SONORAN STYLE HOT DOG



Sonoran Style Hot Dog image

8 large hot dogs, preferably 6 to 1s (6 hot dogs to a pound)
8 thin slices bacon, such as Oscar Mayer
4 tablespoons salted butter, at room temperature
8 fresh bolillo rolls, each sliced into a "pocket" to catch all the fillings (see Cook's Note)
1 cup refried beans, warmed
2 avocados, diced
2 firm, ripe Roma tomatoes, diced
1 small red onion, diced
1 cup pickled jalapenos, drained
Zesty Mayo, recipe follows
Fresh cilantro leaves, for garnish
Hot sauce, for serving
1/2 cup finely chopped fresh cilantro
1/4 cup mayonnaise
1 tablespoon hot sauce
Zest and juice of 1 lime
Kosher salt and freshly ground black pepper

Steps:

  • Wrap each dog evenly in 1 slice of bacon. Secure with a toothpick at both ends and refrigerate for at least 30 minutes to firm up the bacon and help it adhere.
  • Heat a grill or grill pan for medium heat. Grill each side of the hot dogs until the bacon is extra crispy but not burnt. It is import to control the heat to insure the hot dogs get properly warmed through and the bacon does not burn or undercook. Set aside.
  • Butter the outsides of the "pocketed" rolls and gently griddle them until just golden brown.
  • Layer a schmear of warm refried beans on the bottom of each roll followed by a bacon-wrapped dog. Top with the avocados, tomatoes, onions, jalapenos and a squiggly drizzle of Zesty Mayo. Garnish with some cilantro leaves and serve with your favorite hot sauce.
  • Combine the cilantro, mayonnaise, hot sauce, lime zest and juice and some salt and pepper in a bowl and whisk until well blended.

4 beef or pork hot dogs
4 pretzel hot dog buns, split
Beer Cheese Sauce, recipe follows
2 tablespoons pickled jalapeno slices
1/4 cup french-fried onions (the ones that come in a canister)
1/4 cup spicy giardiniera or pickled sliced cherry pepper slices
One 12-ounce can evaporated milk
1/4 cup lager
2 teaspoons Dijon mustard
1 1/2 teaspoons Worcestershire sauce
4 ounces sharp Cheddar, freshly grated
4 ounces pepper jack cheese, freshly grated
2 ounces sliced American cheese, torn up (about 4 slices)
1 1/2 teaspoons cornstarch

Steps:

  • Heat a grill or grill pan over medium-high heat. Slice the hot dogs lengthwise to butterfly them, making sure not to slice all the way through. Place the hot dogs cut-side down on the grill and cook until nice and charred to your liking, 4 to 5 minutes per side. (I like a good heavy char for that extra texture and flavor.)
  • Meanwhile, fill a large pot with a lid with about an inch of water, then place a steamer basket or vegetable steamer inside, and bring to a boil. Reduce the heat to a simmer, then add the pretzel hot dog buns and steam, covered, until soft and warmed through, 3 to 5 minutes. Remove the pot from the heat but keep covered.
  • Nestle the dogs into the steamed pretzel buns and ladle on plenty of the Beer Cheese Sauce. Top with the sliced pickled jalapenos, fried onions and giardiniera or cherry pepper slices.
  • In a medium saucepan over medium heat, combine the evaporated milk, lager, mustard and Worcestershire and whisk together until smooth. In a separate bowl, combine the cheeses and cornstarch until the cheese is completely coated. Add the cheese mixture to the beer mixture and cook, whisking constantly, until the cheese melts completely and the sauce is thickened, silky and smooth, 5 to 10 minutes. Keep warm.

CHICAGO-STYLE HOT DOG WITH HOMEMADE RELISH



Chicago-Style Hot Dog with Homemade Relish image

4 natural casing all-beef franks
4 fresh hot dog buns
1 small white onion, finely chopped
8 jarred sport pickled peppers (or sub pickled hot peppers)
Homemade Bread and Butter Relish, for serving, recipe follows
Yellow mustard, for slathering
Hand Cut Fries with Celery Salt, for serving, recipe follows
1 cup bread and butter pickles, finely diced
1 tablespoon pickled cherry peppers, finely diced
1 teaspoon sugar
Vegetable oil
4 large russet potatoes, scrubbed
Celery salt, for sprinkling

Steps:

  • Set up a large pot with a steamer insert and steam the franks until warm, about 5 minutes. When the franks are almost done, place the buns on top of the franks to steam, 1 to 2 minutes. Place the franks in the buns and top each with some of the onions, 2 peppers, some Homemade Bread and Butter Relish and slather with mustard. To serve, top the franks with a handful of Hand Cut Fries with Celery Salt, wrap each frank in foil and let steam, 2 to 3 minutes, before eating. Eat on the towel-lined trunk of a car.
  • Combine the pickles, peppers and sugar in a bowl and mix well. Serve.
  • Fill a 6-quart heavy pot or Dutch oven two-thirds of the way full with oil. Heat the oil over medium-high heat until a deep-fat thermometer registers 375 degrees F.
  • Cut the potatoes lengthwise into 1/4-inch-thick sticks. Fry the potatoes in batches, until golden brown, 8 minutes per batch. Transfer the potatoes with a slotted spoon to a paper-towel-lined baking sheet. Sprinkle with celery salt and serve immediately.

  • Whisk 1/4 cup mayonnaise, 1/2 cup chopped cilantro, 1 tablespoon hot sauce and the zest and juice of 1 lime in a bowl; season with salt and pepper.
  • Wrap 8 hot dogs in 1 slice of bacon each; secure with toothpicks and refrigerate 30 minutes. Grill over medium heat, turning, until crispy, 12 to 15 minutes. Split open 8 bolillo or hoagie rolls, spread with butter and grill until toasted.
