2 tablespoons olive oil
8 small red potatoes (about 1 lb), cut into 1/2-inch cubes
1 pork tenderloin (about 1 lb), cut into 1/2-inch pieces
1 jar (12 oz) seasoned gravy for pork
1 can (7 oz) whole kernel sweet corn, drained
4 medium green onions with tops, sliced (1/4 cup)
1/8 teaspoon pepper
1/4 cup chopped fresh parsley

Steps:

  • In 12-inch nonstick skillet, heat oil over medium-high heat. Cook potatoes in oil 10 to 12 minutes, stirring frequently, until golden brown. Add pork; cook about 5 minutes, stirring frequently.
  • Reduce heat to medium. Add remaining ingredients except parsley. Cook 4 to 6 minutes longer, stirring occasionally, until pork is no longer pink in center. Top with parsley.

1/3 cup grapeseed oil
3 garlic cloves, minced
2 small red chili peppers, finely chopped, seeded if prefer
1 lb ground pork
1/2 tablespoon white pepper powder
2 (15 1/4 ounce) cans whole kernel corn, drain and set aside
1/4 cup water
1 teaspoon low sodium salt (to taste)
10 green onions, chopped

Steps:

  • In a wok, heat grape seed oil over medium. Sauté garlic and chili peppers for 20 seconds.
  • Add ground pork and white pepper powder to it. Increase heat over medium high. Stir-fry pork until 80% cooked. Continue to stir in corn and combine well.
  • Reduce heat to medium. Pour water into wok and cover. Simmer until corn is completely heated, about 1 minute.
  • Uncover and season with salt. Turn off heat and stir in green onions. Serve hot!

1/2 cup sour cream
1 teaspoon lime juice
1/2 teaspoon lime zest
1 tablespoon mazola corn oil
2 large red bell peppers, diced
1 (10 ounce) package frozen whole kernel corn
2 tablespoons flour
1 1/2 teaspoons spice islands chili powder
1/2 teaspoon spice islands cayenne pepper
1/4 teaspoon salt
2 lbs boneless butterfly pork chops
2 tablespoons mazola corn oil
1 teaspoon spice islands cilantro

Steps:

  • Combine sour cream, lime juice and lime peel in a small bowl; set aside.
  • Heat 1 tablespoon oil in large skillet over high heat. Cook and stir bell peppers 6 to 8 minutes or until tender and slightly blackened. Stir in corn; cover and cook 2 minutes. Transfer to platter; keep warm.
  • Combine flour, chili powder, cayenne pepper and salt in a shallow plate. Lightly coat both sides of pork in flour mixture. Heat 2 tablespoons oil in skillet over medium-high heat. Add pork and cook 10 to 12 minutes or until no longer pink in center, turning once halfway though cooking. Arrange pork on corn mixture; drizzle with lime sour cream. Sprinkle with cilantro.
  • Recipe Note: to broil pork chops, season as above excluding the flour. Broil 4 inches from heating element for 8 to 10 minutes, turning halfway though cooking.
