1 pound frozen Tater Tots (about 5 cups)
1 tablespoon plus 1/2 teaspoon chili powder
3/4 teaspoon garlic powder
Kosher salt and freshly ground pepper
1 14-ounce package extra-firm tofu, drained
2/3 cup ketchup
1/3 cup chili sauce (such as Heinz)
2 tablespoons vegetable oil
1 onion, chopped
1 stalk celery, chopped
1 carrot, chopped
4 hamburger buns, split
4 slices white cheddar cheese
Bread-and-butter pickles, for topping

Steps:

  • Preheat the oven and bake the Tater Tots as the label directs. Toss with 1/2 teaspoon chili powder and 1/4 teaspoon garlic powder; season with salt and pepper.
  • Meanwhile, crumble the tofu on a paper towel-lined plate. Mix the ketchup and chili sauce in a bowl. Set aside.
  • Heat the oil in a large nonstick skillet over medium-high heat. Add the onion, celery, carrot and a pinch of salt. Cook, stirring, 3 minutes. Add the remaining 1 tablespoon chili powder and 1/2 teaspoon garlic powder. Cook, stirring, 1 minute. Add the tofu, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring, 3 minutes. Add 3/4 cup of the ketchup sauce and 1/3 cup water; simmer until thickened, 2 minutes.
  • Place the bottom buns on a baking sheet. Top with the tofu mixture, the remaining ketchup sauce and the cheese. Bake until the cheese melts, 3 minutes. Add the pickles and top buns. Serve with the Tater Tots.

¼ cup vegetable oil
½ cup minced onion
2 (8 ounce) packages tempeh
½ cup minced green bell pepper
2 cloves garlic, minced
¼ cup tomato sauce
1 tablespoon vegetarian Worcestershire sauce
1 tablespoon honey
1 tablespoon blackstrap molasses
¼ teaspoon cayenne pepper
¼ teaspoon celery seed
¼ teaspoon ground cumin
¼ teaspoon salt
½ teaspoon ground coriander
½ teaspoon dried thyme
½ teaspoon oregano
½ teaspoon paprika
1 pinch ground black pepper
hamburger buns

Steps:

  • Heat oil in a deep, 10-inch skillet over medium-low heat. Cook the onion in the oil until translucent. Crumble the tempeh into the skillet; cook and stir until golden brown. Add the green pepper and garlic; cook another 2 to 3 minutes.
  • Stir in the tomato sauce, Worcestershire sauce, honey, molasses, cayenne pepper, celery seed, cumin, salt, coriander, thyme, oregano, paprika, and black pepper; stir. Simmer another 10 to 15 minutes. Spoon hot onto hamburger buns to serve.

8 bacon strips, cut into 1-inch pieces
2 pounds lean ground beef (90% lean)
1 medium onion, chopped
2 garlic cloves, minced
2 cups shredded peeled butternut squash
2 medium parsnips, peeled and shredded
2 medium carrots, peeled and shredded
1 can (12 ounces) cola
1 can (8 ounces) tomato paste
1 cup water
1/3 cup honey mustard
1-1/2 teaspoons ground cumin
1-1/4 teaspoons salt
1 teaspoon ground allspice
1/2 teaspoon pepper
18 hamburger buns, split

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings. In the same skillet, cook beef, onion and garlic over medium heat until beef is no longer pink and onion is tender, 10-12 minutes; crumble beef; drain. , Transfer to a 5- or 6-qt. slow cooker. Stir in squash, parsnips, carrots, cola, tomato paste, water, mustard and seasonings. Cook, covered, on low until vegetables are tender, 4-5 hours. Stir in bacon. Serve on buns., Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add water if necessary.

1 lb portabella mushroom cap
4 garlic cloves
1 teaspoon salt
1/2 teaspoon pepper
1 small onion
1/2 medium red pepper
1/2 medium green pepper
1 (8 ounce) can tomato sauce
3 tablespoons light brown sugar
1 tablespoon red wine vinegar
2 tablespoons Worcestershire sauce
2 tablespoons tomato paste
1 teaspoon fresh thyme
1/4 teaspoon red pepper flakes

Steps:

  • Chop Mushrooms into small piece and add to a pot on med heat which is sprayed with cooking spray and let cook for 5-7min
  • Add Garlic, Onion, Peppers and season with salt and pepper, cook 5-7min.
  • Make sauce by adding Tomato Sauce, Brown Sugar, Vinegar and Worcestershire to a bowl and mixing together.
  • Add Tomato Paste to veggies and let cook 1-2 minute.
  • Add sauce as let cook and thicken for 2 minute.
  • Add Thyme and Red pepper flakes.
  • Serve on a bun with chopped pickles.

1 small onion, finely chopped
1 package (12 ounces) frozen vegetarian meat crumbles
1/2 teaspoon pepper
2 tablespoons all-purpose flour
2/3 cup ketchup
1 can (8 ounces) no-salt-added tomato sauce
6 hamburger buns, split and toasted

Steps:

  • In a large nonstick skillet coated with cooking spray, melt butter over medium-high heat. Add onion; cook and stir until tender. Stir in meat crumbles and pepper; heat through., Sprinkle flour over mixture and stir until blended. Stir in ketchup and tomato sauce. Bring to a boil; cook and stir 1-2 minutes or until thickened. From Cooking Light, Jan 1997. Original calls for 6 oz. ground round and 6 oz turkey breast. I have had really good luck feeding this to toddlers and veggie-phobic adults! Feel free to play with the veggies to your own preference; tonight I made these with 1 c mushroom and 1 c finely diced zucchini squash. I also prefer balsamic or cider vinegar here to the red wine. Finally, this does tend to turn out pretty "saucy", so if you like your joes thicker you might consider adding a bit of tomato paste. Enjoy!
