Steps:
- Place steak on a plate and sprinkle both sides with salt and plenty of pepper and the dry mustard.
- Rub the spices into the meat with a fork or your hand.
- Drizzle the steaks with tobasco sauce and let sit for 5 minutes.
- Set up the grill for direct grilling and preheat to high.
- Brush and oil the grill grate.
- Arrange steaks on the hot grill grate at a 45 degree angle.
- Grill 4 - 6 minutes per side for medium-rare.
- Rotate the steaks after 3 minutes for attractive cross-hatch marks.
- Coarsely grind as much pepper as you can bear over the steaks as they grill.
- Transfer steaks to plate and let stand for 3 minutes, then serve.

- Place steaks and bell peppers on grill over medium, ash-covered coals. Grill, uncovered, 14 to 16 minutes until steaks are medium rare to medium doneness and peppers are tender, turning occasionally.
- Meanwhile, combine butter, green onion and garlic in small bowl. Stir with fork until uniformly blended.
- Top each steak with 2 tablespoons of butter mixture.
- Combine bell peppers with 2 tablespoons butter mixture in medium bowl; toss.
- Serve steaks with bell peppers. Season with salt and pepper, as desired.

- In a medium size bowl, blend together Worcestershire, vinegar, garlic, pepper and salt. Place steaks in a large resealable plastic bag and add marinade. Turn to coat. Refrigerate 45 minutes to an hour, turning occasionally.

- Heat a non stick pan and grease lightly with oil.
- Season the steak with salt and pepper.
- making sure that the pan is fierclt hot, place the steak and cook for 5 minutes per side for a rare steak. Prolong the cooking time by 2-3 minutes extra per side for a medium steak.
- Wrap th esteak in aluminium foil and rest for 5-8 minutes so that it becomes tender.
- In the meantime make a quick gravy by adding 1 tbsp balsamic vinegar, 1 tsp honey and 1/2 cup red wine to the pan used for cooking the beef. Scrape the bottom of the pan with awooden spoon to dissolve those delicious cooking juices. Reduce by half and serve as a side sauce with the beef.
- Another sauce you can use instead of the balsamic is, cognac and cream using the pan used for cooking the beef and heating the cream and cognac with the pan juices.
- Remove the steak from the foil and slice into medium thick slices. Serve with potatoes.

- First, grill the steaks. Build a charcoal fire and rake the coals into an even layer. When the coals glow orange, fan them with a newspaper to blow off any loose ash.
- Generously (very generously) season the steaks on both sides with kosher salt and cracked pepper. Place the steaks directly on the embers about 2″ apart. Grill until cooked to taste, 4 to 6 minutes per side for medium-rare, turning with tongs.
- Using tongs, lift the steaks out of the fire, shaking each to dislodge any embers. Using a basting brush, brush off any loose ash and arrange the steaks on a platter. Let the steaks rest loosely tented with aluminum foil, while you make the sauce.
- For the sauce, heat the olive oil in a cast-iron skillet directly on the embers, on the side burner of a gas grill, or on the stove. When the oil is screaming hot, add the jalapenos, garlic, and cilantro. Cook over high heat until the sauce is aromatic and garlic is lightly browned, about 2 minutes. Immediately pour the sauce over the steaks and serve at once.
