Like the Mexican sauce these are named after, these pecans are rich without being too sweet. Snack on these straight up while sipping a White Russian or a coffee liqueur such as Tia Maria.

1 large egg white
1 teaspoon vanilla extract
2 cups raw pecan halves
1/2 cup sugar
1/4 cup cornstarch
1 tablespoon unsweetened cocoa powder
1 teaspoon chili powder
1/2 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin

Steps:

  • Preheat oven to 225ºF. Line a baking sheet with parchment paper.
  • Place the egg white in a large stainless steel bowl and whip until frothy. Whip in the vanilla, then gently add the pecans and toss until completely coated with the mixture.
  • Transfer the pecans to the prepared sheet and arrange in a single layer. Try to not let the pecans touch each other. Place the sheet in the oven and cook for 30 minutes. Gently turn over the nuts and continue to cook, stirring, every 15 minutes, until the coating is lightly colored and dried out, about 1 hour and 15 minutes total.
  • Remove from the oven, immediately loosen the nuts with a metal spatula, and set aside to cool before serving.

2 cups coarsely chopped onions
2 garlic cloves, minced
2 tablespoons oil
1 (15 ounce) can dark red kidney beans, drained and rinsed
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can pinto beans, drained and rinsed
1 (28 ounce) can chopped tomatoes, undrained
1 large bell pepper, seeded and chopped
1 cup picante sauce
2 tablespoons unsweetened cocoa
2 teaspoons ground cumin
1 teaspoon oregano
1/2 teaspoon salt
1/8 teaspoon nutmeg
1/8 teaspoon allspice

Steps:

  • Saute onion and garlic until tender, but not browned.
  • Add remaining ingredients and bring to a boil.
  • Reduce heat, cover, and simmer for ten minutes.
  • Uncover and simmer ten minutes more, stirring occasionally. If mixture is too thick, may be thinned with a little beer, broth or water.
  • Garnish with shredded cheese, sour cream, and chopped green onions if desired.

I have not tried this recipe. I got this recipe from Party Nuts. I plan to make these with Splenda. I also plan to not use the chili powder or cumin.

1/2 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin

Steps:

  • Preheeat the oven to 225. Line a baking sheet with parchment paper.
  • Place the egg white in a large stainless steel bowl and whip until frothy. Whip in the vanilla, then gently add the pecans and toss until completely coated with the mixture.
  • Place the remaining ingredients in a medium size bowl and toss until well combined. Add the sugar mixture to the pecans, a quarter of it at a time, and very gently toss until well coated.
  • Transfer the pecans to the prepared sheet and arrange in a single layer. Try to not let the pecans touch each other. Place the sheet in the oven and cook, stirring every 15 minutes, until the coating is lightly colored and dried out, about 1 hour and 15 minutes trotal.
  • Remove from the oven, immediately loosen the nuts with a metal spatula, and set aside to cool before serving.

Place them in a mixing bowl, cover them with boiling hot water and let them soak for 20 to 30 minutes until rehydrated, place chiles and water in batches in the food processor or blender and puree until smooth.
  • In a large, extended sauté pan, add oil and set over medium-high heat until hot, 1 or 2 minutes. Add onion and sauté for 2 to 3 minutes, until the onion starts to soften. Add garlic and sauté for 1 minute. Stir in the hibiscus flowers and cook for 3 to 4 minutes; until lightly crunchy.
  • Add the tortillas, let them cook for 1 minute. Stir in the pecans, and cook for 1 minute. Add the plantains and prunes, stir and let them start to cook and brown, for about 2 to 3 minutes. Each time you add a new ingredient, let it start to cook and season, before adding the next.
