HERB AND GARLIC ROASTED LEG OF LAMB
Steps:
- Gather the ingredients.
- Preheat the oven to 325 F. Place a rack in a roasting pan and set aside.
- Pat the lamb dry with paper towels. Remove any excess fat with a sharp knife, leaving some on so you'll have rich drippings for gravy.
- Peel the garlic. Cut 2 cloves of garlic into thin slivers. Mince the third clove of garlic and set aside.
- With a small, sharp knife, make several tiny, slits-about 1/2-inch to 1-inch deep-evenly over the surface of the lamb. Insert the garlic slivers into the slits.
- Rub the lamb all over with the lemon juice.
- In a small bowl, combine the minced garlic with the herbs, 1 teaspoon of kosher salt, and 1/4 teaspoon of freshly ground black pepper. Rub the garlic and herb mixture over the surface of the lamb.
- Place the lamb, fat side up, on the rack of the prepared pan.
- Insert meat thermometer in the thickest part of the meat, not touching fat or bone.
- Roast for about 25 to 30 minutes per pound, or until the meat thermometer registers 145 F (medium rare) to 165 F (well done).
- Remove the roast to a platter and let it rest for 15 minutes before carving.
- Gather the ingredients.
- Remove the rack from the roasting pan. Skim excess fat from the drippings and place the pan over medium-high heat.
- Add the red wine and cook for about 2 minutes while scraping up any browned bits from the bottom of the pan.
- In a small bowl, combine 1/2 cup of the chicken stock with the flour; whisk until smooth.
- Add the remaining 1 cup of chicken stock and the flour-stock mixture to the roasting pan, whisking frequently until thickened. Season to taste with salt and pepper.

HERB ROASTED LAMB

- 1. Preheat oven to 450. Put oven rack in lower third of oven so lamb will sit in middle of the oven.
- 2. Peel 6 of the garlic cloves and put them in the bowl of food processor fitted with steel blade. Add rosemary, 1 Tbsp. salt, 1 tsp. pepper and butter. Process til garlic and rosemary are finely minced.
- 3. Thoroughly coat the top and side of the lamb with the rosemary mixture. Allow to sit at room temperature 30 minutes to 1 hour.
- 4. Toss potatoes and remaining unpeeled garlic in a bowl with olive oil and sprinkle with salt. Put in bottom of large roasting pan. Put lamb on top of potatoes and roast for 1 to 1 1/4 hours or til internal temperature of lamb is 135 (rare) or 145 (medium).
- 5. Remove from oven an put lamb on platter, cover tightly with foil. Allow lamb to rest for about 20 minutes. Slice an serve with the potatoes. Serves 10
ROAST LAMB WITH SPRING HERB CRUMBS

- Heat oven to 160C/140C fan/gas 3. For the lamb, scatter the vegetables, bay leaves and a few rosemary sprigs into a large roasting tin and drizzle with the olive oil. Use a sharp knife to make little slits all over the lamb. Poke a slice of garlic and a small sprig of rosemary into each one. Sit the lamb on top of the veg in the roasting tin, add a splash of wine, then cook for 2 hrs if you like it pink, or 2 hrs 15 mins for cooked through. Remove from the oven, transfer to a board and cover with foil, then rest for 45 mins-1 hr.
- To make the gravy, pour off most of the fat from the tin but leave the veg and any meat juices. Place the tin on the heat to caramelise the veg, then stir in the flour and cook to a paste. Gradually stir in the wine, cook for a min, then stir in the stock and simmer until you have a tasty gravy. Push the gravy through a sieve into a small pan and keep warm.
- Turn oven up to 220C/200C fan/gas 7. For the crumbs, blitz everything in a food processor and scatter over a tray. Bake in the oven for 10-15 mins until crisp, then re-blitz or break up with your fingers to crumbs again. These can be made in advance and kept in an airtight container for 2 days. Serve the lamb carved into slices, sprinkled with crumbs and a jug of gravy alongside.

- Preheat oven to 400°F (200°C).
- Season lamb generously with salt and pepper.
- Heat a cast iron over medium high heat.
- To the hot pan, add in 4 tablespoons of the the olive oil, along with the lamb and garlic. Sear all sides of the lamb until browned, about 3-4 minutes. Remove browned lamb, and place cooked lamb onto a baking sheet.
- Remove garlic and add to food processor with along with the breadcrumbs, parsley, parmesan, rosemary, and 1 tablespoon of olive oil. Pulse until combined. Pour onto a large plate.
- Brush the top and sides of the lamb with mustard.
- Coat the top and sides of the lamb with the breadcrumb mixture and roast in oven for 20-25 minutes.
- Allow to rest before slicing.

HERB ROASTED RACK OF LAMB
Steps:
- Preheat the oven to 425 degrees. Combine the herbs, peppercorns, cinnamon and bread crumbs in a bowl. Set aside.
- Completely coat the racks of lamb with the honey. Cover with a thick layer of the seasoned bread crumbs. Put the lamb on a rack over a roasting pan and roast until a meat thermometer inserted in the rack reads 125 degrees for rare meat, or 130 for medium rare, about 25 to 35 minutes.
- Remove the lamb from the oven. Season with salt. Let it rest at least 20 minutes before slicing.

HERB-ROASTED LAMB CHOPS
DH and I made this recipe from the February 2009 edition of Bon Appetit a few nights ago and really enjoyed it. We usually prepare our lamb chops on the grill, but I thought that this recipe would lend itself well when grilling is just not practical. I am posting the recipe as printed in Bon Appetit, however, DH suggested that next time I chop the rosemary and thyme leaves, rather than lightly crush them with my mortar and pestel. Prep time includes marinating time.
