CORNMEAL-CRUSTED SEITAN
Steps:
- Combine the cornmeal and 3/4 cup boiling water in a large heatproof mixing bowl. Let stand for 1 minute, then stir. Add the flour, optional yeast, seasoning, and salt, and whisk together.
- Add the seitan to the bowl and stir to coat the seitan pieces evenly.
- Heat the oil in a wide nonstick skillet. Arrange the seitan in the skillet in a single layer, if possible, or work in batches. Sauté over medium-high heat on all sides until the cornmeal turns golden brown and crusty. Serve at once.
- Menu Suggestions
- Like the previous recipe, this works nicely in a Parisian-style assiette. See the suggestions in the box on page 67; as well as the menu suggestions with Seitan and Mushrooms in Paprika Cream (page 68).
- This goes well with whole-grain dishes; here are a few ideas. With any of these, add some colorful raw vegetables or a simple salad: Quinoa with Wild Mushrooms and Mixed Squashes (page 90); Quinoa with Cauliflower, Cranberries, and Pine Nuts (page 92); Curried Cashew Couscous (page 93); or Lemony Couscous with Broccoli (page 94).
- Cornmeal-Crusted Seitan is a good partner for Sweet and White Potato Salad with Mixed Greens (page 188) or Warm Mediterranean Potato Salad (page 193). With the latter, add some grape tomatoes to the plate.

- Heat olive oil in a nonstick pan and slice seitan into 1/4 inch slices.
- Warm pizza sauce in a small saucepan or microwave while the pan is heating.
- Add seitan slices to the pan, saute 2-3 minutes on each side or until browning.

BBQ FLAVORED SEITAN
I wanted to make more a BBQ type seitan after the success of my spicy seitan, so I made a few modifications to my original recipe and came up with this. I also made BBQ sauce for the first time and it turned out pretty good. Unfortunately I didn't really keep track of measurements, so I won't be posting that recipe right away. Also, if you're making this on a large scale (the first time I made this I actually octupled the recipe) you're probably going to need to add more of the liquid ingredients (maybe 1 to 2 cups more of the mixture). You want the seitan to feel similar to a wet sponge. Just like with my other seitan, how long you cook it will effect how hard or soft it is. Personally, I like this kind to be sort of like lunch meat, so I've included the times for making it a nice, soild, meat substitute. If you think you've over cooked it (it gets really browned), don't worry. Let it cool and bake it or fry it up later. The "skin" will soften when it's reheated.

Steps:
- Sift dry ingredients together in a large bowl.
- In a separate bowl, whisk together wet ingredients.
- Add wet mixture to dry ingredients (I find pouring it along the edges of the dry mixture helpful).
- Mix and knead the dough thoroughly.
- Shape into an 8 inch (or so) loaf.
- Place the loaf in the middle of a sheet of aluminum foil.
- Tightly wrap loaf in foil like a sausage, twisting the ends.
- Steam the wrapped loaf for 45 minutes.
- Pre-heat oven to 350°F.
- Place loaf in pan or on baking sheet and bake for another 45 minutes.
- Take out, unwrap, let cool, and enjoy!

- Combine the seitan ingredients quickly and knead for just a minute or two. If you knead for too long the seitan will be a little tough. Separate the dough into 5 cutlets and drop into the lightly simmering broth.
- Simmer, covered, for 15 - 20 minutes, flipping the cutlets once. To ensure the right texture I continually taste test the cutlets as the simmering progresses. If they are cooked for too long they become tough. But don't get it wrong, this is a very forgiving recipe, it is hard to mess up! They never become too tough, just a littler tougher than my perfect dream chicken fried seitan, but still deliciously, delectably tasty. Who knows, maybe you like your seitan a bit firmer. In that case knead the dough for a bit longer and simmer for a few minutes more.
- Once you remove the cutlets from the lightly simmering broth, TA DA, you have made seitan! Now you can proceed as you wish. You can chop it up and throw it into a stir fry (delicious), you can roast it in the oven (heavenly), you can chop it up and throw it into a taco salad (yum), the options are endless. But....you could make the world's most perfect chicken fried seitan. You like that idea? Please...continue:.
- Keep the cutlets in the broth but remove from heat and allow to come to room temperature while you prepare the dredging mixtures.
- In a large frying pan heat a ½ inch or so of peanut oil on medium high heat.
- Dredge the cutlets first in the wet mix, then dredge the cutlets in the dry mix.
- Fry the dredged cutlets in the peanut oil on medium high heat until they are golden brown and crispy all over. Serve on a hamburger bun with vegan mayo and mustard, pickles, lettuce and tomatoes. Or slather with vegan butter and hot sauce for hot wings, or serve with a side of mashed potatoes and white gravy. Like I said, the options are endless, have fun!

- Add the following dry ingredients, which are the base of your seitan meat, to a large mixing bowl
- Put 2 tablespoons of oil on a breadboard, and use this to knead your dough. This kneading process activates the gluten which makes your ‘meat’ sinewy.
- Make a broth to simmer your seitan. You can create a broth from scratch using all the ingredients below, or you can add only the starred wet ingredients to store-bought vegan beef stock.
- Add seitan dough to pot and reduce heat to a low simmer immediately or the meat will get tough. Simmer seitan on a very low bubble for 45 – 50 minutes.
- Remove seitan roast from pot and allow to cool, then remove wrapping. Move onto step 10 if serving same day, or store in a container in the fridge with the strained broth, overnight.
- Season seitan roast with salt and pepper, rub in oil then roll in 1/2 cup of of flour and fresh herbs of your choice. I used a 1/2 a cup each of the following fresh herbs, chopped, with 2 tablespoons of freshly ground black pepper
