grill the sausages on a gas/charcoal grill. When done, slice into 1/4" coins.
  • Saute onions until translucent in pot.
  • Add garlic, and ground beef, and brown the beef.
  • Add both tomato products.
  • Add sausage, basil, and oregano.
  • Simmer for 60-90 minutes.
