Steps:

  • With a mixer, blend 16 ounces room-temperature cream cheese with 1 1/2 cups shredded cheddar, 3 tablespoons minced onion, 2 tablespoons salsa, 2 teaspoons ground cumin and 1 teaspoon minced jalapeno. Scoop onto plastic wrap and use the wrap to form the mixture into a 5-inch pumpkin-shaped ball; chill at least 2 hours. To serve, unwrap, roll in crushed nacho-flavored tortilla chips and press a bell pepper stem into the top.

This adorable cheese ball gets its pumpkin-orange coloring from ground-up cheese puffs and the stem is cleverly stolen from a bell pepper.

3 cups orange cheese puffs
2 pounds cream cheese, at room temperature
3 cups shredded Cheddar
1/4 cup chopped chives
Kosher salt and freshly ground black pepper
1 bell pepper with a long stem
Crackers, for serving

Steps:

  • Put the cheese puffs in a food processor and process until finely ground. Transfer to a rimmed baking sheet.
  • Combine the cream cheese, Cheddar, chives, 1 teaspoon salt and 1/4 teaspoon pepper in a large bowl and mix to combine. Mold the mixture into a ball, pressing the top of the ball with your hand to flatten it. With the tip of a butter knife, carve lines down the sides to resemble a pumpkin.
  • Roll the cheese ball in the ground cheese puffs. Remove the entire bell pepper stem with a paring knife and put it on top of the cheeseball as the pumpkin stem. Seed and slice the bell pepper. Serve the cheeseball on a plate with crackers and slices of bell pepper.

1 cup square cheese crackers
Two 8-ounce bags shredded Cheddar
One 8-ounce block cream cheese
1 packet macaroni and cheese powder
Stem of 1 bell pepper
Fresh parsley sprig, for garnish
1 bag green tortilla chips

Steps:

  • In a food processor, blend the cheese crackers to very fine crumbs.
  • In a large bowl, mix the Cheddar, cream cheese and macaroni and cheese powder until fully combined. Roll into a ball and coat with the cheese crackers crumbs. Wrap fully in plastic wrap and form into a pumpkin shape. Using a wooden spoon or skewers, make the ridges of a pumpkin.
  • Unwrap the cheeseball pumpkin. Place the pepper stem and parsley sprig on the top and sit on top of a plate of green tortilla chips.

16 oz. pkg. cream cheese softened
1 c pumpkin pie filling (it already has seasoning)
1/2 c pineapple preserves
1/2 c finely chopped walnuts
1/2 c finely chopped carrots
2 c shredded sharp cheddar cheese
cinnamon graham crackers to serve on

Steps:

  • 1. In large bowl, with mixer on low/medium, combine cream cheese, pumpkin pie filling, pineapple preserves. By hand, stir in carrots and nuts. Form into ball. Cover with plastic wrap and refrigerate until chilled. Serve with cinnamon graham crackers broken in medium pieces.
  • 2. OPTION: You can roll the ball in finely chopped walnuts if you desire OR finely chopped carrots, or both.

  • Add cream cheese in a mixing bowl and beat. Add Worcestershire sauce and spices and beat well. Add cheese and beat until combined.
  • Shape cheese into a round ball and place onto a piece of plastic wrap. Wrap tightly and refrigerate for at least an hour or overnight.
  • Remove from the refrigerator, and unwrap plastic wrap and discard. Place ball onto a serving plate. Use the handle of a spoon to "dig" a hole in the top of the ball for the stem. Cut a piece of celery about 2" long and press into the top of the ball. Use a round handled utensil to create deep divots in the side, making the cheese ball look like a pumpkin. You want these pretty deep as they will fill with chips.
  • Crush nacho cheese chips into fine crumbs by sealing them in a bag and kneading with your hands. Gently press the crumbs onto the outside of the cheeseball. Serve immediately with crackers.
