CASCADING FRUIT CENTERPIECE

It's exciting and fun to build this pretty centerpiece, which I have made for holidays, weddings and showers over the past 20 years. The ginger dip is wonderful, or you can fill the fruit cups with other favorite dips, flavored yogurt or whipped topping. -Ellen Brown, Aledo, Texas

Number Of Ingredients 21

PINEAPPLE GINGER DIP:
2 packages (8 ounces each) cream cheese, softened
5 tablespoons unsweetened pineapple juice
2 tablespoons confectioners' sugar
1 tablespoon grated orange zest
1 tablespoon lemon juice
1-1/2 to 2 teaspoons ground ginger
1/4 cup sweetened shredded coconut, toasted
CENTERPIECE:
1 fresh pineapple
1 large grapefruit
1 large navel orange
1 medium lemon
8 Styrofoam rounds (four 10x1 inch, four 6x1 inch)
2 wooden dowels (one 8x1/4 inch, one 4-1/2x1/4 inch)
Floral metal greening pins
3 to 5 pounds seedless green grapes
3 to 5 pounds seedless red grapes
1 pound fresh strawberries
Silk flowers with leaves
3 cups yogurt of your choice

Steps:

  • In a small mixing bowl, combine the first six ingredients. Stir in coconut. Chill until serving., Cut off pineapple top with a fourth of the pineapple attached; set aside. For dip bowl, cut a third from bottom of pineapple; remove fruit, leaving a 1/2-in. shell. Remove peel from center section of pineapple; core and cut pineapple into chunks., Cut the grapefruit, orange and lemon in half widthwise. Remove pulp from one half of each; set aside. (Save the remaining grapefruit, orange and lemon halves for another use.) , Stack two 10-in. Styrofoam rounds and two 6-in. rounds; cover each stack with heavy-duty foil. Repeat with remaining rounds. On a 19x15-in. platter, pile the stacks on top of each other, staggering them and anchoring with dowels. , Place pineapple top on the top circle; position lemon, orange and grapefruit cups on other circles. Place pineapple bowl on platter. , With greening pins, attach clusters of grapes onto circles. Randomly add strawberries, pineapple chunks and more grapes to cover the foil and platter. Decorate with silk flowers. Just before serving, fill pineapple bowl with pineapple ginger dip. Fill lemon, orange and grapefruit cups with yogurt.

Beautiful and easy presentation. When we were non kid we back lit the glass cake stand with low candles, now that we have our son we use a small standing night light set just part way under the cake stand to illuminate the centerpiece and keep it kid safe. Not knowing how large you'll make your centerpiece you'll have to guesstimate on the quantity of fruit needed. On occasion I also toast the whole walnuts and while still warm thread (needle and dark thread) them to look like pine cones without the jelly and sugar coatings.

Number Of Ingredients 7

1 (10 ounce) jar red currant jelly
4 cups superfine sugar (also known as bar sugar)
fresh fruit, not peeled (i.e. apples, mix of different varieties for colour, oranges, lemons, pears, grapes, cherries, limes)
whole nuts (walnuts, almonds, cashews etc)
1/2-1 cup powdered sugar
fresh mint sprig (even parsley, anything non poisonous and green)
parchment paper

Steps:

  • Line 2 baking sheets with parchment paper.
  • Fill one mixing bowl with superfine sugar.
  • Keep second one to catch excess sugar.
  • Place jelly into microwave safe bowl, heat on high for 2 minutes.
  • Stir and microwave another minute or until melted (watch carefully).
  • Using the fork, pierce the fruit on the bottom securely.
  • Using the pastry brush paint the jelly one at a time onto the fruit (reheat jelly as it cools). Hold the freshly painted fruit over the sugar filled bowl.
  • Using the spoon sprinkle the sugar over the fruit until coated.
  • Use the empty mixing bowl to shake off excess sugar and not soil the first bowl. Place sugared fruit on parchment to dry about 45 minutes.
  • Lightly coat nuts with remaining jelly and roll in the second sugar shake off bowl adding more sugar if needed, remove with fork and dry with the fruit. Arrange fruit and nuts on cake stand or platter, building as high and creative as you wish. Place mint, parsley or your choice of greenery in and around the centerpiece. Lightly dust the tops of the fruit and some of the greenery (mint etc) with powdered sugar as if newly fallen snow.

1 banana, firm and cut in half
6 maraschino cherries or 6 red-hot candies
4 candied mint leaves (Candied Mint Leaves)

Steps:

  • Put one pineapple slice each onto 2 small plates. Put the cut ends of the bananas in hole of pineapple.
  • Place 2 mint leaves on side of each candle. Place 3 cherries at stem ends of mint leaves.

1 fresh pineapple, trimmed and cored
Seedless watermelon slices
Cantaloupe balls
Honeydew balls
Large kiwifruit, peeled and sliced
Seedless red or green grapes
1/2 large round melon
Lemon and mint leaves, optional

Steps:

  • Cut pineapple into 3/8-in. slices. Using small flower or star-shaped cookie cutters, cut out shapes from pineapple and watermelon slices. Thread assorted fruits onto wooden skewers., Place melon on a serving tray or platter. Insert skewers into base. Garnish with lemon and mint if desired.

This centerpiece is a creative way to add flowers to your Thanksgiving spread. Not only are the sparkling pumpkins beautiful, but they are fall appropriate as well.

6 tiny pumpkins
6 milk, cartons (empty and dry) or 6 plastic bottles (empty and dry)
4 cups glitter
1 (32 fluid ounce) bottle glue (Modge Podge)
2 bouquets fresh edible flowers, trimmed to the correct length

Steps:

  • Cut off the top of the pumpkins, remove the insides, and dry out each Pumpkin thoroughly using a paper towel.
  • Cut off the base of each plastic carton 3 inches from the bottom (or small enough so that the base of the carton will invisibly fit into the pumpkin).
  • Cover the outside of the pumpkin with Modge Podge using a paint brush.
  • Place glitter in a bowl and roll the pumpkin around in the glitter until it is sufficiently covered in sparkle.
  • When the pumpkins are dry, place a bundle of cropped flowers in the middle of each one.
  • Stagger in the center of your table, or down the center of a wooden tray.

CITRUS FRUIT CANDLE CENTERPIECE

I make these candles for my Thanksgiving centerpiece every year, and I always get compliments on them. They also make great gifts! I use 5 candles in various sizes, but you can use as many as you'd like. You can use cinnamon sticks in place of fruit if you don't have time to dry the fruit out.

2 oranges
2 limes
2 lemons
1 berry wood branch
5 pillar candles

Steps:

  • Slice the oranges, limes and lemons 1/8-inch thick.
  • Put a wire rack on top of a cookie sheet and lay each piece of sliced fruit on the rack.
  • Preheat oven to 250 degrees.
  • When the oven is hot, place the rack of fruit in the oven and let "bake" for two hours (if your fruit is taking a long time to dry, turn the oven off and leave the fruit in overnight.
  • When the fruit is dry and cool, hot-glue the citrus pieces to one another by overlapping them in line with the candle's base. Do not glue-gun the candle directly or the wax will melt.
  • When the candles are completely decorated, and the glue is dry, stagger the candles in the middle of your Thanksgiving table and weave the berry branch throughout.
