CINNAMON SAUCE FOR APPLE PIE
Cinnamon with apple pie is as American as the pie itself. When my mom makes an apple pie or cobbler, this sauce is like the ice cream--you're SUPPOSED to have this with it at my house. My pop can take it or leave it, but if I had to choose the ice cream or this, buh-bye ice cream!! I can eat this with a spoon, straight from the saucepot. Did I mention I'm a sauce freak?? LOL! Sometimes, I make it just to eat and I always have everything on hand. It's also good on vanilla ice cream, but I prefer the pie. I have been known to request this just because. GOTTA LOVE SAUCES of ANY KIND!

Steps:
- Combine the sugar and flour in a small bowl.
- In a small saucepan, stir together the sugar mix into the milk. Cook until thick.
- Remove from heat and add the vanilla, butter, and cinnamon.
- Use as desired. Leftovers keep well, covered, in the refrigerator. When reheating in the microwave, do it very low and very slow, stirring frequently to prevent clumping and curdling.

- Combine all the ingredients together in a heavy saucepan.
- Bring the mixture to a boil, stirring constantly.
- Reduce the heat to low and continue to cook and stir for about 4 more minutes (making sure sugar is completely dissolved).
- Continue to cook on the lowest possible heat, uncovered (without stirring) for 15 more minutes.
- This sauce can be refrigerated or stored in the freezer.

- Line a 15x10x1-in. pan with foil; butter the foil and set aside. In a large heavy saucepan, combine water, sugar, corn syrup and food coloring. Bring to a boil over medium heat, stirring occasionally. Cover and cook for 3 minutes to dissolve sugar crystals. , Uncover; cook on medium-high heat, without stirring, until a candy thermometer reads 300° (hard-crack stage), about 25 minutes. Remove from the heat; stir in cinnamon oil (keep face away from mixture as oil is very strong). Immediately pour onto prepared pan. Cool completely, about 45 minutes. , Break the candy into pieces using the edge of a metal mallet. Sprinkle both sides of candy with confectioners' sugar. Store in airtight container.

CINNAMON CREAM SAUCE
I use this sauce for topping slices of angel food cake. With the angel food cake put 1/3 of the batter in bundt cake pan and sprinkle with 1/2 tsp of cinnamon (sprinkled thru sieve) then another 1/3 of the batter, 1/2 tsp cinnamon sprinkled and then the remaining cake batter. Then use this cream sauce as a topping for each slice.

- Put water & cinnamon candies in a small saucepan over med heat.
- When the candies begin to melt, reduce heat & simmer till candies are fully melted & a has sauce formed.
- Stir constantly & add water (or more candies) as desired, but don't get the sauce too thin.
- Done!
- NOTE: You can add 2 tbsp of real honey or a good maple syrup for a more syrup sauce -- or you can make a buttery version & melt the candies in butter over very low heat.
