Parmesan cheese and garlic liven up this spinach dish, which goes well with met entrees and main-dish casseroles. Sometimes, I use broccoli as a spinach substitute. It's equally delicious.

- In a large skillet, saute onion in butter until onion is tender. Add garlic; cook 1 minute longer. Stir in the spinach, cream and milk. Remove from the heat; stir in 4 tablespoons cheese, bread crumbs, salt, marjoram and pepper. , Spoon into a greased 1-qt. baking dish. Sprinkle with remaining cheese. Bake, uncovered, at 350° for 40-45 minutes or until cheese is lightly browned.

- Thaw bread dough according to package directions; let rise until doubled. Meanwhile, in a skillet, saute onion and garlic in oil until tender. Stir in spinach. , On a lightly floured surface, roll dough into a 14x10-in. rectangle. Spread the spinach mixture to within 1/2 in. of edges; sprinkle with cheese. Roll up jelly-roll style, starting with a long side; pinch seam to seal. - Preheat oven to 375°. Reserve 1 tablespoon crumbled bacon for topping. Beat cream cheese and mayonnaise until smooth. Stir in spinach, water chestnuts, 1 cup cheese, half of the green onions, garlic, seasonings and remaining bacon., Cut a 1-1/2-in. slice off top of bread. Hollow out the bottom, leaving a 1/2-in.-thick shell. Cut all removed bread into cubes for serving. Fill shell with dip. Wrap in heavy-duty foil, tenting foil over dip. Bake on a baking sheet 1-1/4 hours., Open foil carefully, allowing steam to escape. Sprinkle dip with remaining cheese and green onion and the reserved bacon. HERBED TURKEY LOAF
I found the original recipe in an old Family Circle magazine from 2002. I changed the main ingredient from turkey to Gimme Lean ground beef style soy. Instead of the egg and I used plain Silk Coffee Creamer to brush on the puff pastry. I also added some Worcestershire's sauce and a few drops of Tabasco, some fresh basil and ground sage as well as some cubed potato and Malibar spinach instead of regular spinach. I also sprinkled some black sesame seeds on top of the loaf for interest. You can probably use ground beef, ground chicken or some other ground meat in here if you prefer.

- Preheat your oven to 400'F.
- Combine the turkey, spinach and soup mix in a bowl. Set aside.
- On a lightly floured board, unfold 1 sheet of the thawed puff pastry (I use Sarah Lee). This is Parve so I feel good about using it.
- Lay the pastry out with the with the fold lines on the pastry going vertically.
- Cut slits on each side of the pastry and mound the filling onto the pastry between the two fold marks.
- Starting at one end fold the pastry strips over the filling, alternating each side to cover.
- Place on an ungreased baking sheet. Beat the egg and brush over the pastry.
- Bake for 30-35 minutes until the pastry is crispy and golden.
- If you use an instant-read thermometer it should register 160'F when inserted through the center.
- Cool slightly, then slice and serve.

- Squeeze excess liquid from the spinach; set aside.
- In a mixing bowl, combine the eggs, cheese, bread crumbs, vinegar, salt and pepper.
- Stir in the well-drained spinach; pat mixture into a greased 8x4x2" loaf pan.
- (At this point, loaf may be covered and refrigerated overnight, if desired).
- Bake, uncovered, in a 400 degree oven for 20-25 minutes or until a knife inserted in the center comes out clean.
- Meanwhile, in a medium skillet, cook bacon until crisp.
- Remove from skillet, reserving 2T.
- pan drippings.
- Drain bacon on paper towels.
- Cook the onion and peppers in the bacon drippings in the skillet for about 5 minutes, or until tender.
- Stir in the flour and dash pepper; gradually stir in the water.
- Cook and stir until thickened and bubbly; cook 1 minute more.
- Stir in bacon and tomatoes; heat through.
- To serve, invert spinach loaf onto serving platter and cut into slices.
- Spoon bacon/tomato sauce over.
