1 package (10 ounces) frozen chopped spinach
2-1/2 cups herb-seasoned stuffing mix
1 medium onion, finely chopped
3 eggs, beaten
1/4 cup grated Parmesan cheese
6 tablespoons butter, melted
1/2 teaspoon garlic salt
1/4 teaspoon pepper

Steps:

  • Cook spinach according to package directions; drain well, squeezing out excess liquid. Combine spinach with remaining ingredients in a large bowl. Shape into 1-in. balls; place on an ungreased baking sheet. Bake at 350° for 10 minutes or until very lightly browned. Balls can be made ahead and refrigerated overnight before baking.

1 (16 ounce) package frozen chopped spinach, thawed and drained
1 cup finely chopped onion, or more to taste
5 tablespoons olive oil
1 teaspoon olive oil
2 large eggs, beaten
1 (16 ounce) package frozen kale, thawed and drained
1 cup dry seasoned bread crumbs
¼ cup grated Parmesan cheese, or more to taste
½ teaspoon sea salt
½ teaspoon garlic powder
½ teaspoon ground thyme
½ teaspoon dried rubbed sage
½ teaspoon dried rosemary
½ teaspoon dried oregano
2 pinches ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray or line with parchment paper.
  • Combine spinach, onion, 5 tablespoons plus 1 teaspoon olive oil, and eggs together in a large bowl. Add kale, bread crumbs, Parmesan cheese, sea salt, garlic powder, thyme, sage, rosemary, oregano, and black pepper; mix thoroughly using your hands.
  • Form mixture into 1 1/2-inch balls and arrange on the prepared baking sheet.
  • Bake in the preheated oven for 15 minutes; flip and continue baking until lightly browned, 10 to 20 more minutes.

2 cups herb stuffing mix
3/4 cup parmesan cheese, grated
1 teaspoon garlic, finely minced
1 medium onion, finely chopped
3 eggs, beaten
1/4 lb butter, melted

Steps:

  • Preheat oven to 350 degrees.
  • Thaw spinach and remove excess liquid.
  • Add remaining ingredients (stuffing mix, parmesan cheese, garlic, onion, eggs and butter) and mix well.
  • Form the mixture into small balls and place on a baking sheet.

1/4 teaspoon rubbed sage

Steps:

  • Preheat oven to 350. In medium mixing bowl, combine spinach, onion, egg and margarine, mixing well. Add remaining ingredients and mix till combined.
  • Using rounded teaspoonfuls, shape mixture into 16 balls. Spray cooking spray on parchment paper on a cookie sheet and place balls on cookie sheet. Bake until balls are cooked and lightly browned, 18 to 20 minutes.
