3 to 4 pounds fresh uncooked corned beef brisket
Water
2 tablespoons black peppercorns
6 carrots, peeled, thickly sliced
2 large turnips, peeled and quartered
12 small white onions, peeled with root end left intact
16 small new potatoes, scrubbed
1 small cabbage head, outer leaves removed, quartered

Steps:

  • Place beef in large pot and cover with water. Add peppercorns. Bring to a boil, reduce heat, and simmer for 3 1/2 to 4 hours, until fork tender and meat easily releases when pierced. Add vegetables to simmering pot, in stages, during final hour of cooking time: Add onions with one hour of cooking time remaining; carrots and turnips with 45 minutes remaining; cabbage with 30 minutes remaining; and potatoes with 20 minutes remaining. Serve with mustard, pickles, and country rye bread.;

1 (3 lb) corned beef brisket
5 medium potatoes, peeled and quartered
1 medium turnip, peeled and quartered
6 small carrots, peeled and chopped
6 small parsnips, peeled
6 small onions, peeled
1 medium cabbage, cut into wedges

Steps:

  • Place corned beef in uncovered Dutch oven, with spices up.
  • Cover with 2 inches of cold water. Bring to a boil, reduce heat, cover, and allow to simmer slowly for 2 hours.
  • Add vegetables and continue to simmer with lid on for 1 hour or until meat is fork tender and vegetables are done.

I love to try things from "scratch". This recipe also gave me the opportunity to lower the salt and not add nitrates as store-boughts do. Originally came from Cook's Illustrated, but OF COURSE I had to add a few things!

5 -7 lbs beef brisket (either point or flat cut, Trim fat as needed)
1/2 cup kosher salt (Do not substitute regular or sea salt)
1 tablespoon cracked black pepper
1 tablespoon peppercorn
1 tablespoon ground allspice
1 1/2 tablespoons dried thyme
1 tablespoon paprika
3 crumbled bay leaves
1 tablespoon minced garlic

Steps:

  • Take the brisket and pierce it with a knife or tenderizer. Do each side at least 15x. Place brisket in 1 gallon plastic baggie.
  • Mix all other ingredients together in a bowl or 2 cup measuring cup.
  • Reaching inside baggie, sprinkle 1/2 the mixture over the brisket. Turn baggie over and repeat, sprinkling the other side. Seal the baggie after expressing as much air as possible.
  • Place the bagged brisket in a dish large enough to hold it. It must then be weighted. You can use some cans from the pantry. I used 2 fairly heavy casserole dishes that nested, and placed the second on top of the brisket.
  • Put the dish with the brisket in the refrigerator. I used bottom shelf in the back as it is the coldest spot. The brisket should be turned over 1x each day for at least 5 days, and no longer than 7 days.
  • Rinse before using. I gave my brisket a cold-water bath while preparing the other ingredients for a traditional New England boiled dinner.
  • This recipe is only for curing the beef. When I cooked this cured beef, I simmered it for at least 3 hours, then moved it to a casserole with a cup of broth ladled over it and let it rest for 20-30 minutes before slicing across the grain.

CORNED BEEF:
1/2 cup kosher salt
1 tablespoon black peppercorns, freshly cracked
1 tablespoon dried thyme
2 1/4 teaspoons ground allspice
1 1/2 teaspoons paprika
2 bay leaves, crumbled
1 (4- to 5-pound) beef brisket, flat cut, trimmed
VEGETABLES:
1 1/2 pounds carrots, peeled and halved crosswise, thick end halved lengthwise
1 1/2 pounds small red potatoes
1 rutabaga (1 pound), peeled and halved crosswise; each half cut into 6 chunks
1 small head green cabbage (2 pounds), uncored, cut into 8 wedges

Steps:

  • CORNED BEEF: Combine salt, peppercorns, thyme, allspice, paprika, and bay leaves in bowl. Using metal skewer, poke about 30 holes on each side of brisket. Rub each side evenly with salt mixture. Place brisket in 2-gallon zipper-lock bag, forcing out as much air as possible. Place in 13x9-inch baking dish, cover with second, similar-size pan, and weight with 2 bricks or heavy cans of similar weight. Refrigerate 5 to 7 days, turning once a day. Rinse brisket and pat it dry. Place brisket in Dutch oven and cover brisket with water by 1 inch. Bring to boil over high heat, skimming any scum that rises to surface. Reduce heat to medium-low, cover, and simmer until skewer inserted in thickest part of brisket slides in and out with ease, 2 to 3 hours. Adjust oven rack to middle position and heat oven to 200 degrees. Transfer meat to large platter, ladle 1 cup cooking liquid over meat, cover with aluminum foil and place in oven to keep warm. VEGETABLES: Add carrots, potatoes, and rutabaga to Dutch oven and bring to a boil over high heat. Reduce heat to medium-low, cover, and simmer until vegetables begin to soften, about 7 minutes. Add cabbage, increase heat to high and return to boil. Reduce heat to medium-low, cover, and simmer until all vegetables are tender, 13 to 18 minutes. Meanwhile, remove meat from oven, transfer to carving board, and slice against grain into 1/4-inch slices. Return meat to platter. Transfer vegetables to meat platter, moisten with additional broth, and serve.

  • Place corned beef and any liquid from the bag into an 8 quart pot and fill with cold water. Bring to a boil and skim off foam that floats to the top. Reduce to a medium simmer and cook uncovered for three hours, replacing hot water every 30 minutes or so to keep water to the top. After three hours, let sit in water off burner for 15 minutes then remove to a sheet tray. The spice bag mix does not get used while the corned beef is cooking. Corned beef has enough flavor on its own and you want the taste of the meat to shine.
  • OK, here is trick number one. In food service, we would cook the corned beef the day prior, place in the cooler with a heavy weight on top and the next day, any grains of heavy fat intermingled throughout the meat would be squeezed out yielding a less fatty looking slice. To do this at home and to show the difference, I cut the cooked roast in half and left one un-pressed and pressed the other by putting a second sheet pan over the top and topping with a heavy Dutch oven filled with some water. That whole set up is then placed in the refrigerator overnight. This step is not totally necessary but I wanted to show the difference. Once the meat is hot, you really can’t see the fat and as a bonus, fat tastes good. So this is your choice here.
  • There should be about 6 quarts of liquid left in the pot and this will be flavored now with the spice bag.
  • Lay out a double layer of cheese cloth and fill with peppercorns, cloves, bay leaves, mustard seeds, coriander seeds, all spice berries, fresh ginger, cinnamon stick and pepper flakes. Pull up sides and tie with butchers twine. (Alternately, you can just use a commercial pickling spice mix).
