HIGHLAND TOFFEE

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Generously grease an 8 or 9 inch square pan.
- In a large bowl, stir together vegetable oil and oats. Mix in brown sugar, corn syrup, salt, and vanilla. Press mixture into prepared pan.
- Bake for 12 minutes in preheated oven. Set aside to cool.
- Cut into 4 large squares to remove from pan. Cover with melted chocolate, and sprinkle with nuts, if desired. Allow the chocolate to cool, and then cut each square into 9 pieces.

This sumptuous layered bar cookie is iced with cherry frosting. Cut them small to make bite size morsels that melt in your mouth. You may want to double the frosting recipe.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, stir together 1 1/4 cup flour and 1/3 cup brown sugar. Rub in 1/2 cup butter using your hands or a pastry blender. Press into an ungreased 9 inch square pan.
- Bake for 15 minutes in the preheated oven, or until lightly browned at the edges. Set aside. In a medium bowl, beat eggs until light. Mix together the brown sugar, flour, baking powder, and salt; stir into the eggs. Mix in the coconut, nuts, and cherries; spread the batter evenly over the baked crust.
- Return to the oven, and bake for 25 minutes, or until brown. Set aside to cool. In a small bowl, mix the confectioners' sugar, 2 tablespoons butter, vanilla, and water until smooth. Add more liquid if necessary to make a more spreadable mixture. Spread over cooled bars before cutting into squares.

A moist sqare with a caramel and chocolate flavor. This is from Company's Company Squares Cookbook. My family enjoys these and so do I. Hope you do too.

Steps:
- In medium-size bowl,cream butter with brown sugar.
- Add white sugar and cream again.
- Add egg and vanilla and beat well.
- Measure in flour, soda and salt.
- Stir until well blended.
- Add chips and nuts stirring to combine.
- Scrape into 9X9 inch pan.
- Bake in 350*F oven for 25 to 30 minutes until set and a nice brown color.
- When cool cut into squares.

- In a large microwave-safe bowl, combine the marshmallows, peanut butter, chocolate chips and butter. Cover and microwave on high for 1-1/2 minutes. Stir until well blended (the mixture will be lumpy). Add cereal and peanuts; stir until well coated. Spread into a greased 13-in. x 9-in. pan. , For the frosting, combine chocolate chips, butter and milk in another microwave-safe bowl. Cover and microwave on high for 1 minute. Add sugar and vanilla. With an electric mixer, beat frosting until smooth. Spread over the cereal mixture. Cover and refrigerate until firm, about 2 hours. Cut into squares.

HIGHLAND SQUARES
My mom used to make these all the time for an afterschool snack, but she got it from a 1930's church cookbook. The basic recipe makes a nice simple sweet when eaten alone, but the possibilities are endless. I've mixed in chocolate chips, or dried fruit to make more of a granola bar. It is also nice served warm with ice cream.
