SMOKED CHEDDAR AND APPLE QUESADILLA

Steps:
- Sprinkle 1 tortilla with some cheese, a small handful of baby spinach, bacon and sliced apples. Press another tortilla on top to make a quesadilla. Heat a nonstick skillet over medium-high heat and spray with nonstick spray. Cook the quesadilla on each side for 2 to 3 minutes until golden. Repeat with the remaining tortillas and fillings. Slice into wedges and serve with sour cream.

- In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Shape into 12 patties. , Grill, covered, over medium heat for 5 minutes on each side or until a thermometer reads 160° and juices run clear. , Top each burger with a cheese slice. Grill 1-2 minutes longer or until the cheese begins to melt. Serve on buns with mayonnaise, lettuce, tomato and pickles.

- Patty out burgers - with one pound, sometimes I make 3 thicker burgers and sometimes I make 4 thinner. Either way, the cook time will be the same.
