HOISIN-GLAZED PORK CHOPS
Why make your own hoisin? Because the addictively sweet-salty condiment will wake up just about everything you're making this week.

Steps:
- Heat oil in a medium saucepan over medium. Cook garlic, stirring often, until golden brown, about 2 minutes. Add soy sauce, honey, vinegar, tahini, and Sriracha and whisk until smooth. Cook, whisking occasionally, until mixture is thick and smooth, about 5 minutes. Season hoisin sauce with salt and pepper; let cool.
- Season pork chops all over with salt and pepper. Place in a large resealable plastic bag and add half of hoisin sauce (reserve remaining sauce). Seal bag, pressing out air, and turn to coat pork. Chill at least 30 minutes. Set remaining sauce aside.
- Preheat a large skillet, preferably cast iron, or grill pan over medium. Remove pork from bag, shaking off excess marinade. Cook pork chops until bottom side is golden brown, about 1 minute. Turn and cook on other side about 1 minute, then turn again. Continue to cook, turning about every minute, until chops are deep golden brown and charred in spots and an instant-read thermometer inserted into the thickest part registers 135°F, 15-18 minutes (cooking time will depend on thickness of chops). Transfer to a cutting board and let rest at least 10 minutes (pork will come to 145°F as it sits). Serve with reserved hoisin sauce spooned over.

- Hoisin sauce can be made 4 days ahead; cover and chill. Thin with water if needed before using. Pork can be marinated 1 day ahead; keep chilled.
SOY-AND-GINGER-MARINATED PORK CHOPS
A brief stint in the refrigerator with a soy-and-ginger marinade gives the pork flavor while tenderizing the meat.

- Whisk together soy sauce, 3 tablespoons oil, the ginger, sugar, chopped scallion, and 1/2 teaspoon pepper.
- Arrange pork chops in a 9-by-13-inch nonreactive baking dish. Reserve 3 tablespoons marinade, and pour remainder over pork chops. Marinate, covered with plastic wrap, flipping chops halfway through, for 45 minutes.
- Heat remaining tablespoon oil in large skillet over medium-high heat. Remove pork chops from marinade, and sear for 3 1/2 to 4 minutes. Reduce heat to medium. Flip chops, and sear until just cooked through, 3 1/2 to 4 minutes more. Transfer chops to a board or platter. Let rest for 5 minutes.
- Add reserved 3 tablespoons marinade to skillet. Simmer over medium heat until thickened, about 30 seconds. Spoon sauce over chops. Garnish with thinly sliced scallion.
HOISIN AND HONEY GLAZED PORK CHOPS
Steps:
- Put oven rack in middle position and preheat oven to 400°F.
- Cut scallions diagonally into 2-inch pieces.
- Whisk together remaining ingredients except pork in a large bowl. Add scallions and pork, turning pork to coat generously with sauce.
- Arrange pork in 1 layer in a 15- by 10-inch shallow baking pan (1 inch deep). Spoon remaining sauce with scallions over pork and roast until just cooked through, 15 to 20 minutes.
- Turn on broiler and broil pork 5 to 6 inches from heat until top is slightly caramelized, 2 to 5 minutes. Let stand, uncovered, 5 minutes. Serve pork topped with any pan juices.
GRILLED PORK CHOPS WITH PEANUTS, SESAME AND CILANTRO
Smoke has been called the umami of barbecue, and these pork chops, which the chef Curtis Stone cooks over wood fire at his restaurant Gwen in Los Angeles, possess it in spades. Fish sauce and soy sauce provide the salt in the marinade; hoisin sauce and honey the sweetness. The peanuts and sesame seeds in the topping reinforce the nuttiness of the sesame oil in the marinade. You can use charcoal if wood is not an option, or cook over gas if necessary.

- Prepare the pork chops: Place all the ingredients except for the chops in a mixing bowl and whisk to blend.
- Arrange the chops in a baking dish. Pour the marinade over the chops, turning them to coat both sides. Marinate the chops in the refrigerator for 4 hours, turning them over a couple of times so they marinate evenly.
- Meanwhile, build a wood fire in your grill with a hot zone for searing and a medium zone for cooking. (You can do the same with charcoal. If you're using a gas grill, place a few hardwood chunks under the grate over one or two of the burners. Heat one burner on high heat and additional burners on medium heat, adjusting the heat as necessary.) Brush and oil the grill grate.
- Grill the pork chops, allowing some but not all of the marinade to drip off first, until sizzling and browned on the outside and cooked to taste. If you like your pork with a blush of pink, cook until it reads 145 degrees in the center on an instant-read thermometer (about 3 minutes per side); if you like your pork cooked all the way through, look for the meat to reach 155 degrees in the center (about 4 minutes per side). Work mostly over the medium fire, moving chops to the hot fire at the end to sear the crust. Transfer the chops to a wire rack over a sheet pan and let rest for 2 minutes.
- Garnish and serve: Combine peanuts, scallions, cilantro and sesame seeds in a bowl and toss to mix. Arrange chops on a platter or individual plates. Sprinkle with peanut mixture and serve.
