HELVA AND SOY GELATO
This is an adaptation of a recipe I created years ago to make it wheat and milk free. Helva is a tahini and sugar based sweet popular in the mediterrenean like greece and malta. I use an ice-cream machine, the kind you have to freeze 24 hours beforehand.

Steps:
- Leave 100g halva for decoration.
- Put the crumbled halva in the blender with the milk and honey, puree.
- Add the soya cream and blend till smooth.
- chill.
- Place in your ice cream machine. ( it takes about 15 minutes on mine).
- To serve: Place a scoop of ice cream in a wine glass, drizzle some honey and sprinkle some chopped halva on top.
- a sprinkling of slivered almonds or sunflower seed also looks great.

VANILLA SOY ICE CREAM
This is a great frozen treat, especially for people who can't tolerate dairy. It tastes like old-fashioned vanilla ice cream... really! Give it a try! Prep time includes time to chill.

Steps:
- Put the eggs yolks, sugar, and corn starch into a bowl; whisk the mixture together.
- Heat the soy milk; slowly pour the hot soy milk into the mixture while continuing to beat.
- Add the vanilla extract.
- Gently heat the mixture until it thickens.
- Let the mixture cool in the refrigerator for 3-4 hours.
- Pour the mixture into an ice cream maker; make ice cream following the instructions of the machine.
- Note: I'm not sure exactly how much ice cream this yields, but I made it in my 1 1/2 quart ice cream maker and there was room to spare!

- In a heavy-bottom saucepan, add the milk. Place over medium-low heat until it comes to a gentle simmer.
- Stir in the salted caramel sauce , taste and add more if desired. It should be both salty and sweet. Pour into your loaf pan and follow freezing directions below.
- Swiftly fold in the chocolate ganache into the gelato base. Make sure the ganache is not hot or it will set when it hits the cold base.
